Creamy Garlic Chicken

chicken breasts

all-purpose flour

½ tbsp. unsalted butter

olive oil

garlic

dry white wine

heavy cream

baby spinach

Season

Season chicken breasts on both sides with salt and pepper.

Dredge

Place flour on a medium plate. Dredge each chicken breast with flour, patting off any excess.

Cook

Heat a large skillet with high sides to a medium-high heat. Add one tablespoon butter and olive oil. Once the butter has melted, add the chicken breasts. Sear until golden brown, about 3-4 minutes. Flip and sear until brown, another 2-3 minutes. Remove the chicken breasts from the pan and set aside on a plate. (Do not worry about cooking the chicken all the way through, they will finish cooking later.)

Brown

Add the remaining ½ tablespoon butter to the pan. Turn the heat down to medium and add all the peeled garlic cloves. Toast the garlic until light brown on all sides. Be careful to not burn the garlic.

Simmer

Pour in the wine. Bring it up to a boil and then reduce to a simmer. Simmer until reduced by half. Once the wine has reduced, pour in the cream. Again, bring the cream and wine up to a boil and then reduce to a simmer. Add the chicken back to the sauce, cover and cook until the chicken is cooked through and reaches an internal temperature of 165 degrees.

Finish

Once the chicken is cooked, add in the spinach. Shut the lid and simmer for another 1-2 minutes. Remove the lid and toss the spinach with the chicken and sauce until completely wilted. Season to taste with salt and pepper.

<p>This creamy garlic pizza sauce is a delicious, flavorful base for my favorite pizzas, pastas and chicken and sausage dishes.</p>

Garlic Pizza Sauce

(2 tsp) garlic, minced

Tbsp All Purpose flour

Italian seasoning

tsp salt

tsp pepper

half and half

Tbsp Parmesan cheese

In a small saucepan over medium-low heat, place the olive oil and the minced garlic. Cook for 1-2 minutes, whisking constantly so the garlic doesn&#8217;t brown. Add the Italian seasoning, salt and pepper and stir.

Sprinkle in the flour and whisk quickly until it is a thick paste. Let cook and bubble for another 1-2 minutes.

Stir in the half and half 1/2 c. at a time, whisking constantly. Add the Parmesan cheese and stir, then turn the heat to low and let simmer 5-10 minutes to thicken. Serve warm or refrigerate in an airtight container for up to 5-7 days until ready to use.

Thanks for this delightful change from traditional pizza sauce.  I use pita that is getting old as mini pizza crusts, and this works beautifully.  Toppings are whatever leftovers I have in the frig.  Tonight, it was a slice of grilled checken chopped up, some sprinkles og cooked turkey sausage, fresh spinach, a couple of mushrooms sauteed, sliced olives, cooked onion slice.

Chicken Stock

(410 grams) - Thickened Cream (Heavy Cream)

(0.3 ounces)

(4.2 ounces) - Baby Spinach

Season Chicken

Place the chicken breasts into a mixing bowl and add the olive oil, onion powder, garlic powder and seasoning to taste. Mix to combine.

Sear Chicken

Place a large high rimmed pan or pot over medium-high heat, add in the seasoned chicken and sear for 5-6 minutes on each side, remove and keep warm.

Saute Vegetables

In the same pan or pot, add the clarified butter, allow to melt and add the onion and saute for 3 minutes. Add in the garlic, tomato paste, sun-dried tomato, dried oregano, paprika and salt to taste. Saute for 1 minute. Add in the wine and deglaze for 1 minute.

Reduce Sauce

Add in the chicken stock and reduce for 1 minute, stirring regularly. Add in the cream and mix to combine. Bring it to a boil, reduce the heat to low and simmer for 6 minutes.

Mix Cheese

Add in the parmesan cheese, basil and baby spinach. Mix to combine to melt the cheese and cook for 1 minute to wilt the spinach.

Add Chicken

Add the seared chicken into the sauce along with any resting juices, mix to combine, check and adjust seasoning levels and remove from the stovetop.

Serve

Serve in bowls with a variety of your favourite sides. Serve with bread and garnish with basil leaves. Dig in.
