Vegan Chili

This was very good.  I used a dark beer that we had.
We like to eat a veg. dish at least once a week.  I also substituted pinto beans in chili sause which I use in other dishes.

That was super easy and delicious. I used an immersion blender to blend half of it to make it a bit creamier. Also used an instant pot (20 mins) so that I could do it quickly and all in one pot. We added cheese, like and tortilla chips on top for crunch. So good!

Chili is one of the easiest dinners around. We keep this spiced and spicy version in the good-for-you category by using heart-healthy white beans and lower-fat ground chicken.

Chicken and White Bean Chili

Packed with all the Southwestern flavors that we love, this crock pot chicken chili recipe is beyond delicious! Healthy &amp; chock full of chicken, corn, and beans. Beer, too, for good measure.

Crock Pot White Chicken Chili

chicken breasts

Dos Equis beer

yellow onion, (diced)

garlic, (minced)

(15-ounces,

(4.5 ounces) green chilies

sweet corn kernels,

paprika

salt and fresh ground pepper, (to taste)

lime wedges, (for serving)

avocado, (sliced

jalapenos slices, (for garnish, optional)

sour cream, (for garnish, optional)

chopped fresh cilantro, (for garnish)

Place chicken on the bottom of your slow cooker.

Add chicken broth, beer, onion, garlic, beans, green chilies, and corn.

Stir in cumin, chili powder, paprika, salt and pepper.

Cover and cook for 3.5 to 4 hours ON HIGH, or until chicken is thoroughly cooked. Or cook on LOW for 5 to 6 hours, or until chicken is done.

Remove chicken breasts from the pot and place on a cutting board; let cool for a few minutes.

Shred chicken and set aside.

Transfer about 1 cup of the soup into a blender and process until blended; stir it back into the soup until thoroughly combined.

Stir shredded chicken back into the soup.

Ladle chili into bowls; serve with lime wedges and garnish with avocado, jalapeno slices, sour cream, and cilantro.

Serve.

Classic Beef Chili

onion, finely chopped

jalapeño pepper, seeded

(30 ml) butter

lbs (1 kg) ground beef

(30 ml) chili powder

(5 ml) ground cumin

28 oz (798 ml) diced tomatoes

(250 ml) regular coffee

beef broth

(60 ml) ketchup

(45 ml) lime juice

(10 g) chopped fresh cilantro

In a large saucepan, brown the onion and pepper in the butter. Add the meat and brown thoroughly. Season with salt and pepper. Add the garlic and spices and cook for 2 minutes while stirring.

Add the remaining ingredients, except for the cilantro, and bring to a boil. Simmer half-covered for 45 minutes or until the chili thickens. Add the cilantro. Adjust the seasoning.

I added a little extra chilli powder , cumin and one habeneros 
pepper and sprinkle of smoked paprika .Sautéed this with my onions adding in short increments, threw in some celery and green pepper  with everything else and at the end a cinnamon stick for 20 mins......delicious...thank you all for your sharing and Chef Ricardo for the recipe.

Did not enjoy the flavour until I added a can of tomato paste, brown sugar, more ketchup and a bunch of spices. Will probably not follow this recipe again

I love this recipe, the coffee really gives it a nice depth that balances the sweetness from tomatoes and katchup. The lime juice gives that nice subtle tart tang that brightens the flavours.  This is my new go to chili.

Excellent chili recipe! I will definitely be making this again. I added an extra can of kidney beans, but besides that, followed the recipe exactly. It’s so, so good! For the coffee, all I did was stop by Tim’s on the way home and picked up a small black coffee - worked out great! I was also more than happy to add some cilantro at the end (cilantro fan here). The flavours all go so nicely together. This is a simple, straightforward recipe and you can’t go wrong. Highly recommend.

Yum!  Loved this chilli. Added a red pepper with the onion and used ground elk instead of the beef. Didn’t add cilantro. Superb!  Will be making this again. Thank you!

I took the advice of the other person whose husband likes it a bit spicy and I added some chili flakes, honey, brown sugar , cayenne pepper. Also, I omitted the coffee, used less meat, but I added chick peas, celery and green pepper.  It turned out amazing.

Fantastic chili recipe and didn't taste that coffee was an ingredient.   Definitely a keeper!

Handling Hot Peppers Safely

Classic Chili

red bell pepper,

onion, chopped

garlic, chopped

(45 ml) vegetable oil

lb (454 g) ground beef

(60 ml) chili powder

(10 ml) coriander

(5 ml) ground ginger

cayenne (optional)

(45 ml) molasses

(45 ml) ketchup

Dijon mustard

(30 ml) red wine vinegar

(796 ml/28 oz) crushed tomatoes

(540 ml/19 oz) red kidney beans

Salt and pepper

(15 ml) whole-grain mustard

In a Dutch oven or large pot over medium heat, soften the bell pepper, onion and garlic in the oil. Add the meat and brown. Add the spices and cook for 2 minutes. 
Add the molasses and ketchup and cook for 2 minutes. Add the Dijon mustard, vinegar, tomatoes and beans. Lower the heat and simmer for 45 minutes. Season with salt and pepper. Remove from the heat and stir in the whole-grain mustard.


