Creamy Cheesy Cornbread is a delicious cross between cornbread and corn casserole that you can eat with your hands! It's the perfect side dish for a barbeque!

Creamy Cheesy Cornbread

Challenge Cream Cheese, room temperature

milk

eggs

salt

(15 ounce) can corn, drained

(15 ounce) can creamed corn

(8.5 ounce) box corn bread mix

cheddar cheese

Preheat oven to 375°F. Line a 9&#215;13 baking dish with foil and coat with nonstick spray. Set aside.

In the bowl of your stand mixer fitted with the paddle attachment mix cream cheese until smooth on medium speed. Add in the milk, eggs, and seasoned salt and continue mixing until combined, scraping the sides of the bowl as necessary.

Turn mixer to low and mix in the corn and creamed corn. Add the in the corn bread mix and mix until combined. Stir in 1 cup of the grated cheese.

Pour batter into the prepared pan and sprinkle with remaining cheese.

Bake for 20-25 minutes, or until center is set.

Allow the cornbread to cool completely and cut into pieces.

Cornbread Casserole

(230 grams) sour cream

(112 grams) unsalted butter, melted

tbsp (26 grams) sugar

tsp salt

cornbread mix (I use Jiffy)

Preheat oven to 350°F (180°C). Spray a 9-inch square baking dish with nonstick spray. Set aside.

In a large bowl, combine the eggs, sour cream, butter, sugar and salt and whisk until well combined. 

Add the cornbread mix, whole corn kernels and creamed corn and stir together until combined. 

Pour the mixture into the prepared baking dish and bake for 55-60 minutes, or until the top and edges are lightly brown. If it seems a little jiggly in the middle, that&#8217;s fine.

Remove casserole from oven and serve warm.

It was the easiest dish I have ever made.  Delicious is the only word to describe it. I am a made from scratch cook who don't usually try semi home made dishes. This is a winner to remaine in my holiday recipe file.

I’ve used this recipe now 2 years, and love it. The whole family and anyone that has come over as well that ate this. 
I did make 1 mistake I have one pan that is weird. It says it’s 9x13 but it’s a bit bigger I think.  It dried that one out a bit. I’m assuming cooking time. I had sharp cheese to mine. Not a lot just enough to swirl in and get that taste. 

I love cornbread casserole!! My cousin brings it every year to our family Christmas 🎄. My kids also love it. So I figured I'd look up the recipe and make it for Christmas dinner..I only have the whole kernel corn (sweet)..I didn't know that i.was going to need cream corn too. So I'm going to have to try adding a little extra to each of the other ingredients and hopefully it will help keep my casserole moist. Any suggestions on how much extra to add of a different ingredient to make up for not having cream corn?? Thank you for sharing your recipe 😊, my mom is going to be so excited that I found it!!

This was absolutely delicious.  I picked this recipe from many to add to our Christmas dinner, as it goes so well with ham.  So glad I did!!  It was a hit. I only had 8 x 8 pans so I baked on 325 for a bit longer and it came out just perfect.

Add the two boxes of Jiffy Corn Muffin...

Add the two boxes of Jiffy Corn Muffin Mix, eggs, and 2/3 cup of milk to another large bowl. Mix everything together and spread into the casserole dish.

Add the diced onion, vegetables, cream of chicken...

Add the diced onion, vegetables, cream of chicken soup, salt and pepper, and half of the shredded cheese to the bowl with the cooked ground beef. Mix everything together well.

Pour the 1/4 cup milk into the bowl...

Pour the 1/4 cup milk into the bowl and mix.

Spread over the Jiffy Corn Muffin Mix and...

Spread over the Jiffy Corn Muffin Mix and top with the remaining cheddar cheese.

Bake for 30-minutes.

Ultimate Cornbread Casserole

With oven rack in the center position, preheat oven to 350°F. Generously grease a 9- by 13-inch baking dish and set aside.

In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar. Add the corn, sour cream, and milk and stir to combine. Blend in the butter, black pepper, most of the bacon, most of the jalapeños, and 1 cup of the cheese until just combined.

Pour the mixture into the prepared baking dish. Smooth the top and sprinkle with the remaining bacon, jalapeños, and 1/2 cup cheese. Bake for 40 to 45 minutes or until the center is set and the top is golden brown.

Perfect! I followed the directions included the optional regular corn and cup of shredded cheese. Texture was light and tasted as good if not better than one with Jiffy mix. Will def make again.

Oh my goodness!!!!!! This is so delicious!!! I added bacon, because everything is just better with bacon and jalapeños.  I also used a mix of shredded cheddar and some shredded Kraft Italian 5 cheese blend.  It makes a very large casserole so I shared with my neighbor who loves spicy food as much as we do and she gave it 10 stars!!! Thank you Holly for another wonderful recipe!!!
