Easy pizza toast is the ultimate after school snack for kids (and grown-ups will love it too). Use any toppings of your choice in this 5-minute treat.

Easy Pizza Toast

bread

Pizza sauce

mozzarella

oregano

Pre-heat the grill of your oven.

Place the toast on a baking sheet and add a generous spoonful of pizza sauce. Spread with the back of the spoon to the corners.

Top with a handful of grated mozzarella followed by the toppings of your choice.

Sprinkle over a little oregano.

Place in the oven and allow to cook until the cheese has melted.

Remove from the oven and allow to cool for a few minutes before serving.

A gorgeous colorful salad with pomegranate vinaigrette. make with or without chicken.

Mango Pomegranate Chicken Salad

oz baby lettuce

mango

cashews

pomegranate

chicken

extra virgin olive oil

Pomegranate juice reduction*

shallots

champagne vinegar

lemon

sea salt

black pepper

If you are reducing your own pomegranate juice, allow a little more time. Place 1 cup pomegranate juice in a small sauce pan and simmer till juice is reduced to 1/4 cup. Check frequently or it may disappear! Allow to cool before using.

Combine all salad dressing ingredients in a bowl and whisk.

Vinaigrette:

Place all ingredients on a platter, dress with vinaigrette and serve.

Salad:

Looking for an easy sandwich recipe for lunch or to take along a fun summer picnic? This chicken and prosciutto sandwich is piled high with delicious toppings that will make your belly do a happy dance! There&#039;s a little sweet from peaches, some savoury flavour from crispy prosciutto and chicken (and a whole lotta tasty).

Chicken Prosciutto Sandwich (with peach)

chicken breast ((or use store-bought cooked rotisserie chicken))

salt

black pepper ((for mozzarella and chicken breast))

olive oil ((optional))

sandwich bread ((your favourite bread))

light mayo ((or to taste))

prosciutto ((about 4 slices or about 1.5 to 2 ounces))

peach (, sliced)

basil

balsamic reduction ((or honey))

To cook chicken breast, season with a little salt and pepper and drizzle with a little olive oil (optional). Place on a sheet pan (or in a cast-iron pan) in a preheated 400 degree Fahrenheit oven for about 23 to 25 minutes or until the chicken is cooked through and juices run clear. Lay to one side on a plate to rest a little (while you are preparing the rest of your sandwich) before slicing.

Meanwhile, crisp prosciutto by placing in a pan on the stovetop over medium heat, cooking until crispy (just a few minutes), turning once. Watch because it can burn quickly. Alternatively, you can place in the oven with the chicken during the last 5 to 8 minutes of cook time or until the prosciutto reaches your desired doneness. Again, watch carefully, because prosciutto can burn quickly!

Toast bread and smear mayo on one side of all 4 slices of bread.

Top 2 slices of bread with mozzarella and a pinch of black pepper.

On top of mozzarella, add cooked chicken, then crispy prosciutto, peach slices, basil and balsamic drizzle. Top each sandwich with other bread slice. Enjoy!

Easy Huevos Rancheros!

corn tortillas

black beans

ranchero sauce, Pico de gallo

Sea salt and freshly pepper

Cilantro, leaves removed from stems and chopped

Heat pulled pork and beans in same pan and set aside.

Cook good quality corn tortillas in a pan with butter, or ghee on med/high heat till nice and crispy, set aside. Then crack two eggs into the same pan, turn heat to low, cover with lid and cook till whites are done and yolks are runny...sunny side up!

Place pork and beans on top of tortillas, top with eggs.

Add avocado slices, a little ranchero sauce, salsa or pico de gallo

Season with sea salt and pepper

Garnish with cilantro

olive bread (halved (alternatively use Ciabatta or French loaf))

Caponata (Alternatively tapenade

tomatoes (sliced)

g (+- 4 ounces) salami

Halve the olive bread horizontally.&nbsp;

Layer on the Caponata followed by the rocket/arugula, tomatoes (seasoned with salt and pepper), cheese, salami and basil.&nbsp;

Drizzle a little olive oil over the top layer of bread and place onto the sandwich.&nbsp;

Slice into 4 servings and serve.&nbsp;

white chunk albacore tuna ((3 cans))

Lightly toast each slice of bread.

While the bread is toasting, make the tuna salad by combining the tuna, mayonnaise, dill, onion flakes, garlic powder, and paprika in a medium bowl.

Place the toasted bread on a baking sheet. Distribute the avocado slices among the 4 pieces of bread.

Place the tomato slices on top of the avocado.

Distribute the tuna salad on top of the tomato.

Place a slice of cheese on top of the tuna.

Place the baking sheet under the broiler on high for 3-4 minutes until the sandwich is hot and the cheese is melted.

Place the chicken breasts on a chopping board then carefully slice in half, horizontally, creating two thin chicken cutlets.

Combine all the marinade ingredients then add the chicken and coat the chicken in the marinade. Cover and allow to marinade for at least 30 minutes but up to 24 hours in the fridge.&nbsp;

Make the tzatziki according to recipe instructions.&nbsp;

Cook the chicken in a hot pan/grill pan for 2-3 minutes per side until golden brown on both sides and cooked through. Remove from the heat and allow to rest for 5 minutes before slicing. 

Serve the grilled chicken with the tzatziki, lettuce, tomato and onion in a warmed wrap.&nbsp;
