No Yeast Fried Donut Holes (click for recipe)

½ Tbsp brown sugar (tightly packed)

Prepare your filling first.

Cream together cream cheese and butter.

Gradually add powdered sugar, until combined.

Stir in brown sugar and vanilla extract.

Scrape down sides and bottom of bowl and stir again, to ensure everything is well-combined.

Scrape the frosting/filling into a Ziploc bag and snip off a corner.

Line a cookie sheet with wax paper, and pipe 1 ½ - 2 tsp-sized mounds of frosting (the recipe should make 26 donuts with filling, but if you have extra frosting just keep piping it in case you are able to get more donuts out of the dough).

Place in freezer while you prepare your dough.

Follow directions in Fried Donut Holes Recipe to step 4 (forming dough into cohesive ball).

Transfer dough to a well-floured surface. If the dough is sticky, work in flour until it is manageable.

Tear off 1 Tbsp-sized pieces of dough and roll into a ball. Remove one cream cheese frosting mound from the freezer and press in to the center of the dough ball. Be sure to seal the frosting in well -- rolling the ball in the palms of your hands until no seams exist-- otherwise the frosting may leak out while the donut holes are frying.

Repeat until all dough is used, filled with frosting, and rolled seamlessly.

Fill a medium-sized saucepan 2-inches deep with your oil and set over medium-high heat.

Use a candy thermometer (make sure it isn't touching the bottom of the pot) to monitor your temperature, and heat oil to 350F (you will have to monitor the heat pretty regularly and may need to increase/decrease your stove temperature to keep it consistent).

While your oil is heating, prepare your cinnamon/sugar mix by stirring together cinnamon and sugar in a small dish. Set aside.

Prepare two plates for your fried donut holes by lining them generously with paper towels.

Once oil has reached 350F, very carefully fry your donut holes, about 3-4 at a time, carefully transferring them to the oil with a slotted spoon (don't drop them in or the oil may splash, lower them into the oil instead).

Fry donut holes for 2-3 minutes*, remove carefully with a slotted spoon, and place them on a paper towel laden plate. Allow them to sit for about 30 seconds and then use another spoon to transfer them to your cinnamon/sugar dish, roll them in the topping until fully covered, and then transfer to your other paper towel lined plate.

Repeat until all donut holes are cooked and have been rolled in cinnamon sugar.

Note: make your own pumpkin pie spice by mixing 2 tablespoons cinnamon, 1 tablespoon ginger, 1 tablespoon nutmeg, and ½ tablespoon cloves; use 2 teaspoons in the dough, and 3 tablespoons in the topping mixture.

In a large bowl, mix together flour, sugar, baking powder, pumpkin pie spice, and salt.

In a separate bowl, mix together pumpkin puree, egg, and butter.

Pour wet mixture into dry mixture and stir together with rubber spatula until fully incorporated. Set aside.

Heat oil in a frying pan to 325˚F (160˚C).

While oil is heating, use your hands to shape and roll the pumpkin donut dough into balls. (Greasing your hands with oil will make this process much easier).

Fry the dough balls until golden brown, about 4-5 minutes. (For best results, fry only 3-4 at a time).

Cookie Dough Stuffed Donut Holes

¼ cups (175 grams) all-purpose flour, heat treated

½ cup (113 grams) unsalted butter,

½ cup (95 grams) granulated sugar

light brown sugar, packed

¼ teaspoon salt

tablespoons (45 milliliters) milk

tablespoon (15 milliliters) vanilla extract

1/2 C Ghirardelli 60% Cocoa Baking Chips – split

Preheat the oven to 350°F. Bake the flour on a baking sheet lined with parchment paper for approximately 10 minutes, or until the temperature of the flour reaches 160°F. Stir the flour halfway through and allow it to cool completely. Sift the flour through a fine mesh sieve.

Soften the butter in the microwave for 20-30 seconds. In a large mixing bowl, combine the butter, granulated sugar and brown sugar and beat until creamy.

