Grilled Chicken Kofta 

bread

½ lb ground chicken

onion, grated (about 1/2 cup grated onion)

garlic clove,

parsley

mint

½ tsp Aleppo pepper (mild/sweet pepper flakes), more for later

tsp coriander

½ tsp sweet paprika

Salt and pepper

egg (raw)

extra virgin olive oil

Pita Bread

Toast the bread until golden brown. Place it in a small bowl and cover with water. Let it sit until tender then squeeze the bread to wring out all the water (it should fall apart into smaller pieces).

Place the bread in a large mixing bowl. Add the ground chicken, onion, garlic, fresh parsley, mint, spices and a dash of salt and pepper. Add the egg and a drizzle of extra virgin olive oil. Using clean hands, mix the chicken mixture until everything is well combined.

Wet your hand with a tiny bit of water and begin to form the chicken mixture into 8 oval patties that are about 1 to 1 1/2-inch in thickness (the chicken mixture may feel a bit sticky, which is fine, but the wet hands should help). Arrange the kofta patties on a tray or large plate and refrigerate for  15 to 20 minutes or so just while the grill is heating.

Grease the grates of a gas grill or an indoor griddle with a little bit of oil and heat to medium-high. Place the kofta on the grill and cook for 4 to 5 minutes per side until fully cooked through (use spatula to carefully turn the kofta over halfway through cooking).

Serve immediately, garnished with another sprinkle of Aleppo pepper or chili pepper flakes and  your choice of sides (in this post, I served the kofta with homemade hummus, simple Mediterranean salad, pita bread and some olives).

These were delicious, and a hit with the family! I used dill instead of the mint, and baked them instead of grilled them. The flavor was fantastic!

We love Kofta but never thought about having chicken Kofta. I loved this recipe but will say the flavors are quite mild. I added cumin, cinnamon and more garlic to enhance the flavors. I also added some bread crumbs to give the chicken a bit more body and less stickiness. I served on a bed of arugula with a lemon vinaigrette and also use a cilantro vinaigrette.

Chicken Kofta is a combination of poultry, onions, garlic, herbs, and spices served as a deliciously crispy patty. Enjoy with hummus or a fresh salad!

Baharat Spiced Chicken Kofta

pita (or slice sandwich bread)

red onion (grated (1/2 cup grated onion))

flat leaf parsley (chopped)

tbsp baharat spice

tsp kosher salt

tsp black pepper

Tear pita in half and toast until golden brown (or slice of bread). Moisten the bread with a few tablespoons of water and let sit for a few minutes. Squeeze any excess water from bread and place in a large mixing bowl.

Meanwhile grate the onion over a kitchen towel and squeeze excess water to remove and discard. Add onion to the bowl with bread.

To the bowl add the ground chicken, egg, garlic, parsley, mint, baharat spices, salt and pepper. Using clean hands, swirl with fingers to mix until thoroughly combined.

Wet your hands with a little water and form the chicken mixture into 12-16 oval patties about 1 to 1 1/2-inch in thickness (See Notes 1 and 2). Arrange the kofta on a lined tray and refrigerate for 15 minutes to firm up while you clean and preheat the grill to 450°F.

Grease indoor griddle pan or the grates of a gas grill with a little oil. Place the kofta on the griddle pan or grill and cook for 4 to 5 minutes per side until fully cooked through.

Grind your own chicken in the food processor with shallots, herbs and seasonings for this easy and moist kofta. Option to air fry or bake in the oven!

Place chicken breast in the bowl of a food processor. Grind chicken until minced.

Add fresh mint, parsley, shallots, garlic, egg, bread crumbs, shawarma spice, and salt.

Pulse until everything comes together thoroughly.

Using a small ice cream scoop shape them into small meatballs. Approximately 2 tablespoons.

Place in air fryer, spray with olive oil spray or brush with a little olive oil.

Cook at 350 degrees F. for 13-15 minutes.

If you don't have an air fryer, bake at 375 degrees F. for 18-20 minutes or until cooked through.

Serve with hummus and a salad or in a wrap.

Easy Chicken Kofta

This Chicken Kofta Kebabs recipe presents a tender, juicy bite that will leave everyone asking for more! Get ready to be entranced with Middle Eastern charm!

