Sweet Potato and Couscous Chicken Soup

Fragrant, tender chicken with zesty lemon couscous makes a healthy Moroccan meal in minutes

Moroccan chicken with lemon couscous

couscous

lemon

Put the couscous, half the lemon zest and half the juice in a medium bowl and pour over 400ml boiling water. Cover with cling film and leave to soak while you cook the chicken.

Heat oil in a large non-stick frying pan, drizzle honey and some seasoning over the chicken and fry over a medium heat for 5-6 mins, until golden.

Mix in the spices, followed by the tomatoes, stock, beans and remaining lemon zest and juice. Bring to the boil and simmer, uncovered, for 8-10 mins or until the beans are tender. Fork through the couscous to fluff it up, then serve with the chicken.

Moroccan-Spiced Chicken and Couscous

Arrange chicken on large rimmed baking sheet; spray with cooking spray. Sprinkle with mixture of cumin, cardamom, cinnamon, salt, and pepper.

Roast in 475 degrees F oven 35 minutes or until chicken is cooked (165 degrees F).

Toss couscous with roasted peppers, almonds, raisins, and green onions. Serve chicken on couscous.

Chickpea and Spinach Couscous with Cashews

couscous (preferable whole wheat)

garlic

coriander

black pepper

½ teaspoon Hungarian (sweet paprika)

½ lemon

tomatoes

baby spinach (washed)

cashews (lightly toasted)

Bring a small pot of water to a boil, add your couscous, cover the pot and turn off the heat. Allow to sit for 5 minutes. Remove lid, fluff up the couscous using a fork. Set aside.

In a large pot over medium heat, heat the olive oil. Add onion and garlic and sauté until onion is translucent, about 4-5 minutes. Add cumin, coriander, salt, pepper, paprika and lemon. Stir. Add tomatoes and simmer for 10 minutes.

Add spinach and chickpeas. Stir, allowing the spinach to wilt. Taste, and adjust any seasonings if needed. In the meantime, lightly toast the cashews in a small pan on the stove top. Spread the nuts out in an even layer and heat over medium, shaking often – don't overcrowd.

Keep stirring or shaking for about 5 minutes, or until nuts are fragrant and browned.

To serve, spoon the couscous into a shallow bowl, then spoon the chickpea and spinach mix over the top. Top with toasted cashews and serve at once.

Moroccan Couscous with Pomegranate

couscous (rinsed and drained)

tsp Moroccan spice blend (or curry powder)

tsp kosher salt

pomegranate seeds (arils)

Preheat oven to 350°F. Place the couscous in an 13x9" baking dish.

In a small bowl whisk the curry powder, salt and warm water together. Pour over the couscous in the baking dish. Stir to incorporate and allow to absorb all liquid for about 10 minutes.

Pour 2 tablespoons of the olive oil over the couscous and using your hands rub the couscous between your fingers, making sure to coat the grains and break up any lumps.

Dot the top of the couscous with 2 tablespoons of the butter, cover with aluminum foil and bake for 15 minutes.

In a small sauté pan lightly toast and brown the almonds in the remaining tablespoon of butter and sprinkle salt on top. Set aside on a paper towel to drain.

Take the couscous from oven, let rest 5 minutes. Remove aluminum foil and fluff the couscous with a fork. Pile it on to a serving dish and scatter pomegranate seeds and almonds on top. Serve hot.

This easy lemon couscous recipe is one of our favorite side dishes. I toss the light and fluffy pasta with olive oil, garlic, fresh herbs, pine nuts, and lemon juice. It&#039;s so simple and delicious!

In a medium saucepan, bring the water to a boil. Add the couscous, 1 teaspoon olive oil, and ½ teaspoon sea salt and stir. Cover, remove from the heat, and let stand for 5 minutes.

Fluff the couscous with a fork, transfer it to a large bowl, and toss it with the remaining 1 tablespoon olive oil, ¼ teaspoon sea salt, garlic, lemon zest, lemon juice, parsley, and pine nuts.

Transfer the mixture to a serving platter and garnish with additional pine nuts, parsley, and red pepper flakes, if desired.

Throw together a filling and fragrant couscous salad for a vegetarian lunchbox meal, or double it for a buffet

Heat oven to 200C/180C fan/gas 6. Cut peppers and squash into bite-size pieces (leave skin on the squash). Tip all the veg into a baking tray, add garlic, 2 tbsp oil and seasoning, then mix and roast for 20 mins. Add onion, cumin, harissa and almonds. Roast for another 20 mins, then cool.

Put couscous into a large bowl, pour over the stock, cover, then set aside for 10 mins. Fluff up with a fork.

In a bowl, mix zest, juice and remaining oil. Squeeze garlic pulp from skins into the bowl, mash well and fold in the mint. Pour over the veg, then toss with the couscous.

With the rack in the highest position, preheat the oven’s broiler.

On a baking sheet, toss the cauliflower, bell pepper, onion, and garlic with the oil. Season with salt and pepper. Place the sausages on the baking sheet next to the vegetables. Bake for about 15 minutes. Season the shrimp with salt and pepper. Remove the baking sheet from the oven. Stir the vegetables and add the shrimp (see note). Bake for about 5 minutes or until cooked. Cut the sausages into pieces and put them back on the baking sheet.

Meanwhile, in a bowl in the microwave oven, bring the broth to a boil. Add the couscous and cover. Let stand for 5 minutes. Fluff the couscous with a fork.

On the baking sheet, add the couscous, parsley, and paprika. Toss well and adjust the seasoning. Drizzle with olive oil and serve with the lemon wedges.

Super délicieux!  Je l’ai fait en version cétogène en remplaçant le couscous/paprika fumée par du riz de chou-fleur/raz el hanout.  Tout le monde a aimé.

Très bon et simple à réaliser. Le jus de citron est un must.

Vraiment une excellente recette rapide j ai omis saucisses pour remplacer par pois chiches et chou-fleur par brocolis!

Délicieux. Même mon conjoint qui n'aime pas l'odeur des saucisses merguez a beaucoup apprécié cette recette.

C'est toujours un bonheur d'avoir ça dans mon assiette et en plus c'est facile à faire et pas de chaudron à laver.
Je fais seulement la moitié du couscous et c'est bon avec différentes sortes de saucisses.   Quoi demander de plus!
