Cilantro Lime Shrimp

Melt the butter and oil in a heavy skillet over medium-high heat.

Add the garlic, onion and jalapeno.

Cook, stirring until the onion begins to wilt, approximately 3 minutes.

Add the red pepper flakes and oregano.

Continue cooking until the onion becomes translucent, approximately 3 additional minutes.

Add the tomatoes.

Cook, stirring occasionally, until the tomatoes are soft.

Add the shrimp, zest and lime juice, salt and black pepper.

Cook until the shrimp are just opaque. Be careful not to overcook.

Remove the pan from the heat and stir in the cilantro.

For the shrimp:

In a large bowl, combine shrimp together with seasonings: smoked paprika, chili powder, Italian seasoning, red pepper flakes, and salt. Toss to coat.

Heat a large, high-sided, skillet until hot on medium heat. Add olive oil - it should run easily but not sizzle or burn. Add shrimp without overcrowding (you might have to cook in 2 batches).

Cook shrimp, flipping it once or twice, on medium heat, about 3-4 minutes total, until pink in color.

Add freshly squeezed lime juice and 2/3 of chopped fresh cilantro on low heat. Mix to combine. Adjust seasoning if needed: add more salt, red pepper flakes, lime juice, etc. Add 1 more tablespoon of olive oil, if needed.

When serving, top with the remaining 1/3 of chopped fresh cilantro.

tsp cumin (ground)

cayenne pepper (ground)

garlic powder

cilantro (chopped)

lime (juiced)

Preheat oven to 400F° and place a cooling rack on&nbsp;a&nbsp;baking sheet. &nbsp;Spray the rack with non-stick cooking spray.

In a medium-sized bowl, drizzle raw shrimp with olive oil until they are lightly coated. Add cumin, cayenne, garlic powder, and salt and pepper. Mix until coated.

Lay shrimp on the prepared rack. Bake undisturbed for 8 to 10 minutes. Don't overcook.

Allow shrimp to cool&nbsp;slightly. &nbsp; Place on a serving tray or bowl. Coat with lime juice and fresh cilantro. &nbsp;Serve immediately or cover and refrigerate.
