I double this recipe and make it at least twice a month...keep all the ingredients on hand so I can throw it all in, except for cilantro and avocado of course.  I add hatch chilis for spice and use chipotle chili powder instead of regular for a unique flavor.  And put the cheese on each serving not in top of it all.

Super easy and delicious. I used the meat off a rotisserie and it was ready much faster. I also agree to use a Mexican cheese blend and to put it on individual servings.

This was super easy and really yummy!! My family loved it. We didn't add the cheese until our bowls were dished up as suggested and it was perfect. I also added an extra cup of chicken stock to make sure it still had a good soup broth. I also put 1/2 tbsp of cumin instead or a full tbsp so it wasn't to over powering. We will definitely be making this again and enjoying the leftovers for the next couple days.

Great soup! It is definitely a keeper and will be a staple for my family! My only suggestion would be not to add the cheese to the entire batch of soup as it makes the leftovers look murky. Just add the cheese to individual servings! Other than that...perfect!

I did not think this soup was very good. It just tasted like we threw a bunch of ingredients together -no depth of flavor. I told my husband no more slow cooker recipes unless I approve them.

I was disappointed in this soup. It was very watery and bland. I added some tomato juice but it needed more corn, beans, spices.

It turned out really great! I gotta tell ya, my husband and I both fell in love. The only things I changed is I cut the recipe in half (for the two of us) and added an ounce of cream cheese.

I am not a good cook at all and I was able to make this and it was Amazing!  My family loved it too. I added the cheese to each serving like suggested. It took me longer than suggested because like I said I am not good in the kitchen and I burned the first set of tortillas and had to redo them. It also took me a while to shred the chicken and cut up the cilantro and avocado. But it was worth it! Soooo yummy!!!

This soup was so so good!! I’m 20 and definitely no chef but my boyfriend said it was the best soup he’s ever had (and same here). It was incredibly easy to make, I threw everything in the pot and left for work and came back 6 hours later and my meal was done!!! Cheddar jack goes really well with it (I didn’t put it in the crockpot) as well as sour cream. Definitely making this for the rest of my life!!!!

Not enough spices in this recipe and it makes the soup pretty bland. Double or even triple the given spice amounts and add red pepper flakes to taste if you want heat

How can I make this soup but without an instant pot?

It’s a very good version of taco soup and was relatively easy to prepare. We loved the toppings...they’re what made the recipe special! The homemade tortilla strips, fresh cilantro, avocado slices, and the cheese—delicious! Like other reviewers, I agree that the spices need tripling. As the recipe notes, salt the chicken well, but I still needed to add more salt at the end. I added a half-cup if chunky salsa at the end because it was a little bit bland.   With these modifications, I’d give it 5 stars.

Note to self: read the comments before making a recipe. All the bad things that happened to others, happened to me. One piece of advice: just cook the noodles separately.

In a large Dutch oven or pot, combine the chicken with 6 cups of water. Season with kosher salt and pepper. Add the onion and 2 whole garlic cloves. Bring to a boil over medium-high heat, then lower the heat and let simmer gently for 15 to 20 minutes (or until the chicken is cooked).

When the chicken breast is cooked through, remove from the pot and carefully shred using two forks. Strain the broth using a mesh strainer over a large bowl. Discard the onion and garlic. Set the broth in its bowl aside for now.

Carefully wipe the pot or Dutch oven and return to the heat. Add 2 tablespoons extra virgin olive oil and warm over medium heat. Add the minced garlic, carrots, and spices.

Return the shredded chicken to the pot. Stir to combine. Season with kosher salt.

Add the broth and bring to a boil, then lower the heat to medium-low, and cover partly. Cook for another 15 to 20 minutes (until the carrots are tender and cooked through).

Stir in the spinach, herbs, lemon juice, and lemon zest. Transfer to serving bowls and enjoy!

Mediterranean-Style Lemon Chicken Soup with Turmeric

Turmeric Lemon Chicken Soup

This hearty Indian-inspired soup will warm you up on a cold day – don&#8217;t feel guilty as it&#8217;s low in calories and fat. Freeze some for lazy days.

