Cream onions is a recipe from the past that my grandmother and grandfather made Thanksgiving and Christmas. It’s such a staple recipe that may sound like an odd recipe for those who’ve never had it.. but trust and believe it will be the most popular side dish at your holiday table. Just as you make a turkey stock for your gravy we are going to make an onion stock for our creamed onions. When I was young, my grandparents and mother always used boiler onions to make this recipe. And if you can find those onions, please use them however, as of late, I’ve had a hard time finding them in my grocery store so I use pearl onions.. either way you’re going to get the most creamy delicious onion gravy over your creamed onions! It’s truly a treat and a treasure let’s make it!

Creamed Onions

pearl onions

butter

all purpose flour

Salt & black pepper (to taste)

nutmeg

First, boil the onions in a large pot of water with the skins on for about 45 minutes; or until soft.

Before you drain the water you boiled the onions in, save 4 cups and set aside.

Once the onions are cool, peel the skins off the onions by pulling out the root of the onion and the peel will come off very easily. Don’t cut the root off. You want the onion in tact. Set the onions aside.

In a separate pot add two sticks of butter at medium heat, once melted add 1 cup of flour and whisk continuously for 3-5 minutes.

Then, add in the onion water (add about 3 cups at first). Then, whisk continuously for another 3-4 minutes.

Add in 4 cups of half and half and bring the pot to a rolling boil. Once boiling, lower to a simmer and stir the contents together and simmer for about 10 minutes.

This recipe requires plenty of salt and even more cracked black pepper. So start with adding about 1 & 1/2 tsp of each. Then stir and taste. Add about a 1/2 tsp of nutmeg. Taste the seasoning and add more as needed.

If the creamed onions are too thick add more onions water. If they are too thin, add more half & half. But, I think they will turn out just right! Make it!!

bay leaf

black peppercorns

all-purpose flour

chicken broth

heavy cream

dry white wine

Parmesan cheese ((optional))

thyme leaves

salt

black pepper

cayenne pepper ((optional))

nutmeg ((optional))

If using fresh pearl onions:  Cut off the tops of the onions and score an &quot;x&quot; in the top.  Bring a pot of water to a boil, add the onions and boil for 1-2 minutes until the skins are softened.  Drain and rinse under cold water.  Squeeze the onions to slip the skins off.  Place the onions in a saucepan covered with about an inch of water.  Add the bay leaf and peppercorns and bring to a boil.  Reduce the heat and simmer steadily for 12-15 minutes if using fresh onions, or 5-7 minutes if using frozen onions (if thawed; add an additional minute if still frozen).  Drain.

While the onions are boiling, melt the butter in a small saucepan.  Whisk in the flour and continue whisking for one minute (this will cook off the flour flavor).  Slowly pour in the broth, heavy cream and white wine, whisking continually to prevent clumping.  Add the Parmesan cheese, thyme, salt, pepper, cayenne and nutmeg (if using).  Let it simmer for about a minute or until thickened.  Stir in the onions and cook for another minute or two.  If you prefer a thinner consistency, simply add a little more broth.  Add salt and pepper to taste.  If you prefer it a tad sweeter, you can also stir in a pinch of sugar.

These are so yummy!  I've never had creamed onions before but I've made so many of your recipes and love them all and I was intrigued by this.  I love onions so decided to give it a go.  Well I'm now a fan!  These creamed onions make such a delicious and versatile side dish.  I've saved this to make again.
