This creamy Cornbread Casserole is a sweet and savory side dish that you won't be able to resist! It's super easy to make and perfect for the holidays.

Cornbread Casserole

(230 grams) sour cream

(112 grams) unsalted butter, melted

tbsp (26 grams) sugar

tsp salt

cornbread mix (I use Jiffy)

corn

creamed corn

Preheat oven to 350°F (180°C). Spray a 9-inch square baking dish with nonstick spray. Set aside.

In a large bowl, combine the eggs, sour cream, butter, sugar and salt and whisk until well combined.

Add the cornbread mix, whole corn kernels and creamed corn and stir together until combined.

Pour the mixture into the prepared baking dish and bake for 55-60 minutes, or until the top and edges are lightly brown. If it seems a little jiggly in the middle, that’s fine.

Remove casserole from oven and serve warm.

It was the easiest dish I have ever made. Delicious is the only word to describe it. I am a made from scratch cook who don't usually try semi home made dishes. This is a winner to remaine in my holiday recipe file.

I’ve used this recipe now 2 years, and love it. The whole family and anyone that has come over as well that ate this.
I did make 1 mistake I have one pan that is weird. It says it’s 9x13 but it’s a bit bigger I think. It dried that one out a bit. I’m assuming cooking time. I had sharp cheese to mine. Not a lot just enough to swirl in and get that taste.

I love cornbread casserole!! My cousin brings it every year to our family Christmas 🎄. My kids also love it. So I figured I'd look up the recipe and make it for Christmas dinner..I only have the whole kernel corn (sweet)..I didn't know that i.was going to need cream corn too. So I'm going to have to try adding a little extra to each of the other ingredients and hopefully it will help keep my casserole moist. Any suggestions on how much extra to add of a different ingredient to make up for not having cream corn?? Thank you for sharing your recipe 😊, my mom is going to be so excited that I found it!!

So delicious! This is so easy and so good. I’ll be making this often!

This is fantastic! Any recommendations on how to turn this into a freezer side and cook from frozen? Thanks!

This was absolutely delicious. I picked this recipe from many to add to our Christmas dinner, as it goes so well with ham. So glad I did!! It was a hit. I only had 8 x 8 pans so I baked on 325 for a bit longer and it came out just perfect.

I will be making your Best Chili Recipe for the Superbowl this weekend and want to serve Cornbread with it. Is this Cornbread Casserole like a cake/bread or more like a corn pudding?

I love all your recipes and these sound delicious.

Last weekend I made your Beef Stew and it was fantastic!

Perfect! I followed the directions included the optional regular corn and cup of shredded cheese. Texture was light and tasted as good if not better than one with Jiffy mix. Will def make again.

This was so delicious. My family and friends loved it! Thank you for the recipe.

Oh my goodness!!!!!! This is so delicious!!! I added bacon, because everything is just better with bacon and jalapeños. I also used a mix of shredded cheddar and some shredded Kraft Italian 5 cheese blend. It makes a very large casserole so I shared with my neighbor who loves spicy food as much as we do and she gave it 10 stars!!! Thank you Holly for another wonderful recipe!!!

Quick and easy side dish!! Delicious. I added thin sliced jalapenos across the top. Yum!

This is so delicious! I use a canned corn and frozen creamed corn in mine!

Yum!! Posting a serving suggestion for those who may want a one dish meal. Husband and I "wing" our cooking a lot seems like. When we don't have a particular dish in mind we often brown a pound of hamburger and see what in turns into! In this case I was preparing this Ultimate Cornbread Casserole. A pound of hamburger and a pound of ground turkey were waiting.... Lightbulb went on! We browned the meat and added fajita seasoning. It's what we had. Could easily have been taco seasoning, or left plain. When the meat was done we put it in the bottom of the 13x9 pan and spread it out evenly. Next we put the prepared Ultimate Cornbread Casserole mixture on top and spread it out evenly. Added the shredded cheddar on top as recipe directs (forgot to reserve bacon/jalapenos) Same baking time and temp. Delicious! I will definitely make the cornbread casserole "stand alone" as well. Thank you!

I really enjoyed this recipe. It was my first time making cornbread casserole and it turned out great! I didn't have fresh jalapeños so I did use jarred. I am sure it is slightly better with fresh, but jarred work in this recipe too. I read through many of the reviews before making this recipe. It was neither dry nor flavorless. 10/10 would make again. I want to try it with Bell peppers next time in addition to the corn and jalapeños.

I have this in the oven right now to serve as a side dish to chili for my mid week Bible study group. It smells so delicious! I like that the batter is thick so I can easily make one side with jalapeños and one side without…for those that don’t like the heat!

I made this for not one, but 2 gatherings on the same day (after church lunch with our Sunday School class, and also with our community group later that evening). It was well received by both groups - AND, since the community group was smaller, we had leftovers to take home for the next day. Easy and delicious (I added healthy amounts of bacon and cheese - more than on the optional items recommendation...)

Delicious!! Very easy to start at noon and have ready for dinner at night. Bravo!!

Wonderful side dish for our Thanksgiving dinner! This is going to be a new family tradition. 💗
