Healthy Homemade Granola

oats (old fashioned or quick oats

whole wheat flour flour

salt

melted coconut oil

cup honey

vanilla extract

chopped nuts or seed

fruit

unsweetened coconut flakes

chocolate chips (add after it bakes and cools, and probably not more than a cup of them total)

cinnamon

Preheat oven to 225 degrees F. Line a big cookie sheet with parchment and grease lightly.

In a large bowl combine the oats, flour, salt, and cinnamon if using, stir to combine.

In a small bowl whisk together the coconut oil, honey, and vanilla.

Pour the wet ingredients over the dry ingredients. Mix everything together making sure there are no dry spots.

Add any additions you would like and stir to combine.

Spread granola onto the prepared cookie sheet in an even layer. The pan will be nice and full. Bake for 1 hour.

Remove from the oven and let the granola cool, it will be a deep golden color. 

Once the granola has cooled break it into smaller pieces as you see fit (we like some chunky and eat it like a cookie and some we break up small in our bowls for cold cereal). 

Store in an airtight container and keep it in the fridge if you aren&#8217;t going through it very quickly.

This spiced homemade granola combines classic ingredients like cinnamon and raisins with a pinch of cardamom for a unique, Middle-Eastern-inspired twist. The crunchy clusters are delicious served over a bowl of coconut yogurt or with a splash of almond milk and fresh berries. It’s also incredibly moreish when eaten straight out of the jar!

Vegan Cinnamon Granola with Cardamom

jumbo oats

butter

maple syrup

coconut oil

tbsp cinnamon

cardamom

vanilla

tsp salt

pumpkin seeds

tbsp flaked almonds

raisins

Preheat the oven to 170 C and line a baking tray with grease-proof paper.

Add the oats, seeds and nuts to a large bowl.

Melt the coconut oil in a frying pan over a low heat, then keep the heat on low and add the nut butter and maple syrup. Stir consistently until no lumps remain.

Remove the frying pan from the heat and stir in the cinnamon, cardamom, vanilla and sea salt.

Pour the wet mixture into the large bowl and mix until fully combined.

Spread the granola mixture into a very thin layer on the lined tray, using a spatula to press it together so that clumps form.

Bake for 25 minutes, then remove from the oven and stir to ensure even baking. Sprinkle over the raisins, and return to the oven for a further 10 minutes. Allow to cool fully before storing in an airtight container.
