This meat-free version of the Laotian and Thai dish from Lara Lee, the author of Coconut and Sambal, combines smoked tofu with pops of crunchy sesame seeds and a kick of lime dressing. Toasted rice powder gives larb its distinct pebbled texture and nutty flavor. Making it is easy: Slowly toast uncooked glutinous (sticky) rice in a pan until it’s golden and deliciously fragrant, then grind in a spice mill until it’s the consistency of coarsely cracked black pepper. Make extra rice powder and keep the leftovers in a jar to add texture to noodles and salads…or just another batch of larb.

Mix lime juice, soy sauce, palm sugar, chile powder, and 1 tsp. salt in a large bowl to combine; set dressing aside.

Toast rice in a dry medium skillet over medium heat, stirring occasionally, until golden and nutty-smelling, 6–8 minutes. Transfer to a spice mill and let cool, then coarsely grind. Set rice powder aside. Wipe out pan.

Heat oil in same pan over medium. Cook shallots and lemongrass, stirring often, until softened, about 4 minutes. Scrape into bowl with reserved dressing.

Add tofu, 2 Tbsp. sesame seeds, and reserved rice powder to bowl and gently toss to combine. Season with salt and add more chile powder and lime juice if needed.

Stir herbs into larb and serve with lettuce leaves and more sesame seeds for assembling.

Paneer With Burst Cherry Tomato Sauce

This dish of saucy, seared paneer channels the flavors traditionally found in matar paneer—coriander, cumin, chile, and ginger—into a quick-cooking cherry tomato sauce that's packed with bright spring-y sugar snap peas. If you can’t find paneer, give this a try with another sturdy non-melty cheese like Halloumi or queso fresco. Or think of it as a simple sauce you can serve over any protein, like a crispy-skinned salmon fillet, seared shell-on shrimp, sliced feta, or even just a bed of salted yogurt. We strongly recommend buying whole coriander, cumin, and mustard seeds. Not only is their flavor fresher, but they also offer pops of texture throughout the sauce. If you need to substitute ground spices, use ¾ tsp. each (and skip the black mustard, which is hard to find pre-ground).

First, prep your ingredients. Slice 8 oz. paneer into generous ¼"-thick planks and pat dry; set aside.

Trim roots from 6 scallions and discard. Thinly slice on a deep diagonal and place in a medium bowl. Scrub and thinly slice a 1" piece ginger. Stack ginger slices and slice crosswise to make strips the size of matchsticks; add to bowl with scallions. Peel and thinly slice 2 garlic cloves; add to bowl.

Using a mortar and pestle or the side of your chef’s knife, coarsely crush 1 tsp. coriander seeds and add to vegetables. Mix in 1 tsp. cumin seeds, ½ tsp. black mustard seeds, ½ tsp. Kashmiri chile powder or ¼ tsp. cayenne powder, and ¼ tsp. ground turmeric; set aside.

Using a paring knife or your fingers and working one at a time, snap off tips from stem ends of 4 oz. sugar snap peas (about 1 cup) and pull to remove strings. Repeat process on the other end. Cut any larger sugar snap peas in half on a diagonal; set aside.

Now, bring it all together. Heat 2 Tbsp. extra-virgin olive oil in a large skillet over medium-high until shimmering. Arrange reserved paneer in a single layer (just a heads-up that you are only browning one side) and cook until golden brown underneath, about 1 minute. (If paneer is sticking, just give cheese a little more time to brown. It will release from pan once it is sufficiently crisped.) Using a slotted fish spatula or spoon, transfer paneer to a plate, leaving as much oil behind in pan as possible. Arrange browned side up and season generously with kosher salt.

Set pan over medium heat and add remaining 1 Tbsp. extra-virgin olive oil along with reserved scallions, ginger, garlic, and spices. Cook, stirring often, until scallions are wilted and mustard seeds begin to pop, about 2 minutes.

Add 12 oz. cherry tomatoes (about 2 cups), reserved snap peas, and 1 cup water. Increase heat to medium-high, season with salt, and bring to a simmer. Gently smash each tomato open with fish spatula or spoon (gentle is key; you just want to break them open a little) and simmer until tomato juices thicken slightly, about 3 minutes (it should still be pretty brothy and light).

