Leaving them attached, place the 8 hot dog buns in a 9 x 13-inch (22 x 33-cm) baking dish. Cut a rectangle in each hot dog bun, making sure to stay 1 centimeter from the edges. Push down on the bread cut-out to compact it tightly into the bottom of each bun, making sure to press down on the bottom edges as well. This will help create a larger space for the fillings and reduce mess.

Mix the butter, garlic, and parsley in a small bowl, then brush the buns and their hollowed insides with the garlic butter. Bake for 5 minutes to toast the buns as well as help the sides of the buns firm up so they don’t collapse under the weight of the fillings.

Place a slice of cheddar cheese inside each bun, then spoon a bit of chili inside each one. Slide a hot dog snugly on top of the chili in each bun, then top with more chili.

Bake for 20-25 minutes, until the cheese is golden brown and the chili has started to brown. Top with fresh parsley, then slice the hot dog boats along their connected seams to serve.

Chili Dogs

lb. lean ground beef

onion,

garlic cloves,

honey

chili powder (or more if you like it spicy)

tomatoes tomatoes

brioche hot dog buns (gluten-free buns, if needed)

Add the ground beef to a small pot over medium heat. Let it cook until you see some fat in the pan then add the onions and garlic. Continue to cook until the meat is no longer pink and the onions are soft, about 5 minutes. 

Add the honey and chili powder to the pot and stir well. Let it cook for 2-3 minutes to caramelize the honey then add the diced tomatoes, salt, and pepper. Let the chili simmer on low heat while you prepare the dogs and buns. 

Cook the hot dogs and warm the buns over a fire, on a grill, or in a pan on your stove. When they&#8217;re ready, put a hot dog in each bun and top with ¼ cup of the chili, 2 tablespoons of shredded cheddar, and some green onions. (See notes)

Homemade Chili Cheese Dog Recipe

olive oil

ketchup

Worcestershire sauce

tsp apple cider vinegar

tsp kosher salt

tsp black pepper

paprika

tsp cumin

tsp ground ginger

cayenne pepper

chicken broth

hot dog franks (I use Ball Park all-beef franks, preferably grilled)

cheddar cheese (shredded)

Heat olive oil over medium-high heat in deep pot.

Add the onion and cook until sweating, about 3-4 minutes.

Add the ground beef and cook over medium-high heat until well-browned, about 8-10 minutes.

Add tomato paste, ketchup, Worcestershire sauce, vinegar, salt, pepper, paprika, cumin, ginger, and cayenne, and stir together, making sure all the meat is broken up into small pieces.

Add the chicken stock and bring to a simmer.

Stirring occasionally, simmer over low heat until chili thickens, about 10-12 minutes.

Serve over grilled hot dogs and garnish with shredded cheese.

Smooth, beanless hot dog chili made for chili dogs. Ground beef simmers with tomato sauce, ketchup, and classic spices into a rich, spoonable chili sauce, with easy options for extra thickness and spicy heat.

Hot Dog Chili Recipe (for Chili Dogs)

beef (80/20 preferred)

water broth

tomato sauce

chili powder

cumin

paprika (smoked optional)

brown sugar (or 2 teaspoons white sugar)

salt

black pepper

fine yellow cornmeal (optional, for extra thickening)

hot sauce

chipotle powder (smoky heat)

Ground Beef

Add ground beef to a large pot over medium-high heat. Pour in 1 cup of the water/broth. Cook, stirring constantly and breaking the beef up into very fine crumbles with a spoon or potato masher, until no longer pink (6-8 minutes).

Tomato and Spices

Stir in tomato paste and cook 1 minute. Add tomato sauce, ketchup, Worcestershire, brown sugar, chili powder, cumin, paprika, salt, pepper, and optional heat upgrades (cayenne, hot sauce). Stir until well combined.

Simmer

Add the remaining 1/2 cup water/broth (or enough to make it loose but not soupy). Bring to a simmer, then reduce heat to low and simmer 25-35 minutes, stirring occasionally. Add splashes of liquid if it tightens up too much before the flavors meld.

Thicken

To thicken, sprinkle in 1 tablespoon cornmeal, stir well, simmer 5 minutes. Add another tablespoon if needed.

Mash

Mash again at the end, or pulse with an immersion blender 2-3 quick times for extra-smooth chili sauce.

Adjust

Taste and adjust salt, sweetness, and heat. Serve hot.

Serve

Spoon over hot dogs in buns. Top with diced onion, shredded cheddar, and/or yellow mustard for a coney-style vibe.

Added cayenne and yellow mustard (it was a bit sweet on first taste, but this gave it the twang I was looking for), both of which I highly recommend. Yes. I discovered that just a spoonful of plain yellow mustard makes a big difference.

I love this, and chili dogs. I always add mustard, but didn't know the origin. I worked at a Sonic 50 years ago!
 Anyway love your recipe and plan to try it corn dogs too, and fry bread, with cheese, peppers
