Chickpea Greek Salad

cups mixed greens

(15 ounce) can chickpeas, rinsed and drained

cup grape tomatoes, halved

2 Persian cucumbers, halved and sliced

cup red onion, diced

cup kalamata olives, pitted

cup feta cheese, crumbled

tablespoons olive oil

juice from 1/2 lemon

teaspoon dried oregano

In a large serving bowl, combine the salad ingredients including mixed greens, chickpeas, tomatoes, cucumbers, red onion, cucumber, olives and feta cheese. 

In a small mixing bowl, make the dressing by whisking together olive oil, lemon juice, oregano, salt and pepper.

Pour Greek salad dressing over the salad and toss to combine. Add more salt and black pepper to taste.

This Easy Chickpea Salad is fresh, flavorful and perfect for lunch!

Easy Chickpea Salad

(15 oz) can chickpeas, drained and rinsed, or

cherry tomatoes,

feta cheese

red onion

herbs,

olive oil

red wine vinegar

dijon mustard

maple syrup

garlic,

Italian herbs

Salt and pepper,

Add all the dressing ingredients to a large bowl and mix until combined.  Or, mix them together in a small jar or bowl.  Add in the remaining ingredients and mix again until everything is coated with the dressing.

Enjoy salad by itself or eat with my favorite Pan Fried Pita Bread.

Delish. My husband does not like cucumbers so I mixed everything but cucumbers and split the salad using cucumber in mine and yellow summer squash in his. Both were perfect

This Chickpea Salad is quick, easy and full of fresh flavors and crunchy texture. Made in one bowl with a simple lemon olive oil dressing, it all comes together in about 20 minutes!

Chickpea Salad

cucumber, chopped in 1/2 inch chunks

cherry tomatoes, sliced

red onion, diced

parsley, chopped

fresh mint, chopped

avocado (see notes)

lemon juice

salt

pepper

In a bowl add chickpeas, cucumber, tomatoes, red onion, parsley, mint. Cut the avocado into chunks (do this after everything else is prepped to prevent it from turning brown).

Pour lemon juice and olive oil over the top. Add salt and pepper. Mix and serve.

Delicious chickpea &#039;tuna&#039; salad recipe with healthy ingredients like Greek yogurt, fresh vegetables and herbs, and chickpeas. It&#039;s a quick lunch and a delicious change from a traditional fish or chicken salad.

Chickpea 'Tuna' Salad

celery (diced)

shallot (diced)

tahini

Zest and juice of ½ lemon

Greek yogurt

Dijon mustard

black pepper

dill

Rinse and drain chickpeas, reserving about 2 tablespoons of the liquid from the can. In a large bowl, combine chickpeas and reserved liquid. Use a potato masher to mash the chickpeas to your desired consistency. Add celery and shallots and fold until incorporated.

In a small bowl, whisk together the tahini, lemon, Greek yogurt, Dijon mustard, salt, pepper. When the dressing is smooth, pour over the chickpeas, then sprinkle with dill. Mix together until combined. Serve immediately, or store in the fridge in an airtight container for up to 3 days.

Made this for lunch this week and enjoyed it stuffed inside pita pockets. So good! The only thing I changed is I added some dill pickle relish because that's a must for me in tuna salad. Otherwise I followed the recipe as written and will definitely be making again!

Made this for lunch today, and it was delicious! Didn’t have a shallot or fresh dill so I swapped in 1/3 of a finely diced red onion and some fresh parsley. Threw in some capers and a bit of their juice, YUM. Thanks for a fabulous recipe!

This recipe is mind blowing! I have replaced Tuna with sprouted moong as I am vegetarian. The taste is amazing.

I love toasts (avocado, salmon, tuna etc) and this was just another yummy toast that I made with Trader Joe’s sourdough bread. Easy to make and very yummy. I sprinkled with parsley instead of dill.

So quick and easy to whip up! This turned out delicious, I’ll first enjoy with crackers and then maybe on toast for tomorrows lunch. I feel like this is a hit to keep me out of a lunch slump!

Made this dish, loved it.  Enjoyed eating it as a spread on a slice of bread.  It seems to smell like tuna each time I opened up the container I stored it in.  Guess why it was called Chickpea 'Tuna' Salad.  I left out the celery as my husband is allergic to it, added a spicy seasoning and some hot sauce to it.  I didn't have fresh dill so used dried dill.  I will make this again.

This 15-Minute Mediterranean Chickpea Salad is loaded with delicious and filling veggies, and is made in just 15 minutes! Perfect for meal prep!

15-Minute Mediterranean Chickpea Salad (Meal-Prep Friendly)

chickpeas (drained and dried)

cherry tomatoes

English cucumber

vegan feta cheese

parsley (stems removed)

extra virgin olive oil

balsamic vinegar

sea salt

In a large mixing bowl, add the chickpeas, cherry tomatoes, red onions, cucumber cubes, feta cheese and parsley.

Pour the vinaigrette over the salad and toss again to combine.

OPTIONAL, but makes a delicious difference: Cover the salad and let sit for 30 minutes to up to an hour so that all the ingredients are completely soaked in and the flavours combined. Serve and enjoy!

Love this recipe! It is so good as is and also perfect for a base...don't like Dijon use whole grain old style mustard...lots of zucchini on hand sub or add with cucumber....need more protien add protien pasta. I had no feta cheese this week and it was still so good! I did have some olives so threw those in.  Thank you so much for sharing this it has been my weekly meal prep for lunch for the last month and such a good recipe for using what you have on hand!

This has to my one of my favorite meal prep recipes. I make this all the time. Quick, fresh, yummy! I am not vegan, so in order to meet my needs, I add very finally chopped chicken tenderloins that I marinate. I could eat this every week! 

Really good. I don’t like tomatoes 🍅 that much so I added extra cucumber. It wasn’t as pretty as yours but the taste is amazing. 

This was a big hit at our family gathering!  I doubled the feta and used aged balsamic vinegar, 10/10!
