chicken bites

The easiest 15 minute recipe that requires minimal prep and a few basic ingredients, yet it wows with flavor! A new weeknight dinner staple!

Garlic Butter Chicken Bites

chicken

Tbsp all-purpose flour

tsp Italian seasoning

Salt and black pepper

olive oil

Tbsp unsalted butter, (divided)

Tbsp minced fresh garlic ((4 cloves))

Tbsp finely chopped fresh parsley*

Preheat a 12-inch non-stick skillet over medium-high heat.

Dab chicken on all sides dry with paper towels.

Sprinkle flour, Italian seasoning, and desired amount of salt and pepper (I use about 1 scant tsp salt and 1/2 tsp pepper) over chicken. Toss well to evenly coat (all flour should stick to chicken and not be left behind on cutting board, keep tossing if needed).

Add 1 Tbsp olive oil and 1 Tbsp butter to skillet, butter should melt quickly. Tilt pan to evenly coat.

Add chicken in an even layer, work to leave some space between pieces so they'll brown rather than steam.

Let cook until nicely golden brown on bottom, about 3 minutes then flip to opposite side and cook 2 minutes longer, or until nearly cooked through.

Add remaining 2 Tbsp butter in small pieces, along with garlic and parsley. Cook 1 minute longer (chicken should be 165 in center and no longer be pink).

Serve right away.

Low Carb Mushroom Chicken Bites is the EASIEST dinner to throw together! Do it all in one skillet and let the flavours BLOW YOUR MIND! All cooked in buttery pan juices filled with herbs and spices, you will LOVE this new easy dinner recipe.

Mushroom Chicken Bites

oil, (divided)

lb (500 grams) boneless chicken thighs,

salt (to taste)

black pepper

Italian seasoning

garlic powder and onion powder

paprika

oz (250 grams) sliced brown mushrooms

(2 oz | 60 grams) butter

brown shallot, (chopped)

green bell pepper (capsicum), (seeded and chopped)

garlic, (minced)

parsley

Heat 1 tablespoon of oil in a large pan on medium-high heat. When oil is hot, add chicken. Season with salt, pepper, Italian seasoning, garlic powder, onion powder and paprika. Mix well and sear chicken all over until browned and cooked through, about 5-6 minutes. Transfer cooked chicken to a plate; set aside and keep warm.

Heat remaining oil in the same pan with 1 tablespoon of butter. Add the mushrooms and cook, while stirring, until just beginning to brown and soften, about 3-4 minutes.

Add the remaining butter to the pan. Let melt and sauté shallots and bell peppers until just soft and fragrant, about 3 minutes. Add the garlic and sauté until fragrant, about 30 seconds.

Add the chicken back into the pan along with any juices released while resting. Mix through all of the ingredients to evenly coat in the pan juices. Continue cooking until all vegetables are soft and the chicken is cooked through, about 1-2 more minutes.

Taste test and season with salt and pepper, if desired. Serve warm.

Air Fryer Lemon Chicken Bites with marinated chicken thighs air fried to golden crispy! No breading and starch and totally lemony delicious!

Air Fryer Lemon Chicken Bites (no breading, keto, paleo, whole30)

lbs. Chicken Thighs (skin-on)

sea salt

garlic powder

onion powder

¼ tsp white pepper

lemon juice (about 1 to 1 ½ whole lemons)

avocado oil (for the air fryer basket)

chives

Sprinkle Furikake (optional)

lemon

Debone

Debone the chicken thighs and dice them to slightly larger than bite sizes. Please see how to debone chicken thighs in the blog post with photos, if you aren’t sure how to do that. Transfer them to a container that’s just big enough to hold all the pieces.

Marinate

Add the seasoning from salt to olive oil. Gently mix them and make sure all the pieces are in touch with lemon juice. Marinate overnight in the fridge and up to 24 hours.

To prep:

Lightly spray the air fryer basket with avocado oil. Place-in the chicken skin-side up. Try not to let the pieces touch each other too much (a little snuggle is fine just don’t overlap them) so each piece gets crisp up.

Air fry

Air fry at 380F (193C) for 18-20 minutes. The skin should be golden crispy and the chicken should be cooked through but not overly cooked. If you want to be exact, the internal temperature should reach 165F (74C) on a digital meat thermometer.

To air fry:

Serve

Transfer the chicken bites to a medium size serving plate. Sprinkle with chives and furikake, if using, and serve with lemon wedges on the side. Serve hot and immediately.

Deglaze Pan:

Deglaze Pan: In the same skillet melt the remaining 2 tbsp of butter over medium-low heat. Add the garlic and cook until aromatic, around 30 seconds. Deglaze the skillet with the chicken broth, scraping all the brown bits from the bottom of the skillet. Stir in the lemon juice, hot sauce and cook for another 30 seconds. Remove from heat.

Garlic chicken bites are tender, flavorful, and ready in 20 minutes! Made with chunks of chicken breast, garlic, butter and lemon juice.

extra virgin olive oil

all purpose flour

Italian seasoning blend

salt

unsalted butter (divided)

garlic

parsley (chopped)

In a large bowl, toss the prepared chicken breasts in olive oil. Add the flour, Italian seasoning, salt and pepper and stir until completely incorporated.

