Creamy Cheddar Broccoli Salad

apple cider vinegar

Whisk together all dressing ingredients. Cover and chill until ready to use.

Cook pasta according to package instructions. Drain and transfer pasta to a large bowl. Add broccoli, cheese, celery, and onions. Add dressing and toss to combine. Serve immediately, or cover and chill 1-3 hours before serving for enhanced flavor.

cauliflower head

Tbsp fresh lemon juice (from 1 small lemon)

mayonnaise

Peel the broccoli stem and chop off the dry base. Chop broccoli into small florets and dice the stem if using.

Remove and discard cauliflower core and dice the rest.

Toast 1/2 cup almonds on a dry skillet over med/high heat, tossing frequently until fragrant and golden, then add to salad bowl along with 3/4 cup craisins.

In a small bowl, whisk together 1/2 cup mayo, 2 Tbsp honey and 2 Tbsp lemon juice. Add dressing to the salad and toss well to combine.

Broccoli Cauliflower Salad Recipe with Creamy Honey Lemon Dressing

Creamy Broccoli Salad

bacon

golden raisins

white sugar

white wine

vinegar (or plain white vinegar)

red onion, chopped

sunflower seeds nuts

Fry some bacon strips over medium-high heat until brown. Chop into small bits, eat a few pieces, and set the rest aside.

Chop the broccoli such that only the florets remain. Chop the florets further into bite-size. You can also use pre-chopped broccoli, although this costs more.

Toss the broccoli, bacon, nuts, raisins, and onions in a bowl.

To make the dressing, combine mayo, sugar, and vinegar.

Pour it over the broccoli salad and toss.

Either refrigerate it or serve right away!

In a medium mixing bowl, whisk together the dressing ingredients. Cover and refrigerate while you move on to the next steps.

In a large mixing bowl, combine the broccoli, cauliflower, half of the bacon, cheese, and diced onion.

Pour the dressing over the salad and toss to coat. Top the salad with the remaining bacon.

Serve the salad immediately.

Creamy broccoli slaw salad is healthy, delicious, and flavourful. It's packed with crunchy vegetables, salty feta, sweet raisins, and a creamy dressing.

Creamy Broccoli Slaw Salad

broccoli florets (about 2 small heads), chopped into small pieces

purple cabbage, thinly sliced or shredded

feta cheese, crumbled

raisins

pine nuts, toasted

scallions, thinly sliced

mayonnaise (or sour cream

white wine vinegar

lemon juice,

shallot,

extra virgin olive oil

Cut the bottoms off the heads of broccoli so you’re left with small sized florets. Then, trim the bottoms so they’re not longer than 1-inch, and roughly chop.

In a large mixing bowl or serving bowl, combine broccoli, cabbage, feta, raisins, pine nuts, and scallions. 

In a small mixing bowl, add mayonnaise, dijon mustard, white wine vinegar, lemon juice, shallot, salt, and pepper. Stir to combine. Slowly drizzle in olive oil and whisk until all ingredients are incorporated. You can add additional 1-2 tablespoons of olive oil if you prefer a thinner dressing.

Add dressing to the slaw, and toss all ingredients together. Let the slaw sit for 30 minutes, or up to overnight in the refrigerator. Serve cold or at room temperature.

This recipe was delicious!! I used 0% Fage Fat free greek yogurt and Fat free feta cheese.  Made it for Christmas to go along with Filet Mignon and everyone commented how fresh and delicious it was.  Healthy and bursting with flavor!

Creamy Broccoli Salad with Curry Tahini Dressing

(15 oz) can chickpeas, drained and rinsed

red grapes,

red onion

Salt,

tahini

lemon

tamari, or soy sauce

maple syrup

curry powder

garlic powder

cumin

Add all the salad ingredients to a large bowl.  Add all dressing ingredients to a jar or small bowl and whisk until combined.

Pour dressing over salad and mix until the salad is completely coated with dressing.  Salt, to taste.

Enjoy immediately or store in the refrigerator for 3-4 days.

Yum and perfect for summer. My husband took one look at the ingredients and said 'Please no!'  He likes all the ingredients separately though. Being the good wife I am, I made it anyway... 
He had thirds! Only one change, we added a tablespoon of miso but that may have felt needed as our tahini was extra bitter.