Juicy Chicken Kofta Kebabs

chicken (I used chicken breast only)

Roma tomato

½ small yellow onion (or red onion)

jalapeno (use more or less to taste)

Aleppo pepper (or paprika)

coriander powder

½ teaspoon 7 spice

salt

turmeric

baking soda

garlic powder

onion powder

pepper paste (optional)

Arabic Shatta (spicy paste) (optional)

Chop the vegetables very finely.

Add the chopped veggies and spices to the chicken and mix.

Place the chicken mixture into the freezer for 30 minutes, or fridge for an hour.

When ready, dip your hand into the cold water and start shaping your kebabs on the wooden skewers.

Place on a parchment paper lines baking sheet and bake, covered, at 425 degrees F for 18-22 minutes, flipping halfway. You can broil them to get more color.

Chicken Kofta Kebabs (Middle Eastern-Inspired)

lb ground chicken ((we used 93% lean))

onion

chopped fresh parsley ((or sub up to half with fresh mint))

garlic, finely minced

breadcrumbs ((or store-bought // gluten-free

tsp black pepper ((optional))

tsp ground cayenne ((optional))

Avocado oil ((or spray // for greasing grill))

Greek lemon rice

Tahini sauce

If using bamboo skewers, soak in water for at least 30 minutes before using to prevent them from burning on the grill. We prefer metal skewers.

To a medium mixing bowl, add ground chicken, chopped onion and parsley, garlic, breadcrumbs, cumin, coriander, cinnamon, salt, pepper (optional), and cayenne (optional). Use your hands (with food prep gloves, if desired) to combine the mixture until the spices are evenly distributed. Wash hands thoroughly after touching raw meat.

Preheat a grill pan or outdoor grill to medium-high heat. Lightly spray the grill pan or lightly brush the grill with avocado oil.

Take ~1/4 cup of the chicken mixture and shape it into a log. Press a skewer through the center and shape to about 5 inches long and 1 inch thick. Repeat with the remaining chicken mixture. Recipe as written should make ~8 skewers.

Once the grill is hot, use a lightly greased metal spatula (or clean hands holding onto the meat, not the skewer, to prevent it from sliding off) to add as many kebabs as will fit without touching. Cook for 3-4 minutes on the first side, then flip gently with a metal spatula or tongs, and continue cooking for 3-4 minutes or until a meat thermometer inserted into the center reaches an internal temperature of 165 F (74 C). When done, the skewers should have dark brown grill marks, shrink in size by about 25%, and no longer be pink. If the sides don’t look cooked, your skewers may be thicker, in which case you should flip onto each of the thin sides for 1-2 minutes to cook until done.

Enjoy the kofta kebabs hot with lemon rice, hummus, tahini sauce, tabbouleh, grilled veggies, and/or pita bread!

Best when fresh. Leftovers keep in a sealed container in the refrigerator for up to 2-3 days and reheat well on the stovetop in a skillet over low-medium heat until warmed through. The uncooked mixture can also be frozen into patties and cooked directly from frozen in a skillet over medium heat for ~5-6 minutes per side.

This recipe was delicious. Not hard to make and I was surprised that it tasted like a restaurant kebob. Couldn’t believed I cooked it. We made it in the grill and use metal sticks.

Made these last night, and they were easy and delicious. I did not bother with the skewers. I just formed them as directed in the recipe, then grilled them. Much easier IMO, but YMMV.

I made those yesterday and they were great.  Rather than breadcrumbs, I used rolled oats that I reduced to a coarse powder in the Magic bullet.  The taste and texture was amazing.

Finally made this recipe and it did not disappoint! My husband even asked for seconds! We loved the spices and the all out flavor of these and will definitely keep them on rotation!

I made these today with my 12-year old daughter - and no surprise when I say this is another successful recipe from you! 
We have a large family, so we made the recipe x 3.5, and ended up with 28 skewers... none left by the end of dinner, which speaks for itself.  
I had to make a couple of adjustments, and thought I'd share, in case they may be helpful for others. I didn't have chicken mince, so put chicken breasts in the food processor until it looked like mince. It would have taken me a long time to grill 28 skewers, so I didn't put the logs on sticks, I just put them in the air fryer for 10 minutes, and your handy advice of 74C interior temperature was spot on. 
The kebabs came out so well, really tasty (half parsley, half mint is a great idea you suggested), and for the fact they were all eaten is the biggest compliment to you :D
Will definitely make these again.
