This chocolate flourless torte is rich and fudgy and tastes of raspberry. Simple to prepare, this is one great dessert.

Chocolate Flourless Torte with Raspberry Swirls

margarine

pecans

c sugar

espresso powder

cocoa powder

Melt 1/4 c margarine or butter. I do this in the microwave on power level 7 for 1 minute but your microwave may heat differently.

Place the pecans, salt and sugar in a food processor fitted with the steel blade and pulse until you have coarse looking bread crumbs. Add melted butter/margarine and pulse 1/2 more times.

Press mixture into an 8 or 9&#8243; springform pan. Bake 7- 8 minutes. This is not a pretty crust. It will probably look bubbly and odd, but it will be fine!

Make the crust:

Place the chocolate chips and butter/margarine either in the microwave or on the stove and melt over low heat until smooth. Whisk in cocoa and espresso and blend mixture together well. Cool 10 minutes.

Using a stand mixer, beat eggs, vanilla and sugar in a large bowl on high speed until thick, about 6 minutes. Fold in chocolate mixture slowly. Them swirl in raspberry jam. (Because the chocolate mixture is dark, you will not see this in the finished torte. However this way the torte has a mixture of raspberry and chocolate bites without either one overpowering the other!) Pour or scrape batter into crust.

Bake torte until dry and cracked on top and tester comes out with a bit of moist batter on it, 35 &#8211; 40 minutes.

Cool in pan on rack. The center will fall in.

Using a knife, carefully separate torte from sides of pan. Place on your serving plate and remove sides of springform pan.

Dust with powdered sugar and serve with a few fresh raspberries on the side. Whipped cream is also wonderful.

tbsp confectioners erithrytol (or powdered sweetener of choice)

In a small saucepan, cook berries down until your able to smash.

Push through sieve or mill to remove seeds and excess pulp.

Pour back into pan.

Whisk in box of Simply Delish Jel and confectioners erithrytol.

Simmer until it coats the back of a spoon.

Pour into jars.

Refrigerate 1 hour to set.

Keeps up to 2 weeks in fridge if sealed in airtight jar.

Raspberry Brownie Recipe

unsalted butter

(113 grams) semi-sweet chocolate, (chopped)

(200 grams) granulated sugar

eggs egg yolk

raspberry liqueur, (optional)

vanilla extract

(64 grams) all-purpose flour,

(25 grams) unsweetened cocoa powder

fine sea salt

(100 grams) semisweet chocolate chunks

Freeze-dried raspberries, (for garnish)

Preheat oven to 350 degrees F. Line a metal 8-inch square pan with parchment paper.

In a large microwave-safe bowl combine the chocolate and butter. Microwave in 30-second bursts, stirring between each burst, until the mixture is melted and smooth. Add the sugar to the hot butter mixture and whisk vigorously until combined. Allow to cool until just barely warm.

Add in eggs, yolk, raspberry liqueur (if using), and vanilla extract and whisk vigorously for about 1 minute, or until the batter is very well combined and slightly ribbony. This helps create that shiny crust on top.

Use a rubber spatula to stir in the flour, cocoa powder, and salt until just combined. Stir in the chocolate chunks and raspberries.

Pour into prepared pan and smooth out evenly. Bake for 30 minutes. Let cool in pan for at least 30 minutes before slicing.

Brownies can be stored in an airtight container at room temperature for up to 2 days, or in the fridge for 5 days.

Before serving, pulverize the freeze dried raspberries either in a food processor, blender, or in a ziptop bag with a rolling pin or mallet. Use a fine mesh strainer to lightly garnish the pulverized raspberries over the brownies. For a finer texture and to remove the dried raspberry seeds, sift a few times before garnishing the brownies.

I made two batches of these, following your exact directions. Used the pan you recommended and measured by weight. Both of the batches came out with the center undercooked after 30 minutes. For the second batch, I included a thermometer and it said the temperature of my oven was 350°. You may want to recommend adding additional cook time if needed so no one has to serve raw brownies. That being said, I did taste the brownie dough before cleaning out the bowl and it was phenomenal. Plus I always love a one bowl recipe!

I made these this morning, but after baking for 30 min and leaving in the pan for 30 min to cool, they were still totally raw in the center. Any idea where I could have gone wrong? I followed instructions exactly and lined my metal pan with parchment. Thank you!

We did a double batch of these, with no issues. I added some freeze-dried raspberries right into the batter also. We did sprinkle on top also. These were a big hit, actually tasted like chocolate covered raspberries!

The brownie is VERY GOOD! I like that u don't have to add  baking soda or powder. It is so easy to put it together! The flavour of the raspberry melds so well with the chocolate and adds to that nice gooey texture!! Thanks for the recipe.  Is a keeper!! It is barely half an hour out of the oven and we have already eaten half!!

Really an amazing recipe, including the raspberry dust on top.  The only problem I had was I couldn't get a brownie square out intact--just didn't hold together.  Didn't impact the yummy factor tho.  Might have taken a wrong step.  Thanks for your creativity!
