Low-FODMAP Crunchy Thai Peanut Salad; Gluten-free, Vegan

(340 grams) edamame, frozen

quinoa,

4 cups (300 grams) iceberg lettuce, finely chopped

2 cups (200 grams) purple cabbage, finely chopped

2 cup carrots, finely grated (about 1 large carrot)

(75 grams) green scallion tips

(90 grams) roasted and unsalted peanuts, chopped

4 tablespoons (44 grams) toasted sesame seeds

Transform frozen dumplings into a quick, fresh and flavourful meal with this Sesame-soy Dumpling Salad. Crispy pan-fried dumplings, crunchy veggies and a bold dressing make this the ultimate family-friendly dinner or lunch.

Sesame-soy Dumpling Salad

tbsp tamari or all-purpose soy sauce

tbsp rice wine vinegar

tbsp sesame oil

tsp garlic

tsp ginger

brown sugar

sesame seeds

tbsp chilli oil crisp,

spring onion (scallion), finely sliced

tbsp finely chopped coriander (cilantro)

water

cabbage

Lebanese (short) cucumber, sliced

spring onions (scallions), finely sliced

½ red onion,

vegetable dumplings (or dumplings/gyoza of your choice), prepared

(7 g) coriander (cilantro) leaves

(40 g) finely chopped roasted peanuts

Add all of the ingredients, except the water, to a medium bowl and whisk to combine. Add the water, 1 tablespoon at a time, until your desired consistency is reached (I use all 3 tablespoons of water).

Sesame-soy dressing

Add the cabbage, cucumber, spring onion and red onion to a large bowl. Top with the dumplings. Pour the dressing over, toss to coat, then add the coriander leaves and peanuts to garnish. Drizzle over more chilli oil crisp, if using.

Assemble

3 tbsp tamari or all-purpose soy sauce

1 tbsp brown sugar
1 tbsp toasted sesame seeds  
1 tbsp chilli oil crisp, plus extra to serve (optional)
1 spring onion (scallion), finely sliced 
2 tbsp finely chopped coriander (cilantro)
2–3 tbsp water

Sesame-Soy Dumpling Salad – Crispy, Crunchy & Ready in 35 Minutes!

Crispy Chickpea Cucumber Salad is a refreshing, crunchy, and healthy dish that combines roasted, crispy chickpeas with cool, hydrating cucumbers. It offers a delightful contrast of textures and a vibrant blend of flavors, making it perfect as a light lunch, snack, or a versatile side dish that is both nourishing and satisfying.

Crispy Chickpea Cucumber Salad

(15 oz) chickpeas, drained, rinsed, and dried

olive oil

tsp salt

tsp black pepper

tsp ground cumin (optional)

tsp smoked paprika (optional)

tsp chili flakes (optional)

cucumbers,

tbsp fresh parsley, chopped

mint

tbsp lemon juice

Salt and pepper

Toasted almonds or walnuts (for nutty crunch)

chili pepper

Sumac or za’atar spices (for Middle Eastern flair)

Avocado slices or tahini drizzle (for vegan twist)

Feta cheese crumbles (optional)

quinoa, bulgur, or couscous (for grain bowl upgrade)

Roast the Chickpeas

Drain and rinse the chickpeas thoroughly, then pat them very dry with a clean kitchen towel. Toss them in olive oil, salt, pepper, and your choice of spices like cumin, smoked paprika, or chili flakes. Spread in a single layer on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes until golden and crunchy, shaking the pan halfway through for even cooking.

Prepare the Cucumbers

While the chickpeas roast, wash and dice the cucumbers into bite-sized pieces. You may peel the cucumbers partially or fully based on your preference to enhance freshness and texture.

Mix Dressing and Herbs

In a small bowl, whisk together freshly squeezed lemon juice, olive oil, salt, and pepper. Chop the fresh herbs finely (parsley, mint, or cilantro) and add them to the dressing to infuse bright aroma and flavor.

Combine Salad Components

Once the roasted chickpeas have cooled enough to handle, gently mix them with the diced cucumbers. Pour the dressing over the mixture and toss carefully to coat all ingredients evenly while keeping the chickpeas intact.

Serve Fresh or Chill
