175 grams/6 ounces crustless day-old wholemeal bread, torn into pieces

butter,

leeks (150 grams/5½oz trimmed weight), thinly sliced

sage leaves, finely chopped

thyme leaves

free-range eggs, 1 beaten for egg wash

120 grams/4 ounces Parmesan (or alternative vegetarian hard cheese), grated

grams/3½oz manchego (or alternative vegetarian hard cheese), grated

500 grams/1lb 2 ounces pack all-butter puff pastry

tsp plain flour,

grams/1¾oz cranberries

salt and black pepper

I go into auto-Parmesan-shortbread mode whenever I have friends coming for supper, as not only is it perfect with drinks, but it can be made in advance. Indeed you can make the dough, wrap it and then leave it in the fridge for up to three days before slicing an baking, although you will need to let these cheese-scented cylinders sit out on a kitchen surface just long enough to get the fridge-chill off them before slicing.

250 milliliters/9fl oz full-fat milk, plus extra for glazing

tbsp malt extract

tsp dried oregano, poppy seeds or sesame seeds

tbsp finely chopped fresh flatleaf parsley

Turkey kofte with cranberry-tahini dip

turkey mince

tsp ras el hanout

For the dipping sauce

tbsp tahini

tsp cranberry sauce

tsp lemon juice

water

You’ll also need

skewers

Heat the oven to 180°C fan/ gas 6. Put the turkey mince in a bowl with the ground coriander, ground cumin, ras el hanout, salt and chopped mint, coriander and/or parsley. Mix well until evenly combined. Use your hands to roll the mixture into 20 small kofte, then put on a baking tray. Bake for 15 minutes.

Meanwhile, make the dipping sauce. Put the tahini and cranberry sauce in a bowl, then mix well with a rubber spatula until relatively smooth (depending on how smooth your cranberry sauce is). Stir in the freshly squeezed lemon juice and around 40ml water to loosen. Taste and season with salt and pepper, then serve with the warm kofte for dipping.
