Easy healthy chicken chickpea chopped salad loaded with protein and fresh ingredients like grilled corn, grape tomatoes, crunchy romaine, creamy avocado, and your favorite dressing.

Healthy Chicken Chickpea Chopped Salad

romaine hearts,

chicken breast

chickpeas,

grape tomatoes, sliced

sweet corn (I grilled mine)

goat cheese

cilantro,

avocado,

BBQ dressing, if desired

In a large bowl add lettuce, top with all ingredients except for avocado and BBQ dressing. Toss salad gently.

Place into cold salad bowls. Garnish with diced avocado and drizzle with BBQ dressing if desired. Serve with low-fat corn tortilla strips.

Summer Chicken Chopped Salad with Strawberries, Avocado + Feta

2-3 large romaine hearts,

6-8 oz grilled chicken breast, chopped

ripe organic strawberries, quartered

grape tomatoes, halved

sweet corn

avocado, diced

pecans

For vinaigrette:

lemon, juiced

honey or sugar

apple cider vinegar

basil leaves, finely chopped

garlic,

olive oil

In a medium bowl, whisk together all vinaigrette ingredients. Add salt and pepper to taste.

In a separate large bowl add romaine, top with all ingredients except avocado, pecans, and feta. Add in dressing and toss salad gently. Transfer to cold salad bowls, garnish with avocado, pecans, and feta. Add more salt and pepper, if desired. Serve with crunchy tortilla chips or corn tortillas.

Chicken Chopped Salad

1.2 lb boneless skinless chicken breast

lime (juiced)

tsp chili powder

tsp smoked paprika

tsp cumin

garlic powder

Kosher salt and ground pepper (to taste)

plain greek yogurt

maple syrup

garlic (minced)

water (to thin dressing)

romaine lettuce (chopped)

onions

curly parsley (chopped)

red bell pepper (diced)

jalapeno

corn (fresh

avocado (chopped)

pumpkin seeds

Place the chicken in a ziploc bag together with the oil, honey, lime juice and seasonings. Mix through the bag to coat the chicken with the marinade. Refrigerate for at least 30 minutes to overnight.

In a small bowl or jar, mix well all the dressing ingredients. Refrigerate until ready to use.

Preheat an outside grill or a grill pan over medium-high heat. Brush the grill with a bit of oil, then carefully place the marinated chicken. Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165F. Once the chicken is done cooking, allow it to sit for a bit, then chop it.

And all the salad ingredients together with the chopped chicken to a large salad bowl. Add the dressing and toss to combine.

Serve and enjoy!
