Rolled Rib of Beef - Boneless Roast Joint

2.5 kg Boneless Rolled Rib of Beef Joint

90 ml Olive Oil

550 ml Brown Ale (We used Newcastle Brown Ale)

tbsp Mixed Herbs

tbsp Coriander Seeds (Grinded

tbsp Peppercorn (Grinded

Garlic

Onions (chopped in half)

Carrots (chopped in half)

Mix together ale, olive oil and mixed herbs.

Rib of Beef

Add the boneless rib of beef joint and fully coat the whole joint of the beef.

Marinade

Cover and keep in the fridge for at least 2 hours, preferably overnight to marinade

Preheat

1 hr before cooking, remove the boneless beef joint from the fridge and out of the marinade. Preheat the oven at 210°C fan or 450°F

Vegetables

Chop onions, carrots and garlic bulbs and place in the baking tray, this prevents the meat from touching the bottom of the tray. You could use a rack instead?Now pour the brown ale marinade mixture into the baking tray

Grind

Grind coriander and peppercorns with a mortar and pestle or use already ground coriander and peppercorns

Pepper

Sprinkle the crushed coriander and peppercorn over the top of the beef joint.

Sear

Place in the oven at 210°C fan / 230°C / 450°F for 10 min, this will sear the meat.

Roast

After 10 minutes, turn down to 180°C fan / 200°C or 400°F and cook for a further Times shown are for 2500g/2.5kg/5.5lb (instructions for smaller/bigger joints will need time adjusted, see blog post for guidance)Rare - 1hr 20 min Medium Rare - 1hr 50 min (this is how we cooked the one shown in images)Medium - 2hr 15 minWell Done - 2hr 40 min

Rest

Cover roasting tray loosely with foil and allow to rest for at least 20 minutes. This is an important step to allow the juices to settle throughout the joint.

Carve

Once rested, carve into desired size slices. Ready to serve.

We give you the cooking time per kg for how long to boil gammon in a pan, as well as the instant pot/pressure cooker gammon method.A simple honey and mustard glaze is poured over the boiled ham before being oven-roasted giving a delightful sticky, sweet taste.Most popular at Christmas, but we love it all year round for a delicious Sunday Roast dinner and leftover slices of ham are perfect for lunch!Instructions shown for 2kg gammon joint recipe, cooking times for other sizes can be seen in the notes section

Honey Roast Gammon Joint

kg (4 ½ lb) unsmoked Gammon/Ham Joint

500 ml (2 cup) Water

Bay Leaves

cloves

tbsp Honey

tbsp English Mustard

Soak

Soak the gammon joint for a few hours in cold water, we normally do it overnight, or if you don&#39;t have time, rinse under cold water a few times to wash away excess saltiness.

Boil

Place in a deep pan, fat side up, fill pan with enough water to cover the gammon joint.Add bay leaves and bring to the boil. Turn heat down to a simmer and leave to cook uncovered for 1 ½ hours. Top up with more water if gammon is sticking out of the water?

Honey

Mix together the glaze ingredients of honey and mustard.

Netting

After 1 ½ hours, remove from pan and allow to rest, for 10 minutes. Remove netting from the boiled gammon joint.

Skin

Remove the skin/rind away from the gammon leaving a juicy layer of fat

Score

Score the fat layer of the gammon with a sharp knife into diamonds

Cloves

Push cloves into the corners of each diamond

Glaze

Cover a baking tray with foil, before adding gammon joint on top.Pour most of the honey and mustard glaze over the top save a little to reglaze halfway through oven cooking

Oven

Place in preheated oven at 180°c fan / 200°c / 400°f for 15 minutes.

Reglaze

Reglaze by brushing over remaining honey and mustard glaze.

Cook for a final 15 minutes keep an eye on it and remove sooner if the honey glaze begins burning. Cover with loosely with foil and allow to rest for 10 minutes before carving

Carve slices of gammon to your desired thickness.

Serve

Pan Boiled Gammon

Gammon

Drain the water and place the gammon fat side facing up in the pressure cooker potAdd the Bay leaves and pour 500 ml of water over top, it will not cover the gammon that is fine.

Pressure Cooker

Close the lid, pressure valve turned to the closed position.Place the pressure cooker on meat setting for 50 minutes.

Remove

Once the Pressure cooker is finished, allow 10 min natural release.  Carefully remove the meat from Pressure cooker.Follow from step 3 above, to oven roast the pressure cooked gammon

Juices from the roasting tray.

Remove beef from the fridge 1 hour before roasting.After 1 hour remove the packaging, if it has netting or string this should be kept on during cooking.Pat the beef dry with a few pieces of kitchen roll. Preheat oven to 160°C Fan / 180°C / 350°F / Gas Mark 4

Add vegetables and herbs to the roasting tray

Stock

Crumble the stock cube into the oil and stir into a paste

Pour

Pour the stock paste over the beef joint.

Use your hands to rub the stock and oil all over the roasting joint. Top, bottom and sides. Place beef with fat side up on top of the vegetables. So it is not touching the base of the roasting tin.Add some black pepper on top.

Add 500ml of cold water to the roasting tin- Do not pour over the beef.

Cook

Cover the whole tray with kitchen foil. Cook in the preheated oven at 160°C Fan / 180°C / 350°F / Gas Mark 4 For 1 hour 10 minutes.The cooking time stated here is for 1.5 kg cooked medium-rare.See blog post for smaller or larger beef joint cooking times or for rare, medium or well-done roasting time.

Baste

Baste the joint with the juices from the tray halfway through cooking time.

Brown

Remove foil baste again and roast uncovered for the final 10 minutes. (Times may differ depending on how well you want your beef done?)

Remove beef from the tray, cut away any netting or string.

Wrap

Wrap beef loosely with foil. It is important to allow the beef to rest for at least 30 minutes or longer.

Resting

Whilst resting, cook all the other side dishes and gravy.

How to roast 1.5 kg Topside Beef medium-rare

Pour the liquid from the baking tray through a sieve into a saucepan.

Mix cornflour and water together, then whisk the liquid into the saucepan.

Browning

Optional- Add some browning for a richer colour.

Bring to the boil whilst whisking turn heat down to simmer until it thickens.
