White Almond Sour Cream Cake~Doctored Cake Mix

box cake mix, sifted (we use cake mix without pudding in the mix)

(121 grams) all purpose flour

(200) granulated sugar

salt

(242 grams) sour cream

(240 grams) water

eggs

(8 grams) vanilla

almond

How to Make Box Cake Better

box yellow/white cake mix*

all-purpose flour

sugar

tsp salt

eggs (room temperature)

water

Tbsp vegetable oil

sour cream

vanilla

Preheat oven to 325°F.

Grease and flour two 8&quot; cake rounds (I use Homemade Cake Release), line with parchment.

Wrap cake rounds with damp Evenbake strips (optional).

Combine all dry ingredients and whisk together.

Add wet ingredients and mix until combined. I use my KitchenAid on low for 2 minutes but you can also do this by hand.

Divide the batter between the pans and bake for approximately 50 minutes.

Cool in pans on wire rack for 10mins, then turn cakes out onto wire racks to cool completely.

vanilla pudding mix (2 (3.4 ounces) boxes)

semi-sweet chocolate chips (1 1/3 cups)

corn syrup (or butter if you prefer)

Prepare and bake the cake in a 13x9 pan according to the package instructions. Let cool completely before poking holes across the cake with the bottom of a wooden spoon. Be sure to poke all the way to the bottom of the pan.

In a large bowl, whisk together pudding, milk, and vanilla, but don&#039;t let it thicken. Pour the thin pudding over cake in an even layer, poking down into the holes if necessary. 

Refrigerate the cake for one hour.

In a large mixing bowl, add eggs, cream cheese milk and mix until smooth.

Add cake mix, lemon zest, lemon juice, lemon extract and mix until just combined.&nbsp;

Pour batter in a greased and floured bundt pan. Use a 10-12 cup bundt or tube pan.&nbsp;

Bake at 350 degrees F for 50-55 minutes or until an inserted toothpick in the center comes out clean.&nbsp;

Allow the cake to cool down for 15 minutes. Then, flip it onto a cooling rack gently and remove the pan.&nbsp;

Allow it to cool down completely.

While it's cooling, prepare the glaze by mixing together powdered sugar, lemon juice, melted butter, lemon extract, zest until thick, smooth and creamy.&nbsp;

In a large mixing bowl, add eggs, butter, milk and mix until smooth.

Add cake mix and coconut and mix until just combined.&nbsp;

Prepare cake pan with crunch topping: Grease a 10-12 cup nonstick bundt pan generously with butter. Sprinkle coconut and tap it around until the bottom and sides are fully coated.&nbsp;Tip: Use a simple bundt pan with smooth sides without any designs because that makes it easier to remove the baked cake.&nbsp;

Pour batter in this prepared pan.&nbsp;

Bake at 350 degrees for 40-45 minutes or until an inserted toothpick in the center comes out clean.

Allow the cake to cool down and then, remove it from pan. You may have to run a knife around the pan to help loosen it. Place it on a cake stand, bottom side facing up and top side facing down.&nbsp;
