5-Minute Creamy Balsamic Dressing

balsamic vinegar (0.20)

maple syrup (0.30)

vegan mayonnaise (0.36)

Dijon mustard (0.02)

garlic, peeled (0.04)

sea salt (0.01)

black pepper (0.01)

olive oil (1.32)

water

Add balsamic vinegar, maple syrup, mayonnaise, Dijon mustard, garlic, salt, and pepper to a blender. Mix on high until smooth, then lower the speed and slowly add the olive oil.

Taste and adjust measurements — balsamic vinegar for more punch, maple to balance the tang, or garlic for zestiness. We like to thin ours with some water, but this is optional.

Serve immediately or transfer to a glass storage container and chill a few hours before serving. Happy eating!

Creamy Balsamic Dressing

balsamic vinegar

extra virgin olive oil

Greek yogurt (see note 1)

Dijon mustard

honey (see note 2)

garlic powder

salt

black pepper

To a jar, add balsamic vinegar, olive oil, yogurt, Dijon mustard, honey, garlic powder, salt and pepper. Seal and shake until well combined.

Store in the fridge for up to 5 days. If it separates, seal the jar and shake or whisk the dressing until smooth.

Mediterranean Salad Recipe

chicken breasts ((cut in half horizontally))

olive oil

Italian seasoning

romaine lettuce ((spinach or spring mix))

chickpeas

tomatoes

cucumber ((chopped))

onion

feta cheese

parsley

mayo ((or plain greek yogurt))

Tablespoons plain Greek yogurt ((or mayo))

Tablespoons extra virgin olive oil

Tablespoons balsamic vinegar

garlic salt

Tablespoon pure maple syrup ((or honey))

Place the olive oil in a large skillet over medium-high heat. Season the chicken with the Italian seasoning, salt and pepper.&nbsp;

Place the chicken into the pan. Cook for 5-6 minutes per side, or until cooked through the center.&nbsp;

Once cooked, remove from the heat and slice into thin strips once slightly cooled.

Combine the mayo, greek yogurt, oil, vinegar, Italian seasoning, garlic salt and maple syrup in a small bowl. Whisk until combined. Salt and pepper, to taste. 

Layer the lettuce in one large bowl, or 4 individual bowls. Top with chicken, chickpeas, tomatoes, cucumber, red onion, feta and parsley. Add pita chips if desired. Drizzle over the dressing over the top of the salad and toss until combined.

This creamy balsamic is EVERYTHING! I love it so much. Delicious salad!

This salad was amazing! The dressing is exactly what I was looking for. It doesn't have any mustard, has a good sweetener, and is really creamy. I almost just ate the dressing by itself after I tried it it was so good haha! I will definitely be saving the recipe.