Add the heat-treated flour, salt, vanilla extract and 1 tablespoon of milk. Beat together until the dough starts to form. Add additional milk as needed until the dough reaches your desired consistency.

In a food processor, take ¼ C baking chips and blend to break into tiny pieces. Add both chocolate baking chips and shredded baking chips and mix until incorporated into the dough

Roll the cookie dough balls, about 1 tablespoon for each. A small cookie scoop helps with that. Set aside.

In a medium sized pot, empty a full container of vegetable oil. Attach a candy thermometer to the right side of the pot. Heat oil over medium heat until it reach 360-375° F. Turn your heat down slightly to prevent the oil from getting too hot. Use extreme caution, oil will be very hot.

Take one of the biscuits and roll out very thin, to about the thickness of a nickel. Cut out circles about 2-2.5” in diameter. Wrap biscuit dough around a ball of cookie dough. Make sure to pinch the edges tightly and roll the biscuit dough in your hands to smooth.

Once oil is heated, slowly drop dough into oil. Bake for about 20-30 seconds a side until golden brown. Remove with a pair of tongs and set on a paper towel lined plate to drain the excess oil.

Prepare the chocolate sauce. In a microwave proof bowl, combine 1 cup of chocolate baking chips and 4 tablespoons of heavy whipping cream. Microwave on high for 60 seconds. Remove from microwave and whisk until smooth.

When finished deep-frying, leave your candy thermometer in the oil until it is completely cooled.

In a large bowl whisk together the flour, baking powder and salt.  Make a well in the middle and add the sugar, eggs, zest, vanilla, softened butter,  salt and liqueur (or Orange Juice). 

Mix together with a fork until almost combined then move to a lightly floured flat surface and knead into a smooth soft dough. Wrap in plastic and let rest 30 minutes at room temperature.  

Cut a piece of dough at a time, and roll the dough to form a 1 inch (2 cm) thick rope. Cut the rope in pieces the size of walnuts and roll between your hands to form balls.

Meanwhile, start heating the oil (in a large fryer or deep pot halfway full), make sure the temperature remains between 335 - 345F (170-175C), (too high and they cook on the outside but not in the middle / too low and they remain soggy). Once oil is at the correct temperature, fry a few Castagnole at a time, until they are golden brown and nicely puffed. Approximately 2-3 minutes, but turn often so they brown on all sides. Drain on paper towels, when cool enough to touch, but still quite warm, roll in granulated or turbinado sugar. Serve immediately. Enjoy.

Bongiorno Y'all   my Mom made something like these using pizza dough which was left over from da pizza just served and what She called pizza fretta dusted with sugar was dessert    sausage shape fried in olive oil  puffed up  Pilled high like a Pyramid oh so Good.

My Grandmother came from the Calabria region of Italy.  We had a large family; and every Christmas the family would gather together and make "cipole"  I probably haven't spelled it correctly, but it was not zeppole.  It is a potato based dough, shaped into donuts and deep fried.  They were not dipped in sugar.  We used to wait , impatiently, for them to come out of the hot oil and argue who would get the first one.  Day two, they were still edible, but getting chewy, day three we dipped them in our sweet tea to soften them!!!  Thank you for your Italizn memories, they bring back some great memories.

Homemade Donut Holes

all-purpose flour (, (I always use unbleached))

Tbsp baking powder

tsp kosher salt

tsp ground nutmeg (, optional)

milk (, I use whole)

- 1 tsp vanilla extract

Line a large baking sheet with a few layers of paper towels then top with a wire cooling rack.&nbsp; Set aside.

Pour oil into heavy bottomed pan (dutch ovens or deep cast iron pans are fabulous for frying), until oil is about 2 inches deep.&nbsp; Heat over MED heat until oil comes up to 350 F degrees.&nbsp; Adjust heat level as needed to maintain the 350 degree temperature.

While oil is heating, whisk together flour, sugar, baking powder, salt and nutmeg in a large mixing bowl.&nbsp; In a separate mixing bowl, whisk together the milk, egg and vanilla.

