Creamy Chicken and Gnocchi is a delicious one-skillet pasta meal with sundried tomatoes and spinach that you can make in under half an hour.

Creamy Chicken and Gnocchi

olive oil oil

chicken breast (about 2 breasts, cut into ¾ – 1 inch pieces)

italian seasoning

salt

black pepper

butter

garlic (minced)

chicken stock

heavy cream (double cream in the UK)

gnocchi

smoked paprika

sundried tomatoes (chopped)

parmesan cheese

baby spinach leaves

In a skillet (I used 12 inch stainless steel), over medium high heat, heat oil then add the chicken, and season with italian seasoning, salt and pepper and cook for 4-5 minutes. Use an instant read thermometer to cook the chicken to an internal temperature of 165°F/74°C. Remove the fully cooked chicken onto a plate and set aside.

In the same pan, melt butter and add garlic. Cook for 30 seconds or until fragrant. Deglaze the pan with chicken stock, and scrape off the bits stuck to the bottom of the pan with a wooden spoon (lots of flavor!).

Add heavy cream, and drop the gnocchi, allow to simmer for 5 minutes. The sauce will reduce and thicken, and the gnocchi will be tender and done.

Lower the heat to medium-low, add smoked paprika, sundried tomatoes, and parmesan cheese. Stir to combine.

Then add the spinach, and stir again to combine and wilt the spinach (add a splash of water if needed to loosen the sauce).

Add the chicken back in and stir. Remove from heat, and serve immediately.

Made this today and it was so easy and so good! Added some red pepper flakes but other than that didn't alter the recipe. This is a new favorite!

Easy One Pan Creamy Italian Chicken With Gnocchi Dinner

lbs. Chicken breasts (boneless, skinless)

Salt and Black Pepper

Tablespoons Olive Oil (Extra virgin)

Shallot (diced)

Baby Bella Mushrooms (sliced)

Cloves Garlic

thyme leaves

Oregano (dried)

Chicken broth (low-sodium)

Red Pepper Flakes (a pinch)

Package Gnocchi

Mozzarella (shredded)

Parmesan cheese (freshly grated)

Baby Spinach

Season chicken on both sides with salt and pepper

In a large skillet over medium-high heat, heat 1 Tablespoon olive oil. Add chicken and cook until golden, 4 minutes. Remove from skillet.

Reduce heat to medium and add remaining 1 Tablespoon olive oil. Add shallot and mushrooms and cook until golden, 5 minutes.

Add garlic, thyme and oregano and cook until fragrant, 1 minute more.

Add broth broth and scrape up any brown bits on the bottom of pan, then slowly add in half and half. Bring to a simmer and season with salt, pepper, and a pinch of red pepper flakes.

Stir in gnocchi and return chicken to pan. Let simmer until chicken is cooked through and the internal temperature of the chicken breasts reach 165℉, 8 to 10 minutes, stirring occasionally.

Remove chicken from skillet.

Add cheeses and stir until melted, then add spinach and stir until the spinach is wilted.

Slice the chicken breast and return it to the skillet. Taste. Season with more salt and pepper if needed.

My boys will love this chicken and gnocchi for dinner. Looks amazing. Creamy and delicious. And for me, it's a super easy dish to make after I come home from work. Perfect. Thanks for the recipe!
