This creamed spinach recipe can be made with fresh or frozen spinach and is combined with a quick and easy Parmesan cream sauce.

Creamed Spinach

spinach

butter

Tablespoons flour

onion (finely diced)

garlic

half and half ((can sub whole milk))

Salt/pepper (to taste)

Parmesan cheese (+ 2 more Tablespoons to garnish)

Melt 2 Tablespoons of butter in a medium saucepan over medium heat. Add the spinach in batches and heat until it is all wilted. Remove it from the pan and add one more tablespoon of butter to the top. Set aside.

Reuse the same pan and melt 5 Tablespoons of butter over medium heat. Whisk in the flour, stirring continuously for 2 minutes, until well-combined and a light golden color. Add the onion and cook for about 3 minutes, until soft and translucent. Add the garlic and cook for one minute.

Stir in the half and half, and increase the heat to medium high. Add the salt/pepper and Parmesan cheese and whisk continuously for 5 minutes, then decrease heat to low.

Mix in the wilted spinach.  Transfer to a bowl and top with 2 Tablespoons of grated Parmesan and freshly cracked pepper. Serve!

Perfect creamed spinach, just like those in the best steakhouses - rich but not ridiculous!

Easy Creamed Spinach

unsalted butter

onion (, finely chopped)

spinach leaves, very roughly chopped

half and half

salt and pepper (to taste)

nutmeg ((optional))

cayenne pepper or red pepper flakes

saute the spinach

In a large deep skillet, melt the butter over medium-high heat.  Add the onion and sauté for about 3 minutes until the onion is golden and starting to become tender.  Add the spinach by big handfuls, cooking as you go, to wilt down the spinach.  When all of the spinach has been added, stir for another minute to allow any liquid released by the cooking spinach to evaporate.   Pour in the half and half, and bring to a simmer, stirring frequently.  Season with salt and pepper, nutmeg (if using), and the cayenne pepper or red pepper flakes, and continue stirring until everything is well combined and creamy, about 3 more minutes.

puree some of the spinach if desired

If you like (this is optional, but adds more creaminess) you can run an immersion blender through the spinach mixture a few times to puree some of the spinach, or scoop about ¼ of the spinach mixture into a food processor or blender and pulse a few times to make it a bit smoother.  Return the blended spinach to the pot, if needed.

stir in the parmesan and serve hot

Stir in the Parmesan until the cheese is melted and everything is well blended. Transfer to a serving bowl and serve hot.

Stir in the garlic and sautéed spinach, then add the cream, mustard, and cornstarch mixture and stir until combined. Stir in the lemon juice, season to taste with more salt and pepper, and serve.

Frozen spinach: Thaw the spinach, then squeeze out as much of the excess water as you can. Fresh spinach: Boil a pot of water. Add the spinach and cook for about 1 minute. Drain it and rinse it under cool water. Squeeze out excess water. Chop if desired.

In a pot, sauté the butter and onion over medium heat until it&#39;s lightly browned (about 5-7 minutes).

Reduce heat (I keep it on medium-low for this step, but you can increase heat as needed). Stir in the garlic, followed by the heavy cream, cream cheese, parmesan, and nutmeg. It will take a few minutes for the cream cheese to melt in. I break it up with my spoon/stir it continuously. The sauce should thicken up as it cooks.

Stir in the spinach and let it heat through. If you want more liquid, add in a splash more cream. If there&#x27;s too much liquid, you may need to cook the spinach for a few more minutes to reduce the sauce to your liking.

Season with salt &amp; pepper as needed (I am pretty generous with both).

Added fresh corn to it, cut back on the cream cheese and before I could put it away, my husband started dipping tortilla chips into it and said it was a delicious dip! It was a bit thicker than creamed spinach I would serve for dinner, so I left it that way, topped it off with some more cheese when I reheated it and served it as a dip. Delicious!

I made the recipe as stated except:  12 oz bag frozen chopped spinach (squeezed well to remove liquid); used 1/2 &amp; 1/2 instead of cream and was a bit short on the parmesan.  End result:  This was plenty of spinach.  I'm sure more would be good too!  The sauce was REALLY thick (even not using cream or all of the parmesan)  Consistency of a thick hot dip.  May be my taste, I like it much looser--so I added a lot more 1/2 &amp; 1/2 to get it where I wanted it.  
Definitely a keeper, I will make it again!

I've made the. creamed spinach and few time and I'm making it for easter. never any left

I made this for a dinner party the end of March 2026. It was 12 people for a five course sit down meal. The most requested recipe from the women at the table was for the spinach. One of my guests said she had made creamed spinach, at least half a dozen times and all of it went into the trash and was never attempted again. Unanimously, everyone absolutely loved this creamed spinach. I have another dinner party on Easter and this will be one of the side dishes on the plate. Truly excellent. I made it with fresh spinach where I pinched all the stems off of the spinach. That was super time-consuming in this time. I will do it with chopped frozen and see how it goes. I am going to guess that there will be zero difference in the taste in a huge difference in the work. Thanks for a great recipe.
