This bread is rich and chocolatey, but you'll still taste the banana! I use and recommend Hershey's Special Dark cocoa powder in this recipe.

Double Chocolate Banana Bread

butter, (softened)

brown sugar

white sugar

vanilla extract

bananas, (mashed - about 1 cup)

sour cream

all-purpose flour

cocoa powder

baking soda

salt

milk chocolate chips

Preheat oven to 350 degrees. Spray a 9x5x3 loaf pan with non-stick spray.

Add the butter and sugars to a mixing bowl and mix until well combined.

Beat in the egg, vanilla, banana, and sour cream.

Stir in the flour, cocoa powder, baking soda, and salt.

Pour mixture into prepared loaf pan.

Sprinkle the top with chocolate chips and gently press them into the batter.

Bake for 70 minutes or until a tester comes out clean. If you under bake this, the center will sink upon cooling.

Let bread cool completely before cutting and serving.

PLEASE NOTE: I baked this bread in a ceramic loaf pan. If you're using a glass or metal pan, your baking times may vary. Keep an eye on the bread and check with a tester before removing from the oven.

Preheat oven to 400 degrees. Grease a 9 inch round cake pan or cast iron skillet.

Add the flour, cornmeal, sugar, salt, and baking soda to a mixing bowl and stir to combine.

Add the oil, egg, and buttermilk to a small bowl and whisk to combine.

Add the wet ingredients to the dry and stir until just combined with a few lumps remaining.

Spread mixture into the prepared pan and bake for 25 minutes or until a toothpick inserted near the center comes out clean.

Cool for 5 minutes before slicing and serving.

Here’s another one to add to your favorite carrot recipes! Finnish Carrot Bread Rolls. These bread rolls are a comforting combo of softness and sweetness, and they’re not even that complicated to prepare. A very forgiving carrot bread recipe!

Finnish Carrot Bread Rolls Recipe

milk, warm

active dry yeast

carrots, (grated, (about 2 medium-sized carrots))

tbsp honey

butter, (unsalted, softened)

Combine warm milk and yeast.  Mix and set aside.

Combine all-purpose flour, salt, grated carrots, and honey in a mixer bowl.

Use the paddle attachment to mix.

Once the yeast mixture is ready, add it into the mixer bowl and use a dough hook to mix.

Add butter and mix until the dough becomes smooth. If the dough is too wet, add a tablespoon of flour (or two, one at a time).

Form the dough into a ball and place it into an oiled bowl.  

Cover with a clean kitchen cloth and set aside until the size of the dough has doubled. (It generally takes at least an hour for me.)

Preparing the carrot bread dough:

Once the dough is ready, divide it into 12 equal portions and form each section into a ball.

Place each ball of dough on a baking pan lined with parchment paper. Leave enough space in-between. 

Cover with a clean kitchen cloth and set aside for 30 more minutes, or until each roll has doubled in size.

Preheat oven to 200°C (375°F).

When the oven is ready, remove the kitchen cloth covering the carrot bread and place the baking pan in the middle of the oven.

Take your Finnish carrot bread rolls out of the oven after 20 to 25 minutes or when their top turns golden in color.

Set aside to cool slightly, then serve.

When you want a sweet treat that satisfies your cravings, try this Blueberry Cream Cheese Loaf. The recipe is simple, making it easy for you to create a sweet loaf consisting of fresh blueberries.

Blueberry Cream Cheese Loaf

unsalted butter

eggs (lightly beaten)

milk

lemon

lemons

all purpose flour

baking powder

blueberries

cream cheese

Preheat the oven to 350 F / 176 C and grease a 9x5 inch loaf pan.

In a medium bowl, mix butter and sugar until light and fluffy like a frosting. Now add eggs, milk, vanilla, lemon juice and lemon zest. Combine until evenly incorporated and smooth.

In a large bowl, combine flour, baking powder, baking soda and salt. Make a well in the middle and pour wet ingredients in the bowl. Mix but don’t over mix.

Gently fold in blueberries and cream cheese. Pour batter in loaf pan.

Bake in the middle of the oven for 60 to 70 minutes or just until a skewer comes out clean. Cool loaf for 20 minutes in the pan before removing from the mold.

Swedish Saffron Buns, also called St Lucia Buns or Lussekatter, are sweet buns that are great for snacks, dessert, or breakfast.  Try making them at home!

Lussekatter Recipe (St. Lucia Buns)

milk,

saffron

& 1/2 tsp active dry yeast

sugar, (heaping)

butter, (unsalted & melted (about 5 tbsp))

pcs raisins

tbsp milk, (for brushing buns)

Combine 1/3 cup warm milk and saffron, then set aside.

Combine 1/3 cup warm milk and active dry yeast; set aside until foamy.

Using a medium-sized bowl, sift and combine flour and salt.  

In a separate and larger bowl, mix sugar and melted butter.

Add egg yolk, saffron &amp; milk mixture, and yeast mixture; mix to combine.

Add sifted flour and salt.  Mix to form a dough.

Knead your lussekatter dough until smooth.

Place dough into an oiled bowl, cover with a clean kitchen towel, and set aside until it doubles in size.

Making lussekatter dough:

Remove your lussekatter dough from the bowl and divide it into 12 equal portions.

Roll each portion into a thin log (like a long cigar) to create a bun, approximately 40 to 45 cm.

Start rolling from opposite ends and stop in the middle, forming an &#39;S&#39; figure.

Place a raisin on each side, middle of each rolled end.

Place your St. Lucia buns on a baking tray lined with a baking sheet -- keep some space between buns.

Cover with a clean kitchen cloth and set aside until the lussekatter are slightly puffy.  (It usually takes 30 to 60 minutes.)

Preheat the oven to 200°C (375°F).

Brush the buns with milk.

Place the baking tray in the middle of the oven for 10 to 12 minutes or until the buns&#39; tops have turned slightly golden.

Remove the tray from the oven and serve your lussekatter immediately.

Swedish Cheese Buns Recipe (Ostfrallor)

& 1/4 tsp yeast

milk, (warm)

& 1/2 tsp honey

butter (about 2 tablespoons), (softened)

cheese, (grated & heaping)

Start by combining warm milk with 1/2 cup of warm water and the yeast. 

Mix and set aside until it becomes foamy.

Using your stand mixer&#39;s bowl, combine flour and salt.

Add the yeast mixture, honey, and softened butter.

Use a paddle attachment to mix until a dough starts to form.

Switch to the dough hook attachment and continue mixing until you get a smooth dough.

Form the cheese bread dough into a ball and place it in an oiled bowl.

Cover it with a clean kitchen towel and set aside until it doubles in size.  It typically takes about 90 minutes.

Punch the dough in the center to deflate it and transfer it on a flat surface to knead it a bit.

Cut it into six equal portions.

Form each portion into a ball and place each ball on a baking tray lined with baking paper.

Cover with a kitchen cloth and set aside until they increase in size (usually takes at least 30 minutes).

Preparing  cheese bread dough:

Once the buns are almost ready, preheat your oven to 220°C (400 to 420°F).

Prepare the egg wash by mixing the egg with two tablespoons of water.

Brush each bun with the egg wash, then add the grated cheese on top (generously).

Place the baking tray in the middle of the oven for 25 to 30 minutes, or until they turned golden.

Set aside to cool.

Serve your cheese buns with your favorite marmalade, butter or with some cured meat for sandwiches!