In a large skillet over medium heat, melt 3 tablespoons butter and swirl to coat the pan.

Add the chicken, being sure to space evenly apart. Do not touch until the chicken appears to be almost cooked through. (About 3 minutes)

Flip over the chicken pieces and continue cooking an additional 2 minutes or until the internal temperature reads 165 degrees F.

Remove the cooked chicken from the pan and set aside.

Lower the temperature to medium low heat and add the remaining butter to the skillet. Use a spatula to scrape the browned chicken bits from the bottom of the pan.

Add garlic to the butter, cooking for 1 minute or until fragrant.

Return the chicken to the pan and add the lemon juice and fresh parsley.

Toss to fully coat the chicken in the sauce and serve immediately.

Crispy, tender, and perfectly seasoned, chicken bites will be an instant hit. My family loves them and the bonus? They are easy to make.

Chicken Bites

cornstarch

garlic powder ((more

boneless skinless chicken breasts ((boneless skinless chicken thighs can be substituted))

olive oil oil

Combine Spices

In a small bowl, combine cornstarch, paprika, garlic powder, onion powder, salt, and pepper.

Cut chicken

Dice chicken evenly into small pieces, about ½ inch. I like to cut it into long strips, about ½ inch wide, and then make horizontal cuts, about ½ inch apart.

Coat Chicken

Toss the diced chicken with spice and cornstarch mixture until it's coated. It’s okay if there is a little extra in the bowl that doesn’t attach to the chicken.

Cook

Heat a large frying pan over medium high heat. Add oil. When oil is shimmering, add chicken in a single layer (and any leftover spice mixture). Cook without stirring for 4 minutes.

Stir and continue to cook, stirring occasionally, for 5 to 10 minutes or until browned, crispy, and cooked through.

These Garlic Butter Chicken Bites are cooked to perfection right on the stovetop to yield bite-sized pieces of juicy, tender chicken in a delicious buttery garlic sauce. This is an easy-to-make recipe that comes together in just 20 minutes.

Tablespoons (24 grams) cornstarch

Tablespoons avocado oil

(half a stick) unsalted butter

cayenne pepper (can be adjusted based on your spice preferences)

fresh parsley

Prep Chicken

Cut chicken breasts into bite-sized pieces and, if needed, pat them dry with paper towel.

In a large, shallow bowl, whisk together cornstarch and salt, then gently toss chicken pieces in mixture until evenly coated.

Cook Chicken

Heat avocado oil in a skillet over medium heat. Once oil is hot and shimmering, add chicken pieces and cook without touching for 4 minutes. Flip chicken pieces one by one, then cook until temperature of chicken pieces reaches 165 degrees F, about another 3-5 minutes, stirring around occasionally to cook all sides. (There may be grease splatter, so I would suggest using a splatter guard while chicken cooks and being careful while flipping the chicken.)

Transfer To Plate

: Remove chicken bites from pan and transfer to a paper towel-lined plate.

Prepare Garlic Butter

Melt butter in microwave or in small pan or pot on stovetop. Sprinkle spices in and stir until combined.

Toss chicken bites in garlic butter until coated evenly.

Garnish and Serve

Garnish chicken bites with a squeeze of fresh lemon juice and parsley, then serve.

Such a quick, easy recipe. The chicken was very tender and juicy! Thanks for sharing.

I made a batch over the weekend and have been enjoying them in lunches this week. They're great on salads, over rice and in wraps.

These flavorful chicken bites are tossed in a garlic butter pan sauce with white wine, fresh lemon, and simple seasonings. Serve it as an easy dinner or elevated appetizer!

EACH: onion powder, basil, oregano

¼ teaspoon EACH: pepper, paprika, mustard powder

½ lbs. boneless skinless chicken breast

Salt (to taste)

dry white wine (see notes)

chicken broth

salted butter

thyme

parsley (minced)

lemon slices (for serving)

Combine the seasonings for the chicken and set aside. Measure out remaining ingredients before beginning.

Cover the chicken with plastic wrap and gently tenderize each side with a meat mallet for more tender results.

Cut the chicken into 1-inch cubes and pat the surface completely dry. (This is key for a golden sear.) Sprinkle with salt, I use up to 1 ¼ teaspoons, but season to taste. Sprinkle with the combined seasoning mixture and toss to coat.

Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches, turning to sear on all sides, for about 5 minutes total, or until cooked through. Remove and set aside.

Turn the heat off and add the wine, chicken broth, and seasoned salt. Set the heat to medium. Use a silicone spatula to “clean” the bottom and sides of the skillet, this will incorporate the brown fond into the sauce, making it more flavorful. Simmer until reduced by half and you can no longer smell alcohol, about 8-10 minutes.

Reduce heat to medium-low. Add the butter, garlic, and thyme. Simmer gently for 1-2 minutes.

Add the chicken back to the skillet along with any juices from the plate. Add the parsley and toss to combine. Allow it to heat through for 2 to 3 minutes.

Squeeze 1-2 fresh lemon slices over the dish. Serve with toothpicks or mashed potatoes and roasted green beans!
