This healthy Mediterranean Cobb Salad, full of veggies, bacon, avocado, and eggs, is a satisfying, high-protein summer salad that you can throw together in just 15 minutes.

Mediterranean Cobb Salad

baby spinach leaves

spring mix lettuce, (or torn romaine lettuce)

(cooked

hard boiled eggs, (diced)

Roma tomatoes, (diced (you can also use cherry tomatoes))

avocado, (peeled, pit removed, and diced)

feta cheese

black olives, (thinly sliced)

yogurt

milk, (or use lemon juice, olive oil,

garlic, (finely minced)

fresh parsley, (finely minced)

salt and fresh ground pepper, (to taste)

In a large salad bowl, combine spinach and lettuce; top with crumbled bacon, diced eggs, tomatoes, avocado, cheese and olives.

In a separate mixing bowl, whisk together the yogurt, milk, garlic, parsley, salt and pepper. Taste the dressing and adjust accordingly. If you need to thin out the dressing, whisk in a bit more milk, or lemon juice, or olive oil.

Drizzle dressing over salad and serve!

Cobb Salad Recipe

avocado oil

chicken breast

salt

garlic powder

onion powder

paprika

black pepper

bacon,

romaine lettuce

cherry tomatoes, halved

avocados, sliced

eggs,

chives

blue cheese crumbles

red wine vinegar

olive oil

dijon mustard

honey

garlic, finely minced

salt and pepper

Make Vinaigrette

Add all of the dressing ingredients to a small mixing bowl. Whisk together until well combined, smooth, and creamy.

Make the Salad

Add the chopped romaine to large mixing bowl. Toss with a few spoonfuls of vinaigrette until lightly dressed. Top the salad with all of the veggies and toppings.

Make the Chicken

Add the chicken breast to a large mixing bowl. Add the salt, pepper, and seasonings. Toss the chicken in the seasoning until evenly coated. Heat a skillet over medium-high heat. Once hot, add the olive oil and then add the chicken breast. Cook for 5-6 minutes per side until the chicken is golden brown and the internal temperature reaches 165 degrees. Let the chicken rest for five minutes before slicing.

Top the salad with the sliced chicken and serve with additional vinaigrette.

To me, this is the perfect Cobb. I love the dressing!

This is now my standard for what a Cobb Salad should be. It has all of the elements of a standard Cobb- boiled eggs, blue cheese, bacon, avocado- but it tastes so much more fresh than other cobb salads. The dressing really brings out the freshness and flavor.
