Everything you love about lasagna – all in one bowl of soup! Loaded with chicken sausage, lasagna noodles, marinara and cheese. It's easy, filling, hearty and perfect for a cold winter night.

Lasagna Soup

For the soup

cooking spray

oz sweet Italian chicken sausage (casing removed)

onion (chopped)

garlic

parsley

low-sodium (fat-free chicken broth*)

water

quick marinara sauce

bay leaves

black pepper

tbsp part skim shredded mozzarella cheese*

ricotta cheese

tbsp grated parmesan cheese

basil chiffonade

*check labels for gluten free

Heat a large soup pot or Dutch oven over medium heat, spray with oil and add the sausage; cook until browned, breaking it up as it cooks with a wooden spoon about 4 to 5 minutes.

Add the chopped onion and crushed garlic and cook 2 to 3 minutes.

Add the parsley, broth, water, marinara sauce, bay leaves and fresh black pepper and bring to a boil; cover, reduce heat and simmer about 30 minutes.

In a medium bowl combine the ricotta, parmesan, and 2 tbsp parsley and mix.

Add the broken pasta and cook uncovered according to package directions.

Divide between 6 bowls and top each with 2 tbsp ricotta cheese mixture, mozzarella, fresh cracked pepper and fresh basil on top.

Stove Top Directions:

Heat a large nonstick skillet over medium-high heat, spray with oil and add the sausage; cook until browned, breaking it up as it cooks with a wooden spoon about 3 to 4 minutes. Add the chopped onion and crushed garlic and cook until soft, about 3 to 4 minutes.

Transfer to the slow cooker and add the parsley, broth, water, marinara sauce, bay leaves and fresh black pepper. Cover and set the slow cooker to low 8 hours or high 4 hours.

Meanwhile, in a medium bowl combine the ricotta, parmesan, and 2 tablespoons of the parsley and mix well; set aside until the soup is ready.

About 30 minutes before the soup is ready, remove the bay leaves and add the broken pasta, cover and cook until the pasta is cooked, about 30 minutes. Divide between 6 bowls and top each with 2 tbsp ricotta cheese mixture, mozzarella, fresh cracked pepper and fresh basil on top.

Press saute on the Instant Pot and spray with oil. Add the sausage and cook until browned, breaking it up as it cooks with a wooden spoon about 4 to 5 minutes.

Add the chopped onion and crushed garlic and cook 2 to 3 minutes. Press cancel to shut off.

Add the parsley, broth, water, marinara sauce, bay leaves and fresh black pepper; cover and cook high pressure 15 minutes.

In a medium bowl combine the ricotta, parmesan, and 2 tbsp parsley and mix. Set aside.

Use the natural or the quick release method, then open the pot. Add the broken pasta, cover and cook high pressure 3 minutes. Use the quick release method to open the pot.

Cook beef, onion, and garlic over medium-high heat until no pink remains; drain. Place in slow cooker.

Add all remaining soup ingredients except pasta &amp; spinach. Cover and cook on low 7-8 hours or high 3-4 hours.

Cook pasta al dente according to package directions. Stir in cooked pasta and spinach. Cover and cook an additional 10-15 minutes. Spoon into bowls and top as desired.

Super Easy Crockpot Lasagna Soup

onion (200 grams) (diced)

can marinara sauce (I used Rao's)

garlic, minced (I used frozen)

Italian seasoning

tsp salt (more as needed)

tsp red pepper flakes (optional)

noodles

spinach ((optional))

mozzarella cheese

parmesan cheese (optional (but highly recommended!) for serving)

Brown the ground beef and onion in a large skillet over medium heat. Then drain excess grease and place the ground beef into a Crock pot.

Add the marinara sauce, tomato paste and seasonings.

Then add the beef broth and minced garlic.

Cover and cook on low for 4-5 hours or high for 2-3 hours. Can cook longer on low too if you are going to be gone.

Remove the lid. Break the lasagna noodles over the Crockpot in bite-sized pieces and stir them in.

Cover and cook on high for 30 minutes until the noodles are cooked through.

Stir in spinach when ready to serve (or you can stir in individually).

Top with 2 Tbsp ricotta cheese and shredded mozzarella cheese to serve. Then sprinkle with parmesan cheese if desired and enjoy!

Slow cooker lasagna soup has all the cozy, cheesy flavors of classic lasagna in a hearty one-pot soup. Perfect for busy weeknights with minimal prep!

Slow Cooker Lasagna Soup Recipe

To a large skillet over medium high heat, add the ground beef and diced onion. Season with salt and pepper, browning as you break the meat apart until no longer pink.

Add the minced garlic and cook until fragrant.

Drain any grease, if necessary, and pour the meat into the basin of a 6 quart slow cooker.

Top with the jar of marinara, beef broth, diced tomatoes, Italian seasoning, onion powder, and red pepper flakes.

Give it a stir then cover and cook on HIGH for 2-3 hours or LOW for 4-6 hours.

After the cook time is up, stir in the heavy cream and the broken noodles. I like to break the noodles over the slow cooker so the pieces fall in. Stir, replace the cover and cook an additional 30-45 minutes or until the noodles are tender.

Once done, ladle into bowls and top with a scoop of ricotta cheese, shredded mozzarella, and fresh parsley.

We just made this tonight. No time for slow cooker this morning but it was easy and is delicious!  Putting it into my rotation! Oh i did not add cream  it was thick enough with the saice and noodles.
