In a large skillet, sauté ground beef and ground pork sausage over medium-high heat. Use a spatula to break apart the meat and cook until most of the meat is no longer pink (about 4 to 5 minutes).

Add garlic, onion, pepper, and celery to the skillet and sauté an additional 4 to 5 minutes until the vegetables are softened.

Add salt and pepper (be cautious you do not oversalt), creole seasoning, rice, and beef broth. Stir and add thyme sprigs to the top of the mixture.

Bring the mixture to a boil, then turn down the heat and cover the skillet. Let simmer for 20 minutes.

Remove the thyme sprigs and fluff rice.

Add chopped parsley for garnish and serve.

½ lb ground sausage ((I use Jimmy Dean pork sausage))

Add ground beef, sausage and liver to a large saucepan over medium heat. Season with salt and pepper and cook, crumbling with a wooden spoon, until browned.

Add flour and stir. Add onion, bell pepper, and celery and sauté for 2 minutes. Add garlic, Cajun seasoning, cayenne, oregano, thyme and bay leaves and stir to combine.

Add rice and chicken broth. Bring to a boil, cover, reduce heat to low and simmer for 20 minutes. Remove from heat all allow to rest for 5 minutes. Remove lid, gently fluff rice with a fork, reapply lid and rest for 5 more minutes.

Garnish with green onion and parsley before serving.

This baked Cajun Dirty Rice recipe is brimming with heartiness, and flavor, and is so easy to make with flawless results! Oven-Baked Cajun Dirty Rice

Creole Cajun Seasoning– homemade

garlic paste

tomato paste

Steen’s pure cane syrup– (or dark corn syrup

Fresh chopped parsley, for garnish- optional

Prep the rice: Rinse the rice until the water runs clear. I like to place the rice into a large bowl, fill it with cool water, and then gently swish the rice around. Be careful not to aggressively handle the rice to not break the rice grains. Drain the water and repeat this process about 6 times to remove as much surface starch as possible. Then drain all water and set the rinsed rice aside until called for in the recipe, below.

Heat the oil in a large, deep oven-safe braiser (or dutch oven) over medium-high heat. When hot, add the onion, celery, and bell pepper and sauté the trinity mixture, stirring often until tender and golden, about 4-5 minutes. 

Add the andouille and continue cooking along with the trinity mixture until the sausage is golden brown, stirring often, about 2-3 minutes. Push the sausage/veggie mixture over to one side of the pan and then add the ground beef. Use a wooden utensil to break up the beef and stir everything well to combine, cooking until the beef is browned, about 4-5 minutes. Season the mixture with Cajun seasoning and stir well to fully combine. Reduce the heat to medium/medium-low as needed if things are browning too quickly.

Stir in the garlic + tomato paste along with the syrup and continue cooking until the paste is dissolved and fragrant, about 1 minute.

Over medium heat, add the rinsed rice into the pot, stirring well to coat with the other ingredients. Let the rice toast up in the mixture for 1-2 minutes, stirring often. Then pour in the broth and stir until fully incorporated. Remove the pan from heat and tent the pan with foil covering tightly. 

Bake the rice for 30 minutes at 350°F. Then remove the foil and continue baking for another 10-15 minutes until the rice is tender and lightly toasted.

Remove the rice from the oven and let the rice sit, undisturbed, for at least 10 minutes. Afterward, use a fork to fluff the rice. Taste the rice and season with more Creole Cajun seasoning to preference, if needed. Serve the Cajun dirty rice immediately with a garnish of chopped parsley, if desired, as-is or alongside your favorite main entree. Enjoy!

long-grain rice, rinsed, (I use Uncle Ben's converted rice)

Worcestershire sauce

creole seasoning, (I use Tony Chachere’s)

salt and black pepper

In a large Dutch oven or 6 to 8-qt saucepan with a lid, sauté all the meat (sausage, beef, and liver) over medium heat, breaking the large pieces with a wooden spoon as it cooks. Season with a little salt and pepper. Cook a few minutes until the meat is no longer pink.

Add the bell pepper, onions, and celery to the pot. Cook for 5-7 minutes, until the veggies soften and start to brown.

Add the rice, green onions, and garlic; continue to stir for 1-2 minutes until the rice begins to turn opaque.

Add the Worcestershire sauce, stock, and Cajun/Creole seasoning. Mix well, lower heat to LOW, and cover. Simmer for 20 minutes or until the rice is tender and all the liquid has been absorbed.
