My 5 ingredient cottage cheese brownies are fudgy, chocolatey and delicious. This high protein brownie recipe requires only 5 minutes of prep. Cook it in the air fryer or in the oven!

Cottage Cheese Brownies

cottage cheese (160 grams)

egg (large)

cocoa powder (42 grams, unsweetened)

powdered sweetener (80 grams)

peanut butter (32 grams, smooth)

sea salt (optional)

Put all ingredients into a food processor or large mixing bowl. Blend until smooth. Stop in between to scrape down the sides with a spatula as to incorporate everything into a smooth, thick batter.

Grease a 5x5 inch container and line with parchment paper.

Fill the brownie batter into the container and smooth the top.

Brownie Batter

Preheat the air fryer to 160C / 320F.

Add the dish with the brownie batter to the air fryer basket and air fry for 19-22 minutes. I baked mine for 21 minutes. ***see recipe notes

Air Fryer Method

Preheat the oven to 180C / 350F.

Bake the brownies on the middle shelf for 24-26 minutes. ***see recipe notes

Oven Method

Let the brownies cool to room temperature, then chill them in the fridge for 30 minutes. This allows them to set fully. Only then, cut and serve.

I just made these delicious brownies today, July 21, 2025. They’re so moist and flavourful, even my husband loved them. I’m going to double the recipe and make a brownie birthday cake for my 8 year old granddaughter when she visits this weekend. We’re on the lake in Canada. Very tasty. I'm off sugar and carbs for Cancer and these hit the spot for my sweet-tooth. Used Monkfruit sweetner and added some dark chocolate sugar free chocolate chips. I also make them in cupcake tins for easy 1 piece serving sizes.

These were so easy to make and a lovely fudgy texture. I used a high protein cottage cheese (Piatnica) and that worked well. I made them in my air fryer and accidentally had the temp too high (190C instead of 160C ‍♀️) so the top caught and formed a ‘skin’ but I was able to peel it off …. user error by me so I’ll lower the temp and cover with foil next time as I definitely making these again. These Cottage Cheese Brownies are easy, high-protein brownies made with 4 ingredients, no eggs, no refined sugar needed. They are fudgy, low-sugar, and low-calorie snack, perfect if you prioritize proteins in your diet.

4-Ingredient Cottage Cheese Brownies

Cottage Cheese ((note 1))

Peanut Butter ((note 2))

Unsweetened Cocoa Powder ((note 3))

Maple Syrup ((note 4))

Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper, and lightly oil the paper. Set aside.

In a food processor, add the 4 ingredients and blend until smooth with no pieces of cottage cheese visible. I stop the food processor a few times, scrape down the sides of the bowl with a rubber spatula, and blend again until nicely smooth and thick.

Pour the batter into the prepared pan - it&#39;s very sticky, that&#39;s normal. Oil the back of a tablespoon to press the dough flat. If you like, sprinkle a few chocolate chips on top.

Bake the brownies for 18-20 minutes at 350°F (180°C) until the top is set and dry.

Let them cool down for 10 minutes in the pan, then 1 hour on a cooling rack before slicing into 6 squares.

These cottage cheese brownies are so fudgy and rich. They are also high protein and healthier than regular brownies. Just 4 ingredients and no flour, refined sugar, butter or oil.

4 Ingredient Healthier Cottage Cheese Brownies

(339 grams) high protein 4% cottage cheese (see note)

eggs

honey (can substitute with 1 cup + 2 tbsp coconut sugar)

(72 grams) unsweetened Dutch process cocoa powder

Preheat the oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.

Add cottage cheese, eggs and honey to a blender and blend until completely smooth, scraping down the sides of the machine with a spatula as needed. Make sure there are no chunks of cottage cheese remaining. Add in the cocoa powder and blend until the cocoa powder is fully incorporated and the batter is uniform in color.

Transfer the batter to the prepared baking pan, spreading it evenly with a spatula. Bake in the preheated oven for 40 to 45 minutes, or until the center of the brownies are set and toothpick inserted comes out mostly clean. If you make this with the coconut sugar, the brownies will initially puff up a lot during baking and also crack slightly, but will sink back down once the brownies cool. If you make the brownies with honey, the brownies will get more moist on the surface as they cool.

For best results, wait several hours to cut and serve the brownies. If possible, wait for them to fully rest overnight in the fridge before eating. Waiting a few hours or overnight will allow the brownies to become sweeter. The brownies are more tangy if eaten soon after they are baked. You can also add frosting before serving the brownies. Store leftover brownies in an airtight container in the fridge.