Pour the wet ingredients into the mixing bowl with the dry ingredients and stir together for a few seconds with a wooden spoon.&nbsp; Add melted butter and stir until mixture forms a thick batter.

Once oil has reached 350 F degrees, use a cookie scoop to scoop up batter and drop them into the hot oil.&nbsp; Be careful when dropping the batter, do it from just above the oil so you minimize splashing!&nbsp; Hot oil is no joke and it hurts like crazy if you get burnt!

Add about 8 donut holes to the oil in one batch, and fry about 2 minutes per side.&nbsp; Remove fried donuts to prepared cooling rack/baking sheet.

Add about a cup of granulated sugar to a shallow bowl.&nbsp; When you take the fried donut holes out of the oil, add them to the sugar bowl and toss to coat them in sugar.&nbsp; Transfer to cooling rack to cool down.

FOR SUGARED DONUT HOLES:

Let donut holes cool on wire rack for a minute or so, then dip into ganache sauce.&nbsp; Return to cooling rack to finish cooling.&nbsp; Alternatively, dip a fork in the ganache sauce and wave it back and forth over donut holes to drizzle them with the sauce.

FOR GANACHE-DIPPED DONUT HOLES:

Let donut holes cool completely.&nbsp; Prepare a piping bag fitted with a round piping tip (alternatively, snip off just the tip of a corner of a ziploc bag and add piping tip to bag so it comes partially through the hole).&nbsp; Use the empty bag with the tip to poke a hole in the donut hole, being careful not to poke all the way through the other side.&nbsp; Fill bag with cooled or slightly warm raspberry sauce, and pipe into hole.&nbsp; Garnish with a little orange zest if you'd like.

FOR RASPBERRY-FILLED DONUT HOLES:

Every time i crave a donut is always late and i end up looking up a recipe to then throwing the oily dough soup in the trash with no donut. But i decided to give it another shot this random donut craving day and came across this recipe. And finally accomplished a donut on a random donut craving day!! The best!! Thank you sooo much!!! I followed your advice and fold the mix together instead of over mixing and used a tbsp and an extra spoon to form the balls a bit before scrapping the sticky mixture into the hot oil. 3 min each side and took half the mix out and added semisweet coco powder. Tastes close to dunkin but a-lot more moist and fluffy. I just don’t know how to store the left overs, whether to leave it outside or refrigerate. And how do i bring it back to life when i want it again.

I followed the recipe and they turned out perfectly. I tossed mine in a lemon-orange syrup. Divine. Don't leave out the nutmeg..adds just the right note of smokey warmth.

This is a wonderful recipe!  Delicious and so easy.  I actually added a bit more sugar to my batter and on one half I poured cocoa powder and chocolate chips into the batter and they worked great.  Did not add nutmeg as my hubby hates it.  Forgiving recipe!  Nice job developing this one.  We loved them.

I find my oil takes about 20 minutes or longer to come to temperature, so I typically start the oil just before I start my donuts. Fill a medium-sized, heavy-bottomed saucepan 2-3 inches (5-7cm) deep with your oil over medium heat. Use a candy or frying thermometer (make sure it isn&#39;t touching the bottom of the pot) to monitor your temperature and heat oil to 350F (175C). Monitor the heat pretty regularly and note that you may need to increase/decrease your stove temperature to keep it consistent.

Combine flour, sugar, baking powder and salt in a large bowl and whisk until well-combined.

Use a box grater go grate the butter into small pieces and then add to the flour mixture and stir until well-incorporated (visible butter pieces will still remain). Note: If you do not have a box-grater, use a pastry cutter to cut the butter into the dry ingredients until the mixture resembles coarse crumbs, instead.

Add milk and gently stir until all ingredients are combined and the dough clings together.

Transfer dough onto a well-floured surface, and knead gently until it forms a cohesive ball. If dough is too sticky to manage, continue to work in flour until it is smooth and manageable (I've found on hot days or if my butter isn't cold enough the dough can be quite sticky)
