Strawberry shortcake dessert cups are an easy and delicious treat! Moist vanilla cake topped with sweet strawberry sauce and cream cheese whipped cream! You can even make this recipe a no bake recipe! These individual dessert cups are great for parties and the perfect summer treat!

Strawberry Shortcake Dessert Cups

vanilla cake crumbs (*see ingredients for more information)

strawberries

sugar

oz cream cheese (cold)

tsp vanilla extract

heavy cream

strawberries (diced)

(If baking your own cake) Bake vanilla cake according to box mix directions or a homemade vanilla or white cake. Check out my recipes for Classic Vanilla Cake or Classic White Cake. *See ingredient information for no bake options.

Crumble the vanilla cake into small pieces. Portion the cake pieces into 28 2-ounce plastic cups, filling each cup about ½ full.

To make the strawberry sauce, combine strawberries and granulated sugar in a medium saucepan. Place over medium-low heat stirring occasionally. Cook the strawberries until softened and thickened, approximately 15 minutes. Break the strawberries up with a fork or potato masher. Transfer to a heat-proof bowl to cool to room temperature.

To make the cream cheese whipped cream, use an electric hand mixer or stand mixer fitted with a whisk attachment. Whip cold cream cheese and powdered sugar on medium speed until smooth. Scrape the sides and bottom of the bowl as needed. Add in the vanilla extract. Turn the mixer to low speed and slowly drizzle in the heavy cream. Once all the heavy cream is added, scrape the sides and bottom of the bowl. Turn the speed to medium-high and whip the frosting until stiff peaks form.

Portion the cooled strawberry sauce over the vanilla cake crumbs in the cups. Spoon or pipe on the cream cheese whipped cream. Add diced strawberries to the top of each dessert cup for garnish.

Seal the cups with a lid and chill. The cups can be served immediately or stored in the refrigerator for 2 to 3 days.

Mint Chocolate Dessert Cups

mint chocolate sandwich cookies

unsalted butter (melted)

oz cream cheese (room temperature)

tsp mint extract

drop green gel food coloring

chocolate chips

In a small bowl, combine mint chocolate sandwich cookie crumbs and melted butter. Mix to combine.

Portion the crumbs into 28 2-ounce plastic cups using a small cookie scoop or spoon. Use one of the plastic cups to press the crumbs into the bottom of the cup.

In another mixing bowl, combine room temperature cream cheese and granulated sugar. Cream together using an electric hand mixer on medium speed until combined and smooth.

Add mint extract, heavy whipping cream, and one drop of green gel food coloring if desired. Whip on medium-high speed until light and fluffy.

Fill a piping bag with the mint cream. Pipe the mixture into the cups until about 3/4 full.

To make the chocolate ganache, combine chocolate chips and heavy cream in a microwave-safe bowl and heat for 30 seconds. Mix until smooth. Transfer to a squeeze bottle or piping bag.

Drizzle the chocolate ganache over the mint cream. Sprinkle with additional mint chocolate cookie crumbs.

These Oreo Dirt Cups are fun treats kids of all ages seem to love!  The individual cups are filled with chocolate pudding and Oreo crumbs then topped with colorful gummy worms!!

Dirt Cups

chocolate sandwich cookies (ie. Oreos)

milk

instant chocolate pudding mix

tub whipped topping (thawed)

gummy worms

Place the cookies in a large resealable baggie and use a rolling pin to crush them into fine crumbs.  (You can use a food processor instead if you&#39;d like). Set aside.

Add the cold milk to a large mixing bowl.  Dump the two boxes of pudding mix into the milk and whisk until smooth.  Let set for 5 minutes to thicken.

Fold in the whipped topping until well-combined.

Fill each of 8 plastic cups with about 1/3 cup of the pudding mixture.

Sprinkle 1 heaping tablespoon of crushed Oreos on top.

Repeat for a second layer, using up the remainder of the pudding mixture and crushed Oreos.

Decorate the top with gummy worms.
