The BEST&nbsp;Divinity Candy&nbsp;I've ever had! This wonderful candy recipe is the perfect addition to any celebration but is especially loved during the holiday season. This snow white confection is fantastically sweet, chewy and wonderfully decadent - a truly divine treat to share with friends and family.

Microwave Divinity Candy

egg whites (room temperature)

sugar

water

corn syrup

salt

pecans (optional)

vanilla extract

Line baking sheet.

Line a large baking sheet with parchment paper and set aside. Butter two teaspoons and set aside.

Egg whites.

Let egg whites come to room temperature for 30 minutes.

Make syrup.

In a large microwave safe glass measuring cup, combine sugar, water, corn syrup and salt. Heat for 4 minutes on high heat and stir.

Cook syrup.

Continue cooking syrup in 2 minute increments, stirring in between until syrup has reached the hard ball stage of 260°F. Once syrup has reached 250°F, reduce cooking increments to 1 minute each, stirring and checking temperature in between.

Beat egg whites.

When the syrup is nearly done (with about 4 minutes remaining or when the syrup is between 240°F and 250°F), start beating the egg whites on medium speed until they are at stiff peaks. (Note: When the beater is lifted up, the egg white peaks should stand straight up and they should not slide around in the bowl when the bowl is moved from side to side.)

Add hot syrup.

Increase mixer speed to high and slowly and gradually pour in the hot syrup being extremely careful.

Beat candy.

Continue beating the candy mixture for 15 to 20 minutes or until the candy loses it&#39;s gloss and holds it&#39;s shape. You can text your candy by taking a spoonful of the mixture and dropping it onto the parchment paper.

Add pecans and vanilla.

Once your candy has reached this point, quickly stir in the pecans and vanilla extract.

Scoop candy.

Use the buttered teaspoons to scoop out rounded teaspoons of the candy and drop onto the prepared parchment  paper lined baking sheet. Repeat until all candy has been scooped out.

Let sit.

Let the divinity stand at room temperature until dry to the touch, usually overnight is perfect.

With only a handful of ingredients, this crunchy and sweet divinity recipe is a classically simple candy that&#039;s perfect for sharing!

Divinity Recipe

pecans (or whole pecans to place on top instead, if desired)

Place egg whites in the bowl of a stand mixer and let stand at room temperature for 30 minutes.

Line 3 baking sheets with parchment paper and set aside.

In a heavy saucepan over medium heat, combine sugar, syrup, and water. Stir constantly to dissolve sugar. Once sugar is dissolved, continue to cook over medium heat without stirring until the temperature reaches 252°F (or the “hard ball” stage: about 8-10 minutes).

Just before the temperature is reached, beat egg whites in a mixing bowl on medium speed until stiff peaks form.

Once temperature is reached, slowly add hot sugar mixture in a thin stream over the egg whites, beating constantly and scraping the sides of the bowl when needed.  Add vanilla. Beat until candy holds its shape and is not shiny anymore (about 5-6 minutes).

NOTE: Do not overmix or candy will get stiff and crumbly.

Immediately fold in pecans, if desired.

Quickly drop by heaping spoonfuls onto prepared baking sheet, while the candy is still hot. This works best with two people dropping spoonfuls at the same time since the candy cools down very quickly.

Let the candy set until it is dry to the touch.

Stand Mixer

Line a baking dish with wax paper. Grease 2 spoons with non-stick spray.

Add sugar, corn syrup, water, and salt to a 2-quart saucepan over medium heat. Stir until the sugar is dissolved.

Place a candy thermometer in the saucepan. Cook the syrup, without stirring, until it reaches 260 degrees Fahrenheit (hard-ball stage), about 8-10 minutes.

Meanwhile, beat egg whites with a stand mixer until stiff peaks form, about 4-5 minutes. Start at low and gradually increase the speed until it reaches medium-high.

Once the syrup reaches 260 degrees Fahrenheit, gradually pour the syrup in a thin stream into the bowl of egg whites while still beating at medium-high speed.

Add the vanilla and continue to beat, scraping the sides of the bowl, until the mixture is able to hold its shape, about 8 to 9 minutes. The mixture should have also turned from glossy to matte.

Stir in the chopped nuts and cherries (if using).

Using the greased spoons, quickly drop mounds of candy onto the wax paper, creating swirls on the tops with the spoon.

Let the candy cool for about 2 hours. It should be room temperature. Serve and enjoy!

Pure vanilla extract is made by macerating and percolating vanilla pods in a solution of ethyl alcohol and water. Set a large 6-8 quart saucepot over medium heat. Attach a candy thermometer to the side of the pot.

Add the sugar, corn syrup, water, and salt to the pot. Bring to a boil. Once boiling, lower the heat a little if needed and watch the thermometer. When it reaches 260 degrees, remove the pot from heat.

Meanwhile, set out a stand mixer. Place the egg whites and cream of tartar in bowl of the mixer. Using the whip attachment, whip on high until a stiff meringue forms. Turn off the mixer.

Once the sugar mixture reaches 260 degrees F, turn the mixer on high. Hold the saucepot carefully with potholders and VERY SLOWLY pour the sugar syrup into the egg whites. Take your time to pour a slow thin stream so the sugar beats gently into the whites. Once all the syrup is in the mixer, add the vanilla extract and continue to beat another 5-10 minutes, until the mixture is white, and stiff enough to hold its shape when you lift it with a spoon.

Finally, beat in the chopped pecans. Turn off the mixer.

Set out a sheet of parchment or wax paper. Spray two spoons with nonstick cooking spray (or butter them.) Then use the spoons to portion out small 2 teaspoon dollops of Divinity Candy. Place onto the paper.

Repeat, re-spraying the spoons as often as needed, until all the candy is portioned out into little pillows.

Allow the candy to set and dry for 2 hours, or until dry to the touch. If the air is humid this could take up to 12 hours. Once dry, move to an airtight container.

This is the first divinity recipe that I’ve ever tried ever. Wow I followed the recipe exactly exactly the way it was posted and for my very first time making this divinity turned out perfect. I truly recommend this recipe it is the absolute best. ⭐️⭐️⭐️⭐️⭐️ This is a five star recipe plus.