Taste sauce and add more salt if needed. If your tomatoes aren’t super sweet, you may need to add a pinch of sugar at this point to balance their acidity. Add paneer back to pan and simmer until warmed through.

Remove from heat and mix in ½ cup (lightly packed) mint leaves. Serve with cooked rice.

The chef Tunde Wey is based in New Orleans, but he was born in Nigeria, where jollof rice is a well-loved dish. The rice is cooked in a flavorful tomato and pepper purée; his version is vegan, and laced with chile heat.

Jollof Rice

In a blender, combine tomatoes, scotch bonnet pepper and onions; purée. Pour out half the purée into a bowl; set aside. Add the bell peppers to the purée remaining in the blender and pulse until smooth. Add to the mixture that was set aside and stir to combine.

Heat vegetable oil in a large pot over medium heat. Add blended vegetables along with the salt, curry powder, ground chile pepper, garlic powder, onion powder, bay leaves, ginger and thyme. Bring mixture to a boil.

Stir in the rice until well mixed, then reduce the heat to low.

Cover pot and let cook until rice is al dente, about 45 minutes. Check after 30 minutes; if rice is sauce-logged, remove the lid to cook off the excess sauce. If rice seems dry, stir in 1 to 2 cups water. Allow the rice at the bottom of the pot to char a bit to infuse it with a smoky flavor.

Enchiladas can be a bit of a project, but here, the process has been streamlined, making them a truly possible weeknight endeavor. Begin by sautéing peppers, onions and garlic until charred in spots, then blend half of the vegetables with canned tomatoes and chili powder for the sauce and combine the rest with black beans, shredded cheese and cumin for the filling. If you’re short on time, you could use store-bought enchilada sauce (you'll need three cups), but quality varies, so taste it and add whatever you think is missing: chipotle in adobo or chili powder for smokiness, hot sauce for heat, dried oregano or fresh cilantro for complexity and salt for overall flavor.

Vegetarian Bean And Cheese Enchiladas

Vegetarian Bean and Cheese Enchiladas

Heat the oven to 425 degrees. In a large skillet, heat the oil over medium-high. Add the onions, bell pepper and garlic; season with salt and pepper. Cook, stirring occasionally, until softened and charred in spots, 6 to 8 minutes. Stir in the cumin and cook until fragrant, about 1 minute. Remove from heat.

Transfer half the vegetable mixture to a blender; add the tomatoes, chili powder and hot sauce. Blend until very smooth. Season to taste with salt and pepper. (If your blender isn’t particularly strong and the sauce looks more like a chunky purée, add 1/4 cup sour cream and blend again until smooth.)

Add the black beans and 1/2 cup cheese to the remaining vegetables in the skillet and stir to combine. Some canned beans are already salted, so taste and adjust seasonings as needed.

Spread out the tortillas directly on the oven rack and heat until warmed and pliable, 1 to 2 minutes, then wrap in a kitchen towel to keep warm. Pour half the enchilada sauce (about 1 1/2 cups) into a medium casserole dish or a 9-by-13-inch baking pan and spread it to cover the bottom of the dish.

Line up the filling, tortillas and baking dish in a row. Place a little more than 1/4 cup of the bean mixture in the center of one tortilla. Roll up the tortilla and place in the casserole dish, seam-side down. Repeat with the remaining tortillas.

Pour the remaining sauce over the enchiladas, then sprinkle with the remaining 3/4 cup cheese. Bake until the cheese has melted, about 10 minutes. Top with sour cream and cilantro and serve immediately.

Bharta is a Bangladeshi style of seasoned meat or mashed vegetables usually served at room temperature alongside hot steamed rice.

Winter Squash Bharta

2-lb. small red kuri, kabocha, or butternut squash

Bharta is a Bangladeshi style of seasoned meat or mashed vegetables usually served at room temperature alongside hot steamed rice. Its signature flavor comes from the use of pungent and fiery mustard seed oil. If you can’t find mustard seed oil, substitute with extra-virgin olive oil (the most flavorful oil you’ve got)—just don’t call it a bharta! This recipe is part of Sohla El-Waylly’s Thanksgiving-for-two-or-maybe-eight feast, see the full menu here. If you’re also making Sohla’s Milk and Honey Pie, roast the squash while you parbake the pie crust.

