Split Pea Soup

olive oil

celery (¼-inch dice)

carrots (¼-inch dice)

Heat a dutch oven or large, heavy-bottomed pot over medium heat. Add the olive oil. Once hot, add the onions, celery, carrots, salt, and pepper. Saute until the vegetables soften and lightly brown, about 8 to 10 minutes.

Add the thyme, bay leaf, and minced garlic. Saute for 30-seconds until fragrant.

Add the split peas and saute for 1 minute. Add the pork to the center of the pot. Add the water and chicken stock, stir, then bring to a boil.

Reduce the heat to medium-low, cover, and simmer. Stir occasionally so that the peas do not stick to the bottom of the pot, adjusting the heat as needed to maintain a gentle simmer. Flip the ham over 1 hour after cooking. Cook until the peas fall apart and lightly thicken the soup. The meat should pull off the bone and the vegetables are tender, about 2 hours.

Remove the bay leaf and discard. Transfer the ham to a cutting board. Remove the skin and discard. Pull the meat off the bone and dice it into small pieces.

For a smooth consistency, use an immersion blender to puree the soup. Alternatively, puree the soup in batches using a countertop blender. Leave a few cups of peas intact for a more rustic texture if desired.

Season the soup to taste with salt and pepper. Add the pork back to the soup and stir to combine.

Divide among bowls to serve and garnish with parsley.

In a large pot, add olive oil and butter and let melt over medium heat. Add chopped potato, chopped leek and sliced garlic.

Season with salt, pepper, and marjoram.

Stir and let sautée for about 7 minutes. Add the chopped broccoli, stir for 1-2 more minutes and then add in the stock and water.

Bring to a bubble, add in a bay leaf, then reduce to low and let simmer (partially covered) for about 15 minutes.

Cube up your bread, hit with olive oil and salt and toast in the oven at 400 degrees for about 10 min (or until golden).

Toss in a handful of chopped kale to the soup and let that wilt. Option to add in a squeeze of lemon juice.

Ladle into bowls and top with croutons.

This soup was so good! I did a sweet potato instead and added some chick peas! Absolutely delicious, cheap, and easy (minus peeling the garlic... I am sure there are better ways to do it than what I tried to do LOL) and will be making it again! Thank you so much! &lt;3

tbsp white miso paste

Sourdough bread (roughly cut to fit in your bowl + toasted)

In a large pot, melt down the butter with the olive oil. Add the sliced onions, along with some salt, and sauté on medium-low heat for about 20 minutes until golden brown and caramelized. Optional: add in some minced garlic when the onions are almost done caramelizing.

Deglaze with the white wine, stirring to scrape up all the browned bits.

Add the bone broth, miso paste, a few sprigs of fresh thyme, and a bay leaf. Simmer for 15 minutes.

Remove the herbs and then ladle the soup into oven safe bowls or crocks.

Toast up some sourdough, then brush lightly with olive oil. Top each bowl with a piece of the toasted bread and plenty of grated cheese.

Place the soups under the broiler until golden and bubbly. Garnish with some extra fresh thyme!
