Corn Fritters with cornmeal are a great southern side dish for summer barbecues, as well as any gathering. The fritters are easy to make using corn on the cob or corn right out of the can. This simple recipe only uses five ingredients for a quick and easy addition to a meal that everyone will love.

Corn Fritters (+Video)

all-purpose flour

parmesan cheese

salt and pepper

Begin heating the vegetable oil in a frying...

Begin heating the vegetable oil in a frying pan on medium heat.

Add the corn, cornmeal, flour, egg, parmesan cheese,...

Add the corn, cornmeal, flour, egg, parmesan cheese, salt, and pepper to a medium-sized bowl.

Mix together and press into a ball in...

Mix together and press into a ball in your hand to create a fritter.

Add to the hot vegetable oil and press...

Add to the hot vegetable oil and press down easily with your spoon or spatula to make a patty.

Fry on each side for five to six...

Fry on each side for five to six minutes or until the fritters are golden brown and crispy on each side.

Remove from skillet and place on a paper...

Remove from skillet and place on a paper town to drain the oil.

Perfectly crispy on the outside, light and fluffy on the inside! These corn fritters are the perfect side dish for a savory dinner like fried chicken.

Quick and Crispy Corn Fritters

flour

baking powder

sugar

salt

pepper

milk

eggs (beaten)

butter

corn kernels (fresh

Creole Seasoning (optional)

In a large bowl whisk together the flour, baking powder, sugar, salt, and pepper.

Add the milk, beaten eggs, butter and corn to the bowl (and Creole seasoning if using) and stir just until mixed.

Heat about 1/4 inch of vegetable oil in a large skillet. Once the oil is real hot spoon 1/4 cup batter (per fritter) into the oil. Do not crowd the skillet. Fry each side until golden brown and crispy.

Remove to paper towels to drain. For best results serve promptly.

Celebrate the bounty of summer with fresh Corn Fritters!  A flavorful recipe that works as a tasty appetizer, hearty side dish or as a vegetarian main course. Serve with creamy Cilantro Sauce!

 Corn Fritters Recipe

eggs

tsp kosher salt

tsp smoked paprika

tsp sugar

tablespoon coriander whole seeds

milk, nut milk

lime zest

lime juice

all-purpose flour flour

tsp baking powder

red bell pepper, finely diced (optional or add more corn)

green onions, chopped

cilantro, chopped- or sub basil, or flat-leaf parsely

cheddar cheese

olive oil

sour cream

mayo

packed cilantro, chopped

garlic clove, finely minced

lime juice, more to taste

tsp cumin

coriander

Preheat oven to 375F

Prep the corn. Lay the corn flat on the counter, and cut the kernels off. Set aside.

Make the corn fritter batter. In a large bowl, whisk the eggs, milk, lime zest and lime juice, spices, salt, pepper and sugar until smooth. Combine the flour and baking powder in a small bowl, then whisk this into the egg mixture, whisking until very smooth.

 Stir in the fresh corn, cheese, scallions, cilantro, bell pepper, and optional jalapeno.  You should have a thick batter that mounds on a spoon. If it feels overly thick, add a splash of milk, or overly runny, add a tablespoon of flour.  If unsure about consistency, cook one &#8220;tester&#8221; fritter first.

Cook Fritters

Heat olive oil in a large nonstick pan or cast iron skillet over medium heat.  Place 5 rounded spoonfuls of fritter batter (2-inch round fritters) carefully into the skillet (scooting in any stray kernels) and cook for about 3 minutes on each side until golden and holding together. Working in batches, move the fritters to the wire rack in the oven to cook all the way through. Don&#8217;t worry if they are still a little doughy in the middle; they will continue to cook in the oven. Bake until puffed, about 10-15  minutes.

Cilantro Dipping Sauce 

In a food processor, pulse cilantro cream ingredients until blend until combined.(Alternatively, feel free to mix in a bowl)

Serve the fritters with the Cilantro cream, garnish with cilantro, lime wedges and your favorite Hot sauce.

These Corn Fritters are fried dough filled with pockets of sweet corn chunks. Every bite is a perfect balance of sweet corn and savory fried dough, a treat that&#39;s hard to resist!

Corn Fritters Recipe

tsp salt

Tbsp white sugar (plus another 1/4 tsp)

egg (lightly beaten)

Tbsp shortening (melted)

(12 oz) can whole kernel corn (drained)

vegetable oil (for frying)

Add the flour, baking powder, salt, and sugar to a medium bowl; whisk together to combine.

In a separate bowl, beat together the egg, milk, and melted shortening. Pour this into the flour mixture and stir.

Add the drained corn kernels to the bowl and mix together. Let the corn fritter batter sit for 30 minutes.

Add the oil to a large, heavy pot or deep fryer. Bring the oil to a temperature of 365°F (185°C).

Graba spoon and drop the batter into the oil by the spoonful. You should be able toget about 12 spoonfuls. Fry until golden brown, turning as needed so the sidesare all cooked as well.

Allow the fritters to drain on a paper towel-lined plate, then serve and enjoy!

Sweet, savory, crispy, and crunchy Corn Fritters are a favorite appetizer or side dish recipe for a reason!  Make these golden cakes with leftover corn, corn on the cob, or frozen or canned corn. They’re ready in less than 20 minutes and always receive rave reviews!

all-purpose flour ((120 grams))

black pepper

corn kernels (fresh or frozen (thawed) (428 grams))

onion

eggs (lightly beaten)

milk ((120 milliliters))

Vegetable oil

Sour cream

In a large bowl, whisk together the flour, sugar, baking powder, salt, and pepper. Stir in the corn, green onion, eggs, and milk until well combined.

Heat enough oil to coat the bottom of a large skillet over medium heat. Spoon the batter into the skillet in ¼ cup mounds, spacing them at least 2 inches apart (you’ll need to cook in batches). Using the back of a spoon, press each mound to flatten it into a disc about ½ inch thick.

Fry fritters until golden brown and crispy, 2 to 3 minutes on each side. Drain fritters on paper towels. Repeat with the remaining batter, adding more oil to the skillet as needed.

Serve fritters warm with sour cream and green onions.
