10 Minute Easy Asian Cucumber Salad Recipe

red onion

fined diced red pepper

rice wine vinegar

honey

sesame seeds

sesame oil

red pepper flakes

sea salt

Add VERY thinly sliced cucumber, sliced red onion, diced red pepper, and sesame seeds to a medium size bowl. Set aside.

In a small bowl mix together rice wine vinegar, honey, toasted sesame oil, red pepper flakes, and sea salt .

Add dressing to the cucumber bowl. Toss to mix everything.

Serve immediately or cover and let sit in the refrigerator for an hour or two to let all the flavors meld.

Easy Cucumber Salad Recipe

English cucumbers (thinly sliced)

tbsp kosher salt

red onion (thinly sliced)

scallion (thinly sliced)

dill (chopped)

tbsp champagne vinegar

tsp honey

pepper (to taste)

Add the sliced cucumber to a colander and toss with the salt.&nbsp;

Set the colander in your sink or on top of a plate, as the salt will pull liquid from the cucumbers. Let this sit for 20 minutes, then rinse the cucumber with cold water.

Add the drained cucumber to a salad bowl along with the red onion, scallion and fresh dill.&nbsp;

Stir the vinegar and honey together in a separate small bowl, then pour on top of the salad.

Garnish with pepper and additional fresh dill leaves.

Lightly peel cucumber, leaving some green streaks for visual interest. Slice the cucumber and onion as thinly as possible with a mandoline slicer (recommended) or kitchen knife.

Add cucumber and onion to a medium bowl and sprinkle with salt. Toss to combine. Let marinate for about 20 minutes, tossing occasionally, and then drain any accumulated liquid (do not rinse).

Pour vinegar and water over cucumbers and add sugar. Stir to combine. You can enjoy in as little as 5-10 minutes, but let it marinate an additional hour for best results.

Easy marinated cucumber salad

white wine vinegar

lemon juice

olive oil

Combine the vinegar, lemon juice, oil, sugar, salt and pepper in a bowl and whisk together.

Peel the cucumbers then halve lengthwise. Scoop out the seeds then slice into ½cm slices. Add the cucumber to the bowl with the dressing.

Peel and thinly slice the red onion and place in a bowl with the cucumber.

Toss the salad to combine.

Allow to marinated for at least 15 minutes but up to an hour in the fridge before serving.

Oh my goodness! It was so delicious I could have eaten the whole bowl, but I shared with the family. They all loved it. I definitely will be making again. I only used about 1/3 of the onion and it was just right proportions. Also I did not have white wine vinegar (I decided against using white wine, which I did have,) and used red wine vinegar instead. Thanks for such a "cool" and refreshing recipe that is so healthy.

So refreshing!  I have made this twice now.  We held back the onions, significantly, the second time as a whole onion is entirely overwhelming.  I also used a mandolin for the cucumbers and the onions to get them very thinly sliced.  I did not have lemons so didn’t worry about it it used honey for the sweetener.  Much better cold.  Enjoy.

I make this salad at least once a week and have never tired of it. It is so perfect with lamb chops and I make it every time I make curry. I just chop everything a bit smaller so that it’s more like a chopped salad. Delicious!
