Thick Cut Seasoned Fries with Chipotle Sauce

russet potatoes (or sweet potatoes)

Italian seasoning

garlic powder

paprika

cashews

water

tsp chipotle chili powder ((or more to taste))

garlic

lime

sea salt and pepper (to taste)

This easy, smoky chipotle sauce is a great condiment to keep on hand! Use it to spice up your favorite tacos &amp; bowls or as a dip for sweet potato fries.

Creamy Chipotle Sauce

½ cup whole milk Greek yogurt ((*see vegan note))

mayonnaise ((Sir Kensington’s is best here))

chipotle pepper

garlic (peeled)

lime juice

olive oil

honey

Sea salt and black pepper

In a food processor, place the yogurt, mayo, chipotle pepper, garlic, lime juice, olive oil, honey, and generous pinches of salt and freshly ground black pepper and blend until smooth. Season to taste with more salt and pepper, if desired.

These roasted veggie tacos taste amazing with this smoky chipotle sauce. A quick roast in the oven and your veggies are ready.

Roasted Veggie Tacos with Chipotle Sauce

red onion (cubed about 1/2")

large yellow or red bell peppers (seeded and cubed about 1/2")

zucchini (cubed about 1/2")

corn tortillas

lettuce

tsp chipotle chili powder (or more to your liking)

tomato paste

lemon juice

sea salt (to taste)

Preheat oven to 400 degrees.

Combine the chopped veggies on a lightly sprayed cookie sheet. Salt and pepper.

Place into preheated oven and roast until they begin to brown and are softened about 20 minutes. Watch carefully.

To assemble: place grilled veggies into warmed tortillas, top with avocado slices, chipotle sauce, and lettuce or alfalfa sprouts.

Tacos

Soak the cashews in 2/3 cup warm water for 30 minutes or more to soften. Rinse and set aside.

Add them plus 2/3 cup fresh water to a high-powered blender and blend slowly at first and then on high until they are smooth.

Add the chipotle chili powder, tomato paste, lemon juice and salt and blend until well combined. Pour into a small container for later.

Serve with black beans.

Rinse and cook rice according to package instructions.

Meanwhile, make the chipotle sauce: Scrape away the seeds from the chipotle with a knife (use caution when handling chipotle, and wash your hands when done.) Add all sauce ingredients to a blender or food processor and blend/pulse until smooth. Set aside.

Chop the romaine and dice the tomatoes.

When rice is cooked, add the salsa to it and stir to combine to make flavorful &quot;salsa rice&quot;. (You can also add fresh lime juice and cilantro if desired.)

Assemble your bowl: Place a large spoonful of salsa rice, then black beans (rinsed and drained), and chopped vegetables.

Drizzle the creamy chipotle sauce (or other sauce) on top.

Just made this with some lime juice (didn't have orange) and swapped Greek yogurt for the oil and I'm pretty much obsessed. Came out more like an aioli but it's sooo good!

I would definitely recommend only using a light olive oil or avocado oil.  I have stronger tasting olive oil and it overpowered the other flavors.  Ended up adding smoked paprika and hot sauce to cover it up.

Amazing flavor.  Incredibly easy to make.

I followed the recipe to a t and found the dressing very tasty but in want of some acid.  I added a little lime juice and was very happy with the outcome. Next time I will probably reduce the amount of water a bit. The dressing was great on a salad of mixed greens with smoked salmon, avocado and fresh jalapenos. Definitely a keeper. Thank you.

The first time I followed the recipe to a "t" and rather enjoyed the outcome. Since I prefer my dressings a little thicker and don't care much for sweetness in them, I replaced orange juice with lime juice and reduced the water a little. Will probably try it with a flavorless oil in the future. Olive oil tends to get overly bitter when blended at high speed. So... with the tiny tweaks to suit my personal preferece, I am adding this recipe to the rotation.  To think I never knew what to do with tahini... :) Thank you.

Add oil and chopped garlic in it cook for a min then add chicken Tikka chunks and sliced sausages. Let the chicken out from pan and the same pan cook the vegetables.

Add boiled corn and cook till soft then add cooked chicken in it ketchup, soya sauce and chipotle sauce in it.

In a pan and oil, salt and water then boil the spaghetti and cook until done. Set aside.

Add water and cook till thicken chicken gravy ready. Add oil into pan add then add spaghetti and fajita seasoning and toss it at high Flame.

Add boiled corn and cook well. Spaghetti is ready serve with chicken sauce. Tasty American Spaghetti Platter is ready to serve.
