We've taken Andrew's delicious recipe and made it suitable for a normal cake tin so you can easily try it at home – no specially commissioned pie moulds required. 

For this recipe you will need a 20cm/8in deep, round springform cake tin and a baking tray large enough to sit the cake tin in.

Pork pie with chicken and apricots

A delightful wintry vegan pie with rich mushrooms and sweet shallots that will make your cold nights a lot warmer. Vegan comfort food at its best. 

Each serving provides 552 kcal, 10g protein, 67g carbohydrate (of which 13g sugars), 22g fat (of which 3g saturates), 6g fibre and 1.3g salt.

Mushroom and ale pie

250 milliliters/9fl oz just-boiled water

tbsp sunflower oil

tbsp redcurrant jelly

tbsp soft light brown sugar

300 grams/10½oz plain flour, plus extra for rolling

100 grams/3½oz sunflower oil

tbsp aquafaba (canned chickpea water)

This delicious veggie pie was made to be shared with family and friends, especially good with vegetarian gravy or served cold with salad. 

Each serving provides 406 kcal, 11g protein, 35g carbohydrates (of which 10g sugars), 23.5g fat (of which 5g saturates), 6g fibre and 0.7g salt.


Mushroom, chestnut and squash filo pie

250 grams/9 ounces chestnut mushrooms, sliced

red onion, sliced

300 grams/10½oz butternut squash (¼ squash), peeled and cut into 2cm/¾in chunks

grams/2½oz curly kale, shredded, tough stalks discarded

150 milliliters/5fl oz vegetable stock,

grams/1¾oz ready-to-eat dried apricots, quartered

chestnuts,

75 grams/2½oz walnuts, roughly broken

½ tsp dried chilli flakes (optional)

85 grams/3 ounces goats’ cheese,

sea salt and black pepper

filo pastry (each about 48x25cm/19x10in)

fresh parsley, to garnish (optional)

Mushroom, squash and goats' cheese pie

Nadiya's chicken, brie and cranberry pithivier is perfect for a cosy lunch. The molten middle and crisp pastry are hard to beat.

This classic steak pie uses stout to make a rich gravy and ready-rolled pastry for ease. For the ultimate pie, the recipe suggests using shortcrust for the base and puff for the lid, but obviously you can just use the puff pastry lid if you prefer.

You will need a 28x23cm/11x9in pie dish that is 4.5cm/1¾in deep.

A game pie always makes a spectacular centrepiece and this handsome example is amazingly straightforward to make – especially if you buy mixed game meat ready-prepared from a good butcher.

The Hairy Bikers' delicious turkey pie uses up your Christmas turkey and leftovers. It's a really creamy pie, made with leeks, tarragon and homemade pastry.


Turkey, ham and stuffing pie

flour

100 milliliters/3½fl oz dry white wine

500 grams/1lb 2 ounces leftover turkey, diced

ham,

leftover stuffing, broken up

black pepper

grams/1¾oz plain flour

400 milliliters/14fl oz turkey or chicken stock

200 milliliters/7fl oz full-fat milk

100 milliliters/3½fl oz single cream

Here’s a warming pie made with chestnuts, mushrooms and marsala wine. You could use white wine, red wine or vermouth if you don’t have any marsala to hand.


Vegetarian chestnut and mushroom pie

350 grams/12 ounces mushrooms (such as chestnut or button mushrooms)

100 milliliters/3½fl oz marsala

200–300 milliliters/7–10fl oz vegetable or chicken stock (amount depending on whether

vacuum-packed chestnuts, left whole

Indulge in this Christmas Chocolate Mint Pie—flaky pie crust, chocolate ganache, and no-bake mint cheesecake filling topped with pieces of Andes thin mints.

Chocolate Mint Pie

CRUST: Blind bake 1 empty 9-inch pie crust until golden brown. (See instructions on how to blind bake pie crust) Allow crust to cool completely. Chill the baked crust in the fridge/freezer to speed things along.

CHOCOLATE GANACHE: Combine ⅔ cup of heavy cream with 6 ounces of semi-sweet chocolate chips inside of a microwave-safe bowl or glass measuring cup. Microwave at half power in 30 second increments, stirring in-between each interval. Repeat until fully melted and smooth. 

Once melted, immediately pour the chocolate onto the bottom of the baked pie crust. Place pie in the fridge or freezer to chill the chocolate until firm enough to top with the next layer.

MINT LAYER: Beat the cream cheese and 1 cup of powdered sugar together with an electric hand mixer inside of a large bowl until smooth. Add the mint extract (start with 1 teaspoon) and 3 drops or so of green food coloring. Mix until well-combined.

Whip the heavy cream and ½ cup of powdered sugar together until stiff peaks, using a stand mixer with the whisk attachment. Add the whipped cream to the mint cream cheese mixture. Use the electric hand mixer to beat the two mixtures together. Mixture should be very thick. (Taste and add more mint extract 1/2 tsp at a time, if desired.)

Spread filling evenly on top of the layer of chilled ganache. Sprinkle chopped pieces of Andes mints on top of the chocolate mint pie.

Gently cover with plastic wrap. Chill the pie in the fridge for 2+ hours or until firm. Alternately chill the pie in the freezer for 30-60 minutes if desired, to speed things along.

These tasty individual tarts are brilliant for a quick but stylish supper. They can be baked straight away or prepared the day before and cooked just before serving. They also work well as canapés if you make them smaller.

I like to offer two different toppings per person. For each of the topping ideas you will need half of the pastry and crème fraîche filling. Serve with a green salad.

80 grams/¾oz strong cheddar cheese, grated

60 grams/2¼oz cooked, peeled chestnuts, roughly chopped

With homemade rough puff pastry and a creamy filling, this pie made from your roast dinner (or Christmas dinner) leftovers will leave everyone speechless. The pastry freezes really well, so you can have it made ahead for almost instant luxury. 
For this recipe you will need a 1 litre/1¾ pint pie dish (roughly 25cm/10cm in diameter).
