Creamy Cucumber Radish Salad Recipe

English cucumber (thinly sliced)

radishes ((2 bunches), trimmed and thinly sliced)

chives onion

sour cream (*)

tsp sea salt (or add to taste)

In a medium salad bowl, combine sliced cucumbers, sliced radishes and chopped green onion.

Just before serving, add 3/4 cup sour cream and 3/4 tsp salt or add salt to taste. Stir to coat the salad in dressing.&nbsp;

This is a healthy combination of refreshing cucumbers, crunchy radishes and creamy cottage cheese. This is a MUST TRY salad recipe this summer!

Creamy Cucumber-Radish Salad

cucumbers

radishes

scallions

cottage cheese

salt and pepper (to taste)

Peel, half, and slice the cucumbers.

Wash and thinly slice the radishes.

Chop the scallions.

Place all the ingredients into a medium salad bowl and sprinkle with some salt and pepper.

Stir everything together and enjoy!

Cucumber Radish Salad

This easy, refreshing cucumber radish salad is the perfect summer side dish for hot days!

mini cucumbers

radishes (one bunch)

green onion (thinly sliced)

dill (roughly chopped)

olive oil

lemon juice

kosher salt and black pepper (to taste)

Slice

Thinly slice the radishes and cucumber with a knife or mandoline. I prefer a mandoline as it&#39;s super fast and keeps the slices uniform in thickness.

Stir

In a small bowl, stir together the olive oil, lemon juice, salt, and pepper.

In a medium mixing bowl, add the cucumber, radishes, green onion, dill, and dressing. Stir to combine.

Serve

Transfer the salad to a serving bowl and sprinkle a little extra salt and pepper, if you&#39;d like.

This Cucumber and Radish Salad with Dill is dressed in a sweet and tangy red wine vinaigrette and is an addicting recipe! A perfect low-carb, refreshing side that can easily be made ahead of time.

Tangy Cucumber and Radish Salad with Dill

cucumber (thinly sliced)

radishes (thinly sliced)

dill (chopped)

red wine vinegar

sugar

kosher salt (to taste)

black pepper (to taste)

Whisk together the red wine vinegar (3 tablespoons), olive oil (3 tablespoons, and sugar (1 tablespoon) in a the bottom of a large bowl until sugar is fully dissolved.

Add the cucumbers, radishes, and dill on top of the dressing.

Stir to coat the dressing on all the veggies.

Season with salt and pepper to taste. It&#x27;s best served immediately.

Thank you for sharing this recipe. We grew too many radishes in the garden, and I was looking for a way to use them. Made this for a family gathering, and there were no leftovers!  This surprised me, because radishes are not usually so popular. Will definitely be making this again.

Used fresh mint (in place if dill), and honey (in place of sugar). Put honey in microwave for 10 seconds to make it warm and easier to dissolve.  Added peas (thawed frozen) to provide texture &amp; bulk to presentation.  Also added a couple thin slices of red onions. Guests were a little wary of peas/radishes at first but once tried, loved it.  Will do it again.

Delicious and refreshing! Didn’t even need salt/pepper.
