Crockpot Mexican Shredded Chicken Recipe

chicken breasts

taco seasoning ((1 packet))

corn kernels (drained (1 can))

black beans (drained and rinsed (1 can))

salsa (store-bought

lime (juiced)

cilantro (for garnish)

rice

Add the chicken breasts to the bottom of the crockpot. Season the tops of the chicken breasts with half of the taco seasoning.

Dump

Dump on the corn, beans, salsa, and remaining taco seasoning on top of the chicken.

Cook

Cook on low for 6-8 hours, or until the chicken is cooked through and the internal temperature has reached 165°F.

Shred

Remove the chicken to shred with a fork and return to the crockpot. Stir in the lime juice and garnish with fresh cilantro. Serve immediately over a bed of rice or use for tacos. Enjoy!

Crockpot Mexican Shredded Chicken

Incredibly easy comfort food meal that the entire family will love! 

Crockpot Crack Chicken Pasta

boneless, skinless, chicken breasts

tsp kosher salt

tsp black pepper

garlic powder

onion powder

chicken broth

oz dried short-cut pasta ((such as fusilli, penne, etc))

oz cream cheese

ranch dressing mix

cheddar cheese, (divided)

water

bacon, cooked and crumbled ((or bacon bits if preferred))

green onions, chopped (for garnish)

Place chicken breasts in the bottom of slow cooker, add seasonings, chicken broth, cover and cook about 6-8 hours on LOW, until chicken is cooked through.

Shred chicken, then add pasta, cream cheese, ranch dressing mix, 1 cup of the shredded cheese, and water.  Stir well.

Cover and cook on HIGH for 20-30 minutes, until pasta is cooked.

Top with bacon, remaining 1 cup of shredded cheese, and green onions.  Turn slow cooker off, keep the cover on, and let sit a few minutes to let the cheese on top melt.

Serve hot and enjoy.

I seen this recipe recently when trying to find something easy to cook. I made this a few nights ago and it is a hit in the household! Everyone asked me to make it again. Needless to say this recipe is on my future to cook list. Delicious!

This was tasty but it’s very rich. I think 2 bricks of cream cheese is a little much, and I love cream cheese, but I would use one brick next time. Definitely not healthy! But I knew this going in

This recipe was outstanding.  My kids are not cream cheese lovers, so I modified it slightly.  I used four ounces of cream cheese and added a can of cream of chicken soup to it.  Every recipe that I make by the Chunky Chef is outstanding :).  She is my go-to recipe file.  Thank you for sharing.

First recipe I’ve tried after finding this site. OMG! It was so good when I checked on the pasta that I didn’t even add the extra cheese to the top after! Just didn’t need it for my taste! I will make this over and over!

Crockpot Italian Garlic Butter Beef &amp; Potatoes

oz honey gold bite-size potatoes (washed)

garlic

Lipton onion soup mix

beef stock

1½ –2 pounds beef stew meat

tomato paste

Worcestershire sauce

Good Seasons Zesty Italian dressing mix

(½ cup butter, sliced)

Add the washed honey gold potatoes to the bottom of your crockpot.

Sprinkle 2 tablespoons of minced garlic over the potatoes.

Add the Lipton onion soup mix and pour in the beef stock. Stir to coat the potatoes.

In a bowl, combine the beef stew meat, tomato paste, remaining 2 tablespoons of minced garlic, Worcestershire sauce, and zesty Italian dressing mix. Toss until the beef is evenly coated.

Spoon the seasoned beef mixture directly on top of the potatoes. Do not stir.

Lay the sliced stick of butter evenly on top of the beef. Again—do not mix. This will melt over the beef as it cooks, giving it maximum garlic butter flavor.

HIGH: 4–5 hours

LOW: 7–8 hours

Cook until the beef is tender and the potatoes are fork-soft.

Gently stir before serving to combine everything.