Preheat oven to 350°. Using a sharp heavy knife, halve squash lengthwise and scoop out seeds with a spoon (if desired, clean and use the seeds in Smashed Green Beans). Rub cut sides of squash with 1 Tbsp. oil and season generously with salt. Place cut side down on a rimmed baking sheet and roast until tender, 60–75 minutes.

Scoop squash flesh from skin into a serving bowl. Using a potato masher or fork, smash until mostly smooth. Set aside a big spoonful of red onion and cilantro. Mix in chiles, ghee, coriander, cumin, chile powder, remaining red onion, remaining cilantro, and remaining 2 Tbsp. oil; season with salt and pepper.

Top squash with reserved onion and cilantro just before serving.

Do ahead: Squash can be baked and mashed 3 days ahead. Let cool; cover and chill.

*Most mustard oils are not FDA-approved as edible in the United States due to their high erucic acid content. If you are concerned, look for Yandilla, an FDA-approved brand, online, or use olive oil instead.

We took inspiration from picadillo, a saucy spiced ground meat dish packed with flavor, and thought, Why not give tofu a similar treatment? So for this vegetarian (vegan without the queso fresco!) version, we crisped up the tofu in olive oil, then doused it in spices and hot sauce for some heat.

Tofu Crumbles With Rice and Avocado

14-oz. block firm or extra-firm tofu

garlic cloves, smashed

ancho powder or sweet smoked paprika

Tbsp. double-concentrated tomato paste

Firmly squeeze tofu to expel as much excess water as possible (don’t worry if it begins to crack or come apart). Tear into 1"–2" pieces.

Heat oil in a large nonstick skillet over medium-high. Add tofu, season with salt, and cook, tossing occasionally, until golden brown and crisp around the edges, 5–7 minutes. Using a rubber spatula, break up tofu into ½"–1" pieces. Add garlic and cook, tossing occasionally, until tofu pieces are crisp all over, about 3 minutes.

Reduce heat to medium. Add coriander, ancho powder, cumin, and fennel. Cook, stirring, just until spices deepen in color, about 20 seconds. Add tomato paste and cook, stirring with rubber spatula, until paste slightly darkens in color, about 1 minute. Add hot sauce and 1 cup water. Bring to a simmer and cook, uncovered and stirring occasionally, until sauce thickens, 5–7 minutes. Season with salt.

Divide rice among bowls. Top with tofu mixture, cabbage, avocado, queso fresco, and cilantro. Serve with lime wedges for squeezing over.

Kuku Paka

Kuku paka, an East African-Indian dish that's traditionally made with charcoal-grilled chicken in a spiced coconut milk sauce and served over rice, is comforting, sweet, creamy, and well-balanced. This version, which is adapted from my cookbook Let's Eat, approximates the traditional curry base, but features broiled chicken so that you don't have to grill when it’s raining or freezing or you just don't want to. Any cut of chicken can be used: I like boneless thighs here for the sake of ease and flavor, but any mix of breasts, tenders, or drumsticks can be used, provided they’ve been cut into similar sizes. Because the chicken is cooked separately from the curry base, you also can substitute it with any hearty vegetable to make this dish suitable for a vegetarian diet. For a plant-based diet, skip the addition of heavy cream or substitute it with a creamy barista-style non-dairy milk or additional coconut milk. Jalapeños will work in place of the Thai chiles, though you’ll want to adjust the amount depending on your spice tolerance—my rule of thumb is one medium jalapeño for every two Thai chiles. And a pinch of cayenne pepper will work in place of the Kashmiri chile powder. —Zaynab Issa

Finely grate 3 garlic cloves into a large bowl with a Microplane. Cut 1 lemon in half and squeeze juice through your hand or a fine-mesh sieve into bowl; discard seeds. Mix in 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt and ¼ tsp. Kashmiri chile powder. Add 2–3 lb. skinless, boneless chicken thighs (about 8 large) and toss to evenly coat. Cover bowl and let sit at room temperature 30 minutes.

Meanwhile, make the curry base. Coarsely chop 1 medium onion, 1 plum tomato, 1–2 green Thai chiles (depending on how spicy your chiles are and your heat tolerance), and ¼ cup cilantro leaves with tender stems. Transfer to a blender or food processor and blend or process until smooth.

