Homemade Chocolate Almond Milk Recipe

The combination of coffee with chocolate milk is so good. This homemade mocha latte is super easy to make. NO fancy equipment needed.

In a small pot measure in the milk and on medium temperature heat (to just under boiling).

Add espresso powder to cup along with the hot water and stir.

Once milk has come to temperature, remove from heat and froth.

Place the chocolate, sugar, cocoa powder, instant coffee granules, and 1 cup milk in a small sauce pot. Warm over medium heat and stir until the chocolate has melted into the milk. Once smooth, remove from heat. Do not let the mixture boil.

Pour the chocolate mixture into a blender. Add the remaining milk to the blender, along with the vanilla extract and ice. Cover and blend until very smooth.

Pour into glasses and add whipped cream and garnishes if desired!

Combine 1 cup granulated sugar, 1 cup water, 1 cup Dutch-process cocoa powder, 1 teaspoon vanilla extract, and 1/4 teaspoon kosher salt in a small saucepan over medium heat. Whisk constantly until the sugar has dissolved and the syrup is smooth, 2 to 4 minutes. The syrup will coat the back of the spoon and will thicken as it cools.  

Transfer the syrup into a jar with a lid and let cool, uncovered. 

To make a glass of chocolate milk combine 1 1/2 cups of cold milk with 2 tablespoons chocolate syrup and stir until it is combined. Enjoy!

Note if you don't like the texture of the chia seeds you can add everything to a blender and blend on high to crush the seeds. Place the refrigerator for about an hour to thicken the drink. It will be thicker though if you don't blend at all.

foil-wrapped milk chocolate pieces, unwrapped

Beat butter, peanut butter, 1/3 cup granulated sugar and brown sugar in large bowl with mixer until light and fluffy. Add egg, milk and vanilla; mix well. Combine flour, nuts, baking soda and salt. Gradually add to butter mixture, beating after each addition until well blended.

Shape dough into 48 balls, each about 1 inch in diameter; roll in remaining granulated sugar. Place, 2 inches apart, on baking sheets.

Bake 9 to 10 min. or until lightly browned. Immediately press a chocolate piece into center of each cookie. (Cookie will crack slightly around edge.) Cool on baking sheets 1 min. Remove to wire racks; cool completely.
