High-Protein Cottage Cheese Pasta Sauce

oz (300 g) high-protein pasta (e.g., chickpea or lentil pasta)

(400 g) cottage cheese

(250 g) tomato sauce

basil leaves

olive oil

onion,

garlic cloves, finely chopped

¾ lb (350 g) turkey sausage, cut into bite-sized pieces

(30 g) Parmesan cheese, grated

parsley,

Salt and black pepper,

Cook Pasta

Boil salted water in a large pot. Cook high-protein pasta according to the package instructions until al dente. Reserve 1-2 cups of pasta water and drain the pasta.

Prepare Sauce

Blend cottage cheese, tomato sauce, and fresh basil in a blender until smooth. Set aside.

Sauté Aromatics and Sausage

Heat olive oil in a skillet over medium heat. Sauté onion and garlic for 2-3 minutes until softened. Add turkey sausage and cook for 5-6 minutes until browned.

Combine Sauce and Pasta

Add the blended sauce to the skillet with the sausage. Stir gently, heating through without boiling to avoid curdling. Toss the cooked pasta in the sauce. Thin with reserved pasta water if needed.

Finish and Serve

Mix in grated Parmesan cheese and chopped parsley. Season with salt and pepper to taste. Serve hot with additional Parmesan and parsley as garnish.

High Protein Pasta Sauce

Teaspoons Minced Garlic

14.5 Ounces Diced Tomatoes (No Salt Added/Fire Roasted)

Lemon

¾ Cup Cottage Cheese

½ Cup Bone Broth

Take out a stovetop pan and turn your burner on Medium Heat

Once it heats up add in your Oil and Minced Garlic

Let that cook for 1-2 minutes

Add in your Diced Tomatoes and Lemon Juice

Keep everything moving as it cooks until most of your juices have cleared (7-10 minutes)

Remove your pan from the heat to cool for a few minutes

Take out a blender or food processor and add that mix into it

Add in your Cottage Cheese and Broth

Blend everything together until smooth

Made it and it was so nice and flavourful. The consistency was thick, just how I like it. Next time I won't add lemon juice to see if I prefer it that way. Thanks a lot, looking forward to some kind of burrito/wrap sauce :D

I want to average this between a 3 star (me) and a 5 star (my wife).  My wife (half Carribean) loved it, was so full, liked the tang and enjoyed the smell while I was cooking it.  I admit I struggled with the consistency.   I was pretty sure to have most of the juices evaporate, but. . .maybe on retrospect I could have waited longer.  Some people like a thin pasta sauce tho, but I'm half Italian, my father grew our own tomatoes in a garden and we canned/preserved pasta sauce every August, so it's a high bar to clear.   But it's so delightful to have some pasta and not be totally carbing out.  Thank you!  I'm gonna play with this.

Instant knife cut noodles in a creamy blended cottage cheese and kimchi sauce topped with a fried egg.

Creamy Kimchi Noodles

Eggs

Green Onions (thinly sliced)

Toasted Sesame Seeds

(170 grams) Low Fat Cottage Cheese

(170 grams) Kimchi

Tablespoons Water

Sauce

Bring water a boil for the noodles.

Blend the cottage cheese, kimchi, sauce packets, and 2 tablespoons of water together until smooth.

Cook the noodles for 3 minutes. Reserve about 1 cup of water from the noodles and drain the rest.

Add the noodles back to the pot over low heat with the blended sauce and about half the sliced green onion. Use the reserved water as needed to bring the sauce and noodles together. (I used about 1/3 cup.) Salt and pepper to taste and keep warm over low heat while you prepare the eggs.

Use cooking spray or a teaspoon of olive oil to fry two eggs in a separate pan.

Plate the noodles and top with the fried eggs, remaining sliced green onion, and toasted sesame seeds. (I like adding a little chili oil, too.)

Silky smooth gochujang noodles with crispy sesame ground beef crumbles.

Creamy Gochujang Noodles

packs Trader Joe's Knife Cut Noodles (see notes from substitutions)

Low Fat Cottage Cheese

(84 grams) Gochujang

Water

Ground Beef (96% lean)

Sauce Packets

Tablespoons Maple Syrup

Tablespoon Coconut Aminos or Low Sodium Soy Sauce

Tablespoon Rice Vinegar

Green Onions (thinly sliced, green and white parts separated)

Bring a large pot of water to a boil for the noodles.

Blend the cottage cheese, gochujang, and water together until smooth. Set aside.

Mix the sauce packets, maple syrup, coconut aminos, rice vinegar, and white parts of the sliced green onions together. Set aside.

Brown and fully cook the ground beef in a pan over medium-high heat. Add the sauce to the cooked ground beef and stir everything together. Cook for another 2-3 untouched until the sauce thickens and begins to caramelize on the bottom. (Start cooking the noodles after adding the sauce to the cooked beef.)

Cook the noodles for 4 minutes. Reserve about ½ cup of the water and set aside before draining the rest. Add the drained noodles to the pot with the blended gochujang sauce. Toss together, using the reserved pasta water as needed to bring everything together.

Top with the crispy beef, remaining sliced green onion, and toasted sesame seeds.

This was extremely easy and tasty, but the cottage cheese in my sauce clumped together, was I supposed to heat it before adding it to the noodles?

Super easy to make! I used the TJ's noodles and just followed the recipe other than adding Sriracha. The cottage cheese kind of muted the gochujang flavor imo so the Sriracha was needed. I would add peas or broccoli next time. Will def make again and I'm going to try freezing a couple servings of the beef and sauce 🤞

This recipe was absolute fire! It was easy, filling and so flavorful. Full disclosure: I'm a vegetarian. I made this with crumbled tofu as the protein. This is what I love about your recipes: even as a vegetarian I'm able to modify with an appropriate protein source and love it.

My picky kids loved this! What a nice surprise. Next time, I’ll double the meat and the sauce. I used half of the Gochujang paste. Would love to find noodles that are higher fiber, lower carb.