Heat broiler. Heat 2 Tbsp. extra-virgin olive oil in a high-sided skillet or large pot over medium. Add ¼ tsp. ground coriander, ¼ tsp. ground cumin, and ⅛ tsp. ground turmeric. Cook, stirring, until fragrant, about 1 minute. Pour in purée and add 1½ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt. Stir to combine and cook, stirring occasionally, until raw onion smell subsides and curry is paste-like in consistency, 15–20 minutes.

Arrange chicken on a foil-lined rimmed baking sheet and broil until cooked through, charred in spots, and a thermometer inserted into the thickest parts registers 165°, 17–20 minutes.

While the chicken is cooking, shake one 13.5-oz. can unsweetened coconut milk to ensure coconut cream is incorporated, then add coconut milk to curry and stir well to combine. Curry should be pale yellow. Bring to a gentle simmer and cook until warm and slightly thickened, 5–10 minutes.

Once chicken is finished, add chicken and any juices accumulated on baking sheet to curry and reduce heat to low; mix well to combine. Stirring constantly to prevent curry from breaking, dribble in ¼ cup heavy cream. Taste and season with more salt if needed.

Cut remaining 1 lemon into wedges. Serve kuku paka with basmati rice and/or some crusty bread and lemon wedges for squeezing over. Top with additional cilantro to taste.

Ravaiya is the name of this traditional Gujarati dish, where whole small vegetables like okra, potatoes or the baby eggplant used here — ringan is the Gujarati term for eggplant — are stuffed with a chunky spice paste, a complexly flavored mixture of crushed peanuts, chiles, ginger and spices. As the eggplant cooks, that melts into a rich, nutty sauce, and the result is a remarkably full-flavored vegetarian meal in under an hour. You can serve this dish with basmati rice, or with Indian flatbreads like roti or paratha, the latter of which you can find frozen in some supermarkets and heat on your stovetop.

Eggplant Ravaiya

Put all ingredients except for the olive oil and eggplants in a food processor, and pulse until the peanuts are ground. Add oil and pulse to combine; the mixture will resemble damp sand. Set aside.

Cut a crosshatch in the bottom of the eggplant about three-quarters of the way up the fruit, leaving the stem intact. (In other words, you’re making a deep plus-sign shape in the bulbous part of the fruit, so you can stuff it with the peanut filling.) Repeat with the remaining eggplants.

Stuff each eggplant with a little of the peanut mixture, just enough to fill the hole. You should have some peanut mixture left over.

Place the stuffed eggplants on their sides in a single layer on the bottom of a large pot or saucepan with a lid. The eggplants can overlap a little, but ideally they will all fit on the bottom of the pot. Dollop the leftover peanut mixture on top of and around the eggplants, and add 1 cup of water. Turn heat to medium and cover the pot. Let the eggplant cook at a simmer, adjusting the heat as necessary, for about 20 to 25 minutes, or until the eggplants are just tender when you poke them at the stem end with the tip of a knife.

Taste the sauce for salt, and serve hot with basmati rice or Indian flatbreads.

Run the lime wedge around the rim of a glass. Place the sugar, chile powder and salt on a small plate and dip the rim of the glass in the salt to coat.

Add the ice cubes to the glass, then pour in the mezcal, grapefruit soda and pineapple juice, stir gently. Tear the mint leaves into several pieces and drop them into the glass, stirring gently so they release their flavor into the drink.

Typically prepared with beef and sometimes chicken, this version of the traditional Pakistani dish uses canned beets instead of fresh ones. That cuts down on both cooking time and cleanup while achieving the same results: a comforting earthy, sweet and spicy curry with a dramatically deep purple appearance. Sourness from yogurt and lime juice balances the sweetness of the beets, while ginger and garlic add layers of flavor and complexity. Riff on the recipe by adding leafy greens like spinach a few minutes before adding the spices. Serve with rice or roti.

Heat ghee in a medium (about 10-inch) pot over medium heat for 30 seconds, or until ghee has melted. Stir in onion and adjust the heat to high; cook, stirring occasionally, until the onion softens and starts to become translucent, 4 to 5 minutes.

Add the chicken, ginger and garlic, and continue to cook, stirring frequently, until the chicken turns golden and most of the liquid in the pot has evaporated, 15 to 17 minutes. Stir in the chile powder, cumin seeds and turmeric. Cook for 30 seconds, then add the tomatoes and salt.

