Preheat oven to 350 degrees. Line a 8x8-inch metal baking pan with parchment paper, set aside.

In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl (using a hand held mixer), add the oil, sugars and vanilla. Mix on medium speed until combined, about 1 minute.

Add the eggs and yolk one at a time, mixing after each addition, then mix for 30 seconds. Let the mixture rest for 3 minutes, the repeat by mixing for 30 seconds. Repeat two more times.

In a medium mixing bowl whisk together the cocoa powder, flour, salt, baking powder, and espresso powder (optional). Slowly add the dry ingredients along with the chopped chocolate and continue mixing for 30 seconds after the last white streak disappears.

Pour the batter into the prepared pan and place in the oven to bake for 25-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and allow to cool in the pan for 30 minutes before slicing and serving.

Olive Oil Brownies

120 ml (1/2 cup) olive oil

(3/4 cup) caster sugar or granulated sugar

(1/2 cup) brown sugar

(1/2 cup) cocoa powder, sifted

(1/2 cup) plain flour flour

(1/2 cup) chocolate chips*

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Line an 8-inch square baking tin with baking or parchment paper.

In a large mixing bowl, add olive oil, vanilla and sugars and mix briefly.

In a separate bowl, add eggs and whisk with a fork for approximately 30 seconds or until combined.

Add eggs to sugar mixture, along with cocoa powder, flour and chocolate chips. Gently mix with a spoon or spatula to combine. Pour into prepared tin.

Bake for approximately 28-30 minutes or until a knife inserted in the middle comes out clean. Leave to cool slightly before removing from pan. They will firm up as they cool. Serve with ice cream or whipped cream.

Preheat the oven to 325°F.

Spray a nonstick 9 x 9 inch baking pan with cooking spray.

Beat the egg and egg white in a small bowl with a whisk.

In a large bowl combine the powdered peanut butter, cocoa powder, salt, baking soda and mix well with a spatula.

Add the egg and egg whites and stir.

Add water, honey, vanilla and stir with a spatula until combined.

Fold in the chocolate chips.

Pour the mixture into the prepared baking pan and bake about 30 minutes.

Set aside to cool, then cut into 12 bars cutting 3 rows x 4 rows.

PB2 Chocolate Brownies

These Small Batch Dairy Free Brownies are super easy to make. They are made with cocoa powder and oil, so are the perfect chewy brownies, and can easily be made into gluten free brownies. They are made by hand in a bowl, no electric mixer required!

Small Batch Dairy Free Brownies

brown sugar (light or dark is fine)

granulated sugar

egg,

vanilla extract or vanilla bean paste

Filippo Berio Extra Light Olive Oil

Dutch Process Cocoa (or you can use

flour (all-purpose

tsp espresso powder, optional

chopped dark chocolate, optional

Flaky Sea Salt for finishing, optional

Prepare your pan

Preheat the oven to 350°f / 180°c. Grease and line a 9”x5” (23x13cm) or similar size loaf pan with parchment paper, extending the paper over the side of the tin to give you a sling to use to remove the brownie when cooked.

Combine wet ingredients

In a medium bowl, combine the brown sugar, granulated sugar, and egg. Whisk for 1-2 minutes until the mixture has thickened and lightened in colour (alternatively use a handheld mixer). Add the vanilla and Filippo Berio Extra Light Olive Oil and mix to combine.

Combine Dry Ingredients

In a small bowl, sift together the cocoa powder, flour, salt, and espresso powder.  Mix to combine. Add to the wet ingredients and fold in with a spatula until just combined.

Bake the Brownie

Transfer the mixture to the prepared loaf pan, and spread in with a spoon or spatula. Top with the chopped chocolate. Bake for 20 to 23 minutes, until the brownie is set around the edges and a toothpick inserted into the center comes out with just a few moist crumbs attached. Allow to cool in the pan for 15 minutes then use the parchment paper to remove from the pan and allow to cool completely.

Slice using a sharp knife, wiping between slices to ensure clean cuts. Finish with flaky sea salt if desired. Store leftovers at room temperature in an airtight container.

This was a treat I discovered in lockdown, and brought yummy chewy comfort to difficult days. Still such an easy, quick, delicious treat when I want one.

I would give 10 stars if I could. This recipe is perfectly portioned for my 2 person household. And the results are decadent with gorgeous crinkly tops and such deep flavor. Chocolate lovers dream.

