Baked Cajun Garlic Butter Cod

cod filets (cut in half)

salt and pepper

butter (melted)

olive oil

garlic

Cajun Seasoning

Preheat oven to 400 degrees.  In a 9x13 inch baking dish add the cod and sprinkle with salt and pepper

To make the Cajun Garlic Butter Sauce:  In a small bowl whisk together the melted butter, olive oil, garlic and cajun.  Spread evenly over the fish.

Bake for about 15 minutes or until the fish is opaque and flakes easily.

Baked Cod

This Crispy Oven Baked Cod Recipe is an easy 30-minute dinner. A light and flaky fish topped with a buttery crispy parmesan crust and then oven-baked until golden brown. It&#039;s a delicious take on a batter coated fish and much healthier than fried.

Crispy Parmesan Baked Cod Recipe

Cod fillets (approx. 2 pounds)

butter crackers (ie. Ritz or Club crackers)

Parmesan cheese

butter

lemon juice

Salt & pepper

parsley (optional garnish)

Preheat the oven to 350 degrees F.

Place cod on a greased baking sheet or line with parchment paper

Place the crackers in a zip lock bag and break into into crumbs.  (I use a rolling pin)

In a small bowl, combine the cracker crumbs with parmesan cheese, melted butter, lemon juice and salt &amp; pepper.

Evenly spoon the mixture over top of each fillet.

Bake for approximately 25 minutes.

Remove and top with fresh parsley, if desired.

Brazilian Fish Stew (Moqueca de Peixe)

cod fish (or other firm white fish,

lime juice

Salt and black pepper (to taste)

olive oil (divided)

hot pepper (finely chopped (optional))

tomatoes

green bell pepper

red bell pepper

yellow bell pepper

onion

cilantro (chopped)

parsley (chopped)

coriander

coconut milk can

½ tbsp tomato paste

Place fish in a large glass bowl and season with salt, pepper and lime juice. Set aside in the fridge for about 15 minutes.

In a large Dutch oven pot (or clay pot), add 2 tablespoon of olive oil over medium heat. Add the garlic and hot pepper and cook for about 1 minute.

Spread diced tomatoes on the bottom of the pot.

Then, add bell peppers and sliced onions.

Add the fish fillets and cilantro, parsley and coriander on top. Season with a pinch of salt and pepper again.

Pour the coconut milk and add tomato paste. Bring to a boil over medium-high heat. Then cover, lower the heat to a simmer and cook for 15 minutes, or until the onions are tender and the fish are fully cooked.

Taste and adjust seasonings if desired. Garnish with chopped fresh cilantro and parsley. Serve with rice and salad.

Air fryer or oven Chinese steamed cod fish recipe is simple &amp; delicious. With 6-ingredients, this Chinese fish cod recipe is Paleo, Whole30, low carb, and Gluten-free.

Chinese Steamed Cod Fish with Ginger Scallion Sauce

Cod fish fillets (boneless/skinless at about 1-inch thick)

½ tsp coarse sea salt

tbsp coconut aminos (or 1 tbsp gluten free tamari)

tsp toasted sesame oil

tbsp finely chopped ginger

scallions

Fresno

tbsp avocado oil

Slice the cod fillet into two equal weight pieces, ½ lb each fillet. Pat dry with a paper towel.

Fold one piece of the parchment paper in half and place 1 fish fillet in the center and closer to the seam. Repeat with the other half of the fish.

Season each filet with ¼ tsp coarse salt, 1 tbsp coconut aminos, and 1 tsp toasted sesame oil.

To make a paper pouch:  Fold the paper over so the two ends meet, enclosing the food. Beginning at either end of the center crease, make small, overlapping diagonal folds around the filling, pleating it all around to make a semicircular airtight package that looks like a half-moon shape calzone. Seal the packet tight. You might need to twist and fold the end tip to secure the envelope.

If use air fryer: place 1 packet inside of the basket. Lightly press the paper pouch down so it won’t get burnt.  Air fry at 300F for 15 minutes or until the fish is soft and flaky. Test with a skewer, if it goes in easily, the fish is done. If not, air fry for 5 additional minutes. If your fish is thinner than 1-inch, reduce the cook time by 5 minutes.

If use oven: Place both packets over a large sheet pan. Bake at 400F for 15-20 minutes or until the fish is buttery soft. The exact bake time will depend on the thickness of the fish fillets and type of fish.

In the meantime, finely chop ginger, scallions, and chili peppers. Divide them into 2 equal piles.

When the fish is about 5 minutes away from ready, in a heavy bottom saucepan, heat up the avocado oil over medium-low heat for about 5 minutes. Cover the saucepan with a lid but leave a small gap open to allow air to come-in.

Carefully remove the fish pouch. Let cool for 3 minutes before using a kitchen scissors to cut open the packet (be careful of the hot steam). Add the aromatics - ginger, scallions, and chilies - on top of the fillets and season with a pinch of salt.

Carefully pour half amount of the hot oil over each fillet and the aromatics on top. Serve hot and immediately.

This Italian Cod Recipe with tomatoes is ready in just 30 minutes. Simmer codfish fillets in a tomato sauce for an easy and delicious weeknight meal.

Italian Cod Recipe with Tomato Sauce

onion (chopped)

shallots (chopped)

red pepper flakes (optional)

white wine

San Marzano, whole canned tomatoes (796 mL, lightly hand crushed)

water (to rinse out the inside of the empty can)

paprika (dried)

salt and pepper according

parsley

Heat the olive oil in a heavy-bottomed saucepan over medium-high heat.

Reduce the heat to medium. Add the chopped onions and shallots. Sauté until softened (4-5 minutes).

Add the chopped garlic and sauté for 30 seconds.

OPTIONAL: Add a pinch of red pepper flakes.

Add the white wine followed by the crushed tomatoes.

Increase the heat to medium-high and bring to a simmer. At this point, taste your tomato sauce. Adjust for salt and pepper. 

Reduce the heat to medium, and allow it to simmer slowly for 20 minutes. Stir occasionally.

While the sauce is simmering, rinse 4 cod fillets (about 2 pounds or 900 grams total) quickly under cold water and pat dry. Season with paprika (about ½ teaspoon ) and salt and pepper. 

After the sauce has been simmering for about 20 minutes, place the fish in the sauce, cover and cook for about 7-10 minutes or until fish flakes easily and turns opaque in color (total time depends on the thickness of the fillet).

Serve immediately.

OPTIONAL: Garnish with freshly chopped Italian parsley.