Cook until the tomatoes start to break down, 4 to 7 minutes, then adjust heat to medium, stir in the yogurt (if using) and the beets. Simmer, stirring occasionally, until the color of the beets permeates the rest of the curry, about 5 minutes.

Serve topped with green chiles and cilantro (if using), with lime wedges and rice or roti alongside.

Winner winner chicken dinner! Made with pickled beet roots as that was all we had but gave them a quick rinse before adding. Strongly recommend making in advance, letting the flavors meld, then reheating when serving. Absolutely delicious. Doubled the garlic and ginger and spices to ensure it had pop!

I followed the recipe as written except I did double the garlic, ginger, and spices as some other comments have mentioned.  I was very skeptical pretty much until I tasted for seasoning at the end but this works so. well.  Be patient with the chicken and get it to golden - there’s so much flavor in it.  The beets get mellowed out and a little sweeter.  The chopped chilis, cilantro, and lime on top are perfect.  I served it with some garlic naan and a salad and it’s going into the rotation, for sure.

I was short on chicken so I used just 1 pound (of chicken breast), then I used whole cooked beets (in the plastic packages) and used just under the whole 1 lb package. Instead of the mild chili powder, I used 1/4 teaspoon of cayenne but no other changes. It was amazing! My boyfriend gave it a 10/10 and still added some chilies on top, but I couldn't handle more spice. The lime on top was the chef's kiss

Reading through the comments I also doubled the spices, and it turned out very nice. Definitely add the cilantro and pepper (I used jalapeno) at the end, that makes all the difference. fwiw, I did not add the yogurt, and steamed fresh beets rather than using canned.

This was fantastic and very easy.  Highly recommend, but made the following modifications to measurements:

- at least a tablespoon and a half or two tablespoons of garlic
- at least a tablespoon of fresh ginger
- add some red pepper flake, ground cumin and salt with the onion and chicken as it cooks
- ~2 teaspoons of chili powder (I used hot chili, but I prefer very spicy)
- in lieu of fresh tomato, I used full San Marzanos from the can with a tiny bit of sauce 
- ~2.5 to 3 teaspoons of cumin seeds (this is the star)
- 4ish tablespoons of yogurt 

It definitely needs the lime juice to finish!

Was underwhelmed with the flavor. The canned beets have an unsavory texture when cooked but I can see the vision.

I used fresh beets that I had frozen and shredded them using a cheese grater. Turned out delicious like this!

This was delicious! I followed one of the other reviews and doubled the spice and deglazed the pan with white wine vinegar. I also used pickled beets.

Very good and different!  Used a heavy hand with the spices, including a full tsp turmeric by mistake.  It was fine, particularly since I added the optional yogurt and stirred several handfuls of spinach in at the end.

To be honest, I was a little underwhelmed by this recipe. I prepared it as per the recipe. My finished dish wasn’t as vibrantly purple as the photo in the app.  Next time I cook it I think I’ll marinate the chicken in garlic and ginger paste and then chargrill (as per chicken tikka masala) then adding to the onion and spices and diced beetroot. I served it with saffron rice and steamed Brocolini. As per the recipe it’s a fairly quick and easy midweek meal but it’s not exceptional.

Used the ghee and the yogurt. Came out creamy & delicious: especially with the Thai peppers.

@Kendal in Denmark I was wondering how it would taste with pickled beets! These mods sound great!

I know we all hate these “I changed everything, it was great” notes, but mine came out pretty balanced and zippy with some mods. 
- pickled beets for acid   sweetness
- white wine vinegar for more acid
- 1.5x all dried spices for intensity 
- make it like a braise (brown chicken   remove, add onions   aromatics, deglaze w 2T white wine vinegar   1/4c water, add back chicken   add tomatoes, beets, yoghurt, simmer until chicken fully cooked)

Fried the cumin seeds first in the ghee as usual with a dried mild chili (paprika). Used: 1 med onion & 1 shallot; 1/2 t turmeric, 1/2 t mirch (Kashmiri chili powder), 1T each ginger & garlic paste, 1 lb chicken thighs, 1 t ground cumin, 4-5 canned San Marzano tomatoes, 1/2 t salt, 2T full-fat Gk yogurt,  1 1/2 large roasted beets (from earlier in week), cilantro, lime. Ratched heat instructions down for induction stove, otherwise instructions work. Low heat avoids curdling yogurt.