Can you replace the vegetable oil with plat butter? If you can what are the measurements? My husband and I are OBSESSED with these! Beyond five stars!!

These brownies are so amazing! Also love that they are made with olive oil and not coconut because ain’t nobody got time for melting/cleaning that off spoons etc haha. I have made these with both wheat flour and GF (Edmonds plain) flour and both results were great! GF was best the next day/fully cooled imo.

I made 3 batches of these using Orgran vegan egg replacer. An egg is usually 1tsp powder and 2 tbsp water. I used 2 tsp of powder as after whisking the sugar and "egg" with just 1 there was little change. I dont think it thickened much, I certainly had no cracking on the tops. I wonder if its worth trying with aquafaba? I made 1 with Bakels gf mix, this was the driest and baked the best. The second I made with a mix of freshly milled wheat and toasted malted wheat. The 3rd with freshly milled buckwheat. The latter was the wettest and probably needed longer baking as it was quite oily and really not baked in the middle. that said, the buckwheat was my favourite. I'd say using vegan egg replacer and gf flour worked the best though. love the small recipe format so I could try 3 different ones!

Preheat the oven and prepare a 8x8-inch baking pan with parchment paper.

Preheat the oven to 350°F and line an 8x8-inch aluminum baking pan with parchment paper. Leave parchment paper hanging over the sides of the pan so that you can easily remove the brownies later.

Whisk together the oil and sugars.

In a large mixing bowl, whisk together the melted coconut oil, brown sugar, and granulated sugar until the mixture resembles a paste that pulls away cleanly from the side of the bowl.

Add the eggs and vanilla extract.

Whisk in the eggs and vanilla extract until smooth and well combined.

Gently mix in the dry ingredients until just combined.

Add in the flour, cocoa powder,  and salt and whisk until just combined. A few flour specks are okay. Be careful not to over-mix the batter!

Transfer the brownie batter to the pan.

Transfer the brownie batter to the prepared baking pan. Make sure it is spread evenly in the pan and into the edges. Top with chocolate chips if desired.

Bake the brownies for 30-40 minutes.

You can use a boxed brownie mix to save some time as well. I made these gluten, dairy, egg, and refined sugar-free because I have food sensitivities. These would be the perfect dessert to make for the holidays or a fun activity to do with friends or your kiddos.

Make your brownie mix accordingly to the instructions(make sure to not over bake them so they will be somewhat gooey in the middle and easy to work with) Bake your brownie mix and then let it cool down for a few minutes but don&#39;t let them cool down too much to where they harden.(about 10 minutes)

Take the baked brownie mixture and form into about 12 cone shapes. (Like you would for a cake pop!)

Healthy Sweet Potato Brownies

½ tsp baking soda

½ tsp ground cinnamon (optional)

Cook the sweet potato according to your preferred method. I chop mine into large chunks and boil it in water for 15 to 20 minutes, or until the chunks of potato are very tender. Allow the potato to cool (I transfer it to a sealable container and refrigerate it). Once cool, remove and discard the peel. Note: you can cook the potato and refrigerate it up to 5 days in advance.

Preheat the oven to 350 degrees F and line a 9-inch square baking pan with parchment paper.

Mash the sweet potato into a bowl or measuring cup and measure out 1 cup of mashed potato.

Add the mashed sweet potato to a large mixing bowl along with the almond butter, eggs, pure maple syrup and vanilla extract and stir well until everything is well-combined (wet ingredients).

Stir in the cocoa powder, baking soda, sea salt, and ground cinnamon until a thick creamy batter forms (no need for a separate bowl here).

Add in the chocolate chips and stir until they are well-incorporated into the batter.

Pour the brownie batter into the prepared baking pan and spread it into an even layer. If desired, sprinkle with extra chocolate chips.

Bake on the center rack of the preheated oven for 23 to 28 minutes, or until the brownies reach desired level of doneness. For fudgy, gooey brownies, bake for 23 minutes. Brownies are best when baked to an internal temperature of 180 degrees Fahrenheit. Insert a digital thermometer into the center of the brownies and wait until the numbers stop moving to get an accurate read on their temperature.

Allow the brownies to cool completely (at least one hour) before slicing and serving. You can slice the brownies before they have finished cooling if you’d like, but the slices won’t hold together quite as well. If you’re fine with that, proceed!

Serve with a scoop of ice cream for an even more decadent dessert.
