chicken breasts

purple cabbage (chopped)

Heat a grill or grill pan over medium-high heat. Drizzle the olive oil over the chicken breasts and sprinkle with salt and pepper to taste.

Grill for 4-5 minutes on each side or until cooked through.

While the chicken is cooking, combine the cabbage and carrots in a large bowl.

Cut the chicken into 1-inch pieces and add them to the vegetables.

In a small bowl combine the soy sauce, rice vinegar, ginger, honey, and sesame oil; whisk until combined. Add salt and pepper to taste if desired.

Pour the dressing over the chicken and vegetables. Add the cilantro and toss to coat.

Sprinkle the sesame seeds and almonds over the top of the salad and serve.

Spicy Ranch Chopped Chicken Cabbage Salad

For the chicken:

chicken breast

limes

chili powder

cumin

garlic powder

paprika

cayenne pepper

salt

For the salad:

cabbage

green onion (or sub diced red onion)

cilantro

carrots (from 2 large carrots)

red bell pepper, diced

jalapeno,

pepitas

corn

For the spicy greek yogurt ranch:

plain greek yogurt

onion powder

lemon juice

dill chives

salt, plus more to taste

dressing

For topping:

tortilla strips (or 1 cup slightly crushed tortilla chips)

avocado,

cilantro and green onion

Marinate your chicken for at least 30 minutes: in a large bowl, add chicken breast, olive oil, honey, lime juice, chili powder, cumin, garlic powder, paprika, cayenne pepper, salt and freshly ground black pepper. Toss well to combine, then place in the fridge until ready to use.

While the chicken is marinating you can prep and chop the veggies for the salad. Place all ingredients for the salad in the bowl, except the tortilla strips (and the dressing).

Make your dressing by combining the following ingredients in a medium bowl or mason jar: greek yogurt, garlic powder, onion powder, fresh lemon juice, dried dill, salt, water and hot sauce. Mix or shake until well combined, taste, and add more hot sauce if you like it spicier, then pour dressing all over the salad and use a tongs to combine salad together with dressing.

When ready to grill chicken: Preheat your grill to 400 degrees F and scrape off any leftover bits from the grates. Place your chicken breasts on your preheated grill, and close the lid. It's important to keep the lid of your grill closed while your chicken is cooking so that no heat escapes. Cook your chicken breast on the grill for 7-9 minutes per side or until the chicken reaches an internal temperature of 165 degrees F. Cook time will vary a bit depending on the size of your chicken breast, so be sure to check the internal temperature in the thickest part of the chicken breast using a meat thermometer.

Once chicken is done, cut into strips and top the salad with it, then add tortilla strips. Garnish/top with avocado, cilantro and green onion.

Autumn Chopped Chicken Salad

lb chicken breasts (2 large)

tsp Garlic salt ((or

tsp black pepper (freshly ground)

head romaine lettuce ((8 cups chopped) rinsed and dried)

pears

cranberries

pecans (lightly toasted on a dry skillet)

feta cheese (4 oz) (crumbled)

Tbsp balsamic vinegar

Dijon mustard

garlic (pressed

extra virgin olive oil

tsp salt

tsp black pepper

Cut chicken breasts in half lengthwise so you have 4 thin cutlets. Season chicken cutlets on both sides with garlic salt and black pepper. Place a large skillet over medium heat with 1 Tbsp olive oil. Add chicken cutlets and sautee 3-4 minutes per side or until fully cooked through. Transfer to a cutting board and let chicken rest while preparing the salad then slice the chicken into strips.

Meanwhile, in a medium dry skillet, toast pecans over medium heat for 5 minutes, tossing frequently or until pecans are fragrant and lightly golden. Remove from heat and cool to room temperature.

In a large mixing bowl, combine chopped romaine, sliced pears, dried cranberries, toasted pecans, crumbled feta and cooked sliced chicken.

Combine dressing ingredients in a small mason jar. Cover with lid and shake vigorously to combine. If any separation occurs, shake again just before using. Drizzle balsamic vinaigrette over the salad, adding it to taste then toss to combine.

For the Creamy Chipotle Dressing: Whisk all your dressing ingredients together in a bowl until smooth, taste and adjust lime, salt and pepper as needed. Then store it in the refrigerator while you prepare the rest of your salad.

For the Chopped Salad: Add your lettuce, chicken, black beans, corn, tomatoes, avocado, green onion and cilantro to a large bowl and toss in your desired amount of dressing. Serve immediately with crumbled cotija cheese and crushed tortilla chips sprinkled over each individual bowl.
