Creamed Pearl Onions

Cups Pearl Onions

Tbsp Butter

Tbsp Flour

Cup Chicken Broth

Salt

Pepper

Parsley

Tbsp Parmesan Cheese (Grated)

Bring a large pot of water (8 cups) to boil. Add pearl onions and boil until tender, about 5-7 minutes. Remove onions, drain and peel. Set aside for later. If using frozen onions, boil onions until no longer frozen. Remove onions and set aside.

In a large saucepan, melt butter over medium heat. Stir in flour to create a roux and cook until bubbling. Stir in broth and half and half until smooth. Bring to a simmer and cook until thickened enough to coat the back of a spoon.

Season to taste with salt and pepper. Fold in parsley and cheese.

Add onions to cream mixture and toss to coat. Serve immediately and enjoy!

bay leaf

black peppercorns

butter

all-purpose flour

chicken broth

heavy cream

dry white wine

Parmesan cheese ((optional))

thyme leaves

cayenne pepper ((optional))

nutmeg ((optional))

If using fresh pearl onions:  Cut off the tops of the onions and score an &quot;x&quot; in the top.  Bring a pot of water to a boil, add the onions and boil for 1-2 minutes until the skins are softened.  Drain and rinse under cold water.  Squeeze the onions to slip the skins off.  Place the onions in a saucepan covered with about an inch of water.  Add the bay leaf and peppercorns and bring to a boil.  Reduce the heat and simmer steadily for 12-15 minutes if using fresh onions, or 5-7 minutes if using frozen onions (if thawed; add an additional minute if still frozen).  Drain.

While the onions are boiling, melt the butter in a small saucepan.  Whisk in the flour and continue whisking for one minute (this will cook off the flour flavor).  Slowly pour in the broth, heavy cream and white wine, whisking continually to prevent clumping.  Add the Parmesan cheese, thyme, salt, pepper, cayenne and nutmeg (if using).  Let it simmer for about a minute or until thickened.  Stir in the onions and cook for another minute or two.  If you prefer a thinner consistency, simply add a little more broth.  Add salt and pepper to taste.  If you prefer it a tad sweeter, you can also stir in a pinch of sugar.

These are so yummy!  I've never had creamed onions before but I've made so many of your recipes and love them all and I was intrigued by this.  I love onions so decided to give it a go.  Well I'm now a fan!  These creamed onions make such a delicious and versatile side dish.  I've saved this to make again.
