With all the apple recipes out there, it's amazing how difficult it is to find a good, basic apple crisp. You know, one of those recipes you're desperately seeking (along with applesauce) when you've just gone to the orchard with the kids, and they enthusiastically filled two very large bags with apples.
While this version of apple crisp may seem daunting, with a fairly long list of ingredients, many are simply optional enhancements. Basically, you're looking at apples, sugar, thickener, and a touch of spice in the filling; and flour, sugar, butter, oats, and cinnamon in the topping.

Classic Apple Crisp

This is unlike any cobbler you’ve ever enjoyed. Like all peach cobblers, it starts with a base of fresh, sweet peaches. But instead of being topped with biscuits or cake batter, it’s crowned with bread cubes drizzled with a delicious buttery brown sugar syrup. A turn through the oven transforms the cobbler into tender, bubbling fruit with a topping that’s crispy and caramelized on top and delightfully soft underneath. Juicy, colorful, a bit nutty — what more could you want in a summertime dessert? Dark red Bing cherries, or tart sour cherries are wonderful in this crisp, but any berries and most other fruits, diced, are also delicious. The oats add the texture and the bit of nuttiness that flour, sugar and butter alone can't duplicate.

Since blueberries are in season for only a very limited time, and out-of-season fresh blueberries cost an arm and a leg, we like to make our blueberry crisp with readily available frozen berries. And besides, using fresh berries in a slow-cooking crisp, where they'll become pleasantly mushy, is like getting all slicked up to go milk the cows: it doesn't add anything to the experience, so why do it? That said, if you have bucketfuls of fresh berries, this crisp is a great place to use them up.

From crisp to dumplings to pie, apples are the star of the autumn baking show. This apple cobbler is designed to show off the pure flavors of fresh in-season apples. Its cake-style topping with a sugar crust is the perfect complement to the soft, juicy baked apples beneath. And while we prefer the dish with unadulterated apples during the season, in winter a little lemon juice or boiled cider (and perhaps some cinnamon) is just what you need to brighten your apples’ mellower flavors.

Older apple dumpling recipes use the stovetop for the cooking, but in this variation they're oven-baked in a quantity of liquid, which slowly reduces into a thick syrup by the time the dumplings are finished baking. We like this recipe very much; it's yet another example of good, old-fashioned comfort food.

Super-moist, ultra-tender, and mighty tasty! That describes this cake-style peach cobbler to a T. We realize it's not an exact interpretation; a true Southern cobbler is very juicy (more peaches than cake) while this is akin to a peach coffee cake. Still, we think it does justice to this Southern classic.
