Sausage and onion hash with a couple of eggs is definitely worth getting out of bed for.

The Ulster fry-up from Northern Ireland will make everything all right again. Along with all the carbs you ever need in potato pancakes and soda bread, there's fried eggs, bacon, sausages and black pudding.

The Ulster fry

450 grams/1lb plain white flour

tsp bicarbonate of soda

tsp cream of tartar

tsp sea salt

tsp sugar

300 milliliters/10½fl oz buttermilk

250-300 grams/9-10½oz button mushrooms, cleaned

A bed of crisp grated potatoes is topped with eggs, cherry tomatoes and mushrooms and then baked in the oven for an easy breakfast or brunch.

Melt 50g butter in a large saucepan (about 20cm across), add 1 finely chopped medium onion and cook gently over a medium heat for 5 minutes, until softened but not browned.

Stir in 3 split cardamom pods, ¼ tsp turmeric, 1 small cinnamon stick and 2 bay leaves, then cook for 1 minute.

Tip in 450g basmati rice and stir until it is all well coated in the spicy butter.

Pour in 1 litre chicken or fish stock, add ½ teaspoon salt and bring to the boil, stir once to release any rice from the bottom of the pan. Cover with a close-fitting lid, reduce the heat to low and leave to cook very gently for 12 minutes.

Meanwhile, bring some water to the boil in a large shallow pan. Add 750g un-dyed smoked haddock fillet and simmer for 4 minutes, until the fish is just cooked. Lift it out onto a plate and leave until cool enough to handle.

Flake the fish, discarding any skin and bones. Drain the eggs, cool slightly, then peel and chop.

Uncover the rice and remove the bay leaves, cinnamon stick and cardamom pods if you wish to. Gently fork in the fish and the chopped eggs, cover again and return to the heat for 2-3 minutes, or until the fish has heated through.

Gently stir in almost all the 3 tbsp chopped fresh parsley, and season with a little salt and black pepper to taste. Serve scattered with the remaining parsley and garnished with 1 lemon, cut into wedges.

This delicious oats with savoury jollof flavours will kick start your day. It is also a perfect healthy meal for lunch or dinner.

Heat the oil in a saucepan.

Cook the onions in the oil until translucent, then pour in the mild curry powder, turmeric, thyme and pepper flakes.

Stir continuously for about 30 secs, then add the chopped tomatoes.

Continue to stir for around three minutes, then add enough water to cook the oats (based on cooking instructions on the rolled oats packaging). Cover the pan and allow the liquid to boil over for 2 mins.

Pour in the oats, add some salt to taste and allow to cook for between 5-10 mins until the oats cook through.

Stir in the spinach and remove from heat.

Guess what? You don’t have to give up your bacon and eggs when you’re dieting – just slightly change the way you cook it. Choose good lean back bacon and partner it with poached eggs for protein and fresh nutritious veg.

This British shakshuka is fun! It’s the full English – sausages, bacon, mushrooms, tomatoes, beans and eggs – all cooked in one pan. And if you like a bit of brown sauce with your brekkie, it’s used to glaze the sausages and give a subtle tang to the tomato sauce.

Most British recipes for Boston baked beans just use a piece of pork belly, but we think it needs some salted or smoked meat to counteract the sweetness, so we include bacon or pancetta. We’ve based the recipe on one our mothers used to make – when they weren’t opening a tin. The alcohol isn’t authentic, but adds flavour (we’ve tried all three). 

This takes a long time to cook, but once it’s in the oven there’s nothing more to do. It makes quite a large amount and can be reheated the next day for your breakfast, brunch, lunch or supper. We think it makes the most wonderful cooked breakfast or side dish with sausages.