Put the chicken in a big pan, add the flavourings and cover with cold water. Bring to the boil, skim off any scum and simmer for 45 minutes until the chicken juices run clear. Remove the chicken from the pan; remove and discard the skin. Take the meat from the bones and shred it. Sieve the stock into a pan and discard the solids. Boil until reduced by half.

Meanwhile, heat half the oil in a large pan over a low heat. Add the onion and cook for 5 minutes until softened. Add the remaining oil, the carrot, parsnip, potato and red pepper. Cook for 3 minutes more. Increase the heat, stir in the curry paste and cook for 2 minutes, stirring, then add the passata and 1 litre of the stock. Season, bring to a boil, then reduce the heat, cover and simmer for 10 minutes until the vegetables are tender. Add the rice and shredded chicken for the last 3 minutes and cook to heat through. Cool and freeze for up to 3 months.

Defrost completely, heat through and serve sprinkled with coriander.

Heat oil in a 4 quart Dutch oven or large pot over medium-high heat until the hot oil sizzles, about 1 minute. Add onion, garlic, carrots, and celery. Sauté until tender, about 5-7 minutes.

Add chicken broth and chicken breasts. Cover the lid and bring it to a simmer over medium heat until chicken is cooked through, about 12-15 minutes. (If using cooked shredded chicken, just cook until warmed through, about 5 minutes).

Remove the chicken and shred into small pieces with 2 forks. Once shredded, transfer back into the pot and mix evenly. (If you use cooked chicken, you can skip this step).

Add noodles and cook until al dente according to the package instructions, stirring occasionally, about 6-8 minutes.

Turn off the heat and stir in dill and parsley. Season with salt and pepper to taste.

Serve immediately and drizzle with lemon juice if desired.

Healthy and delicious garlic chicken soup recipe that is super quick and easy to make. It's made with shredded rotisserie chicken (or any leftover cooked chicken) and green vegetables. Topped with mellow garlic sauteed in butter and sesame oil, which adds rich flavour, this soup can be finished with noodles or served as a low-carb version. 

Garlic Chicken Soup (Quick &amp; Easy)

onion, diced small (about 1 cup)

celery rib,

garlic cloves, diced

chicken stock (or water + stock cubes)

egg noodles or rice noodles

lemon juice

garlic, sliced thinly

salted butter (about 30-40 g, 1-1.5 oz)

sesame oil

Prep. Shred the chicken meat and dice all the vegetables, 2 garlic cloves and cut a few ginger slices. Slice extra garlic for making the buttery topping. Boil a kettle of water to cook the noodles separately if using (according to the packet instructions). 

Step 1. Add a tablespoon or two of olive oil to a heavy pot and place over medium heat. Add the onions, carrots, celery and a little salt and saute for 5-6 minutes, stirring a few times.

Optional step if making noodles: In the meantime, cook the noodles in a separate pot (if using). Once the noodles are cooked, strain and rinse under cold water to stop them from cooking. I like to undercook the noodles by a minute as they will soften further in the hot chicken soup.

Step 2. Add ginger, chopped garlic, pepper and turmeric (these two always go hand in hand as pepper enhances turmeric&#8217;s curcumin absorption in the body). Stir through and cook for 1 minute.

Step 3. Add shredded rotisserie chicken and stock cubes, followed by six cups of water. Or you can use ready-made stock, or half and half. Stir through and bring to a simmer.

Step 4. Add sliced or chopped Asian greens and cook over medium heat for 3-4 minutes, stirring a few times.

Step 5. Finally, add the broccoli florets and cook for 2 more minutes. Then turn the heat off and taste for salt. Finish by adding a tablespoon or two of lemon juice.

To make buttery garlic oil, heat a medium pan over low-medium heat. Melt the butter and once hot, add the sliced garlic. Saute over low-medium heat for a few minutes, stirring frequently, until it starts to change colour. Add the sesame oil and continue to cook until the garlic is caramelised, crispy and golden brown. Don&#8217;t overcook or burn the garlic as it will turn bitter; it&#8217;s better to undercook. Transfer the buttery oil and the garlic to a bowl as soon as it looks ready.

To finish the soup, add the pre-cooked noodles (if used) to the hot soup and pour some of the garlic butter over the top. Sprinkle with fresh parsley. Serve the soup with extra garlic and parsley in bowls.