Wow. Simply WOW. An outstanding recipe and super easy to make. Great flavour with tons of opportunities to customize. Next time I will make with chorizo sausage. You could certainly modify this to a veggie chili. Superb!

Really good recipe! Cooked it for longer though, everyone enjoyed it.

I was looking for something a little different from the usual chili that I make, and was intrigued by some of the ingredients in this recipe, such as the molasses.  It didn't disappoint!  Sweet and smoky, it's a great chili.  I love that it's nice and thick, not at all watery.  I like it with the addition of corn.

Loved this! I did use a pound of ground elk and two hot italian sausages instead of the ground beef .... just because that’s what I had. Really really good. I’ll definitely be making this again.

Too much tomato - recipe is very high in acid and it overpowers all the great spices it contains. Would also like more kidney beans for texture.

Tasty, perhaps the coffee adds a darkness that suits us. Replaced the ketchup with the Compliments Craft Beer Chipotle sauce you can get at Sobeys. Replaced the quarter cup of water with Steamwhistle beer. Did I mention tasty?

I made this dish last night fast and easy.  As my family likes it a bit more spicy, I added chili spice to the meat as it was browning.  I served it with cheese beer biskets.  I thought adding the coffee was a nice touch. I will definitely make this recipe again.

Very good. Made this for a Sunday gathering, added a can of black beans, upped the ground beef to 2 lbs., the noodles (we use Muellers Jumbo Ridged Elbows for a lot of these recipes-perfect) to 1 lb, and substituted a packet of taco seasoning for the spices, upped the cheese until we thought it looked like enough-didn't measure-and set various hot sauces on the table. Served with cornbread. It has been requested again for  a "tweener"  dinner ("tweeners" is what we call the weekends between Thanksgiving and Christmas!)

This was really good, but definitely more chili than mac.

An easy to make beefy Instant Pot Chili that tastes slow cooked but is ready in under an hour.

Instant Pot Chili

beef (lean )

water or beef broth

can diced tomatoes with green chiles (like Rotel)

tomato sauce

green chiles

diced onion (about 1 medium onion)

green pepper

kidney beans (drained and rinsed)

black beans (drained and rinsed)

Mexican oregano ((or regular oregano))

garlic powder

Turn your Instant Pot to the saute function. Once the screen says HOT add the canola oil. Wait 1 minute, then add ground beef. Cook for 5-6 minutes, breaking up the meat with a spatula as it cooks.

Once the meat is completely browned, add water or broth and stir well to deglaze the pot, scraping all the bits from the bottom. Add all remaining ingredients, except for the spices. Stir well to incorporate all ingredients. Stir in the spices and seasonings.

Put the lid on the Instant Pot and turn the valve to sealed. Cancel the saute function and switch it to manual. Set the timer for 25 minutes. Once timer beeps, do a quick release. *Note - a natural release is fine, too, but will take longer.

Remove the lid and stir the chili. Taste and add more salt, if necessary. Let the chili sit for about 10 minutes to cool and thicken, then serve with desired toppings.

This vegetarian sweet potato chili recipe is all star and a family favorite! It's a delicious healthy dinner recipe where you won't miss the meat.

Best Sweet Potato Chili

Dice the onion. Dice the green pepper. Dice the sweet potatoes into a small dice (cubes about 1/2-inch thick). Make sure to cut the sweet potatoes as directed so they cook quickly and to obtain the correct chili consistency. Mince the garlic.

In a large Dutch oven or stockpot (at least 5 quarts), heat the olive oil. Sauté onion, peppers and sweet potatoes on medium-high heat for 8 minutes, stirring frequently. Then turn down the heat to medium low.

Add the garlic, tomatoes and their liquid, beans, corn, vegetable broth, chili powder, cumin, cayenne pepper, cocoa powder, kosher salt, and black pepper. Stir, then cover and cook for 25 minutes, stirring occasionally.

After the 25 minutes, mix the masa harina with ½ cup water and stir it together in a small bowl. Add the mixture to the chili to thicken, and cook 10 minutes more. Stir in the balsamic vinegar.

Season with additional kosher salt and pepper to taste.

Thinly slice the green onions. Divide the chili into individual bowls and garnish with hot sauce, sour cream, green onions, and sour cream. Store leftovers refrigerated or freeze for up to 3 months.
