This EASY pancake recipe makes perfectly sweet FLUFFY pancakes that will float right into your mouth!

Pancake Recipe

Cups all-purpose Flour (160 grams)

tbsp baking powder

tbsp sugar

salt

egg (large)

butter

buttermilk

Teaspoons vanilla extract

Sift the flour, sugar, baking powder and salt into a large bowl and whisk together then set aside.

Melt the butter in a small bowl. In a medium bowl whisk the buttermilk, egg and vanilla together. Stir in the melted butter.

Add the wet mixture to the dry and mix until combined.

Place a pat of butter in a large pan over  medium-high heat. Once melter and bubbling add about 1/3 to 1/2 cup of batter for each pancake.

Cook for a few minutes until golden then flip oven and cook an additional minute. Add more butter as you make additional pancakes.

Spray a baking sheet with cooking spray and pour the pancake batter evenly. Add the berry mix evenly on to the batter.

Bake for 15-18 minutes or until golden brown

Healthy Pumpkin Pancakes

⅔ cups old fashioned rolled oats (gluten-free if needed)

baking powder

cinnamon

allspice

nutmeg

ginger

pumpkin puree

eggs

milk of choice

vanilla extract

maple syrup

Oil (for cooking)

OPTIONAL: Serve with yogurt (maple syrup, and dark chocolate shavings)

Add the first 7 ingredients to a blender or food processor and pulse until fine.

Add in remaining ingredients and process for a few seconds, then stop and scrape the inside of the blender. Blend again until well combined.

Heat a pancake pan over medium-low heat. Spray with cooking oil, then drop about 1/4 cup of the pancake batter.

Make about 3-4 pancakes per batch or as much as your pan cat fit without overcrowding them.

Cook for 2-3 minutes, until the batter, starts to bubble, then gently flip and cook for 1-2 minutes more.

Set aside on a plate and cover to keep warm. Repeat with the remaining batter, you should have about 10 pancakes.

Serve pancakes warm with yogurt and dark chocolate shavings. Drizzle with extra maple syrup if desired.

Whisk together the flour and baking powder in a large bowl.

In a separate bowl, add the butter, milk, and egg yolks, stirring to combine.

In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.

These Funfetti Cake Batter Pancakes will make a birthday shine or give an ordinary day a special start. A cake mix gives it that well-loved cake batter flavor, but these still have a wonderful pancake texture. And don't forget the buttercream glaze on top!

Funfetti Pancakes from a Cake Mix

all-purpose flour

sugar

Pillsbury Funfetti cake mix ((15.25 ounces))

canola oil

2% milk

sprinkles

half & half cream

In a large bowl, combine the flour, baking powder, sugar, salt and cake mix. Set aside.&nbsp;

In another small bowl, mix together the oil, eggs and milk.&nbsp;

Add the wet ingredients into the dry ingredients and mix just until combined. Fold in the sprinkles. Batter will be thick. (If you'd like thinner pancakes, you can add a bit more milk.)

Heat a griddle to about 250-275 degrees Fahrenheit (low heat so the pancakes do not burn). Spray the griddle with cooking spray. 

Ladle the pancake batter onto the hot pan and cook the pancakes for about 1-2 minutes or until bubbles start forming in the batter. Flip the pancake and cook for an additional minute or until cooked through.

This recipes makes about 22 5" pancakes.

In a small bowl, stir together the powdered sugar, softened butter, cream and vanilla. This frosting will be at a spreadable consistency.

&nbsp;If you'd like to drizzle the frosting, microwave the frosting for about 10 seconds and stir, then drizzle over the pancakes.

Funfetti Pancakes

Light and fluffy Lemon Blueberry Pancakes that can be whipped up quickly, with basic pantry ingredients. 

Lemon Blueberry Pancakes

baking soda

lemon (, zest and juice)

Tablespoons butter (, melted)

Tablespoons sugar

blueberries (, fresh or frozen)

Heat skillet over medium heat.

In a mixing bowl stir together buttermilk, baking soda, and juice and zest of lemon. Add egg, vanilla, and melted butter and stir to combine. In a separate large mixing bowl stir together flour, salt, baking powder, and sugar.

Pour wet mixture into dry ingredients and stir just until combined. There may be some lumps--don&#039;t over-mix the bater. (Add a little splash of buttermilk if the mixture is too thick). Gently stir in blueberries.

Grease the warm skillet with butter or non-stick cooking spray. Use a 1/4 measuring cup to spoon the batter onto the pan. Cook until the bottom of the pancakes are golden and bubbles come to the surface. Flip to the other side and cook until golden.

Serve with your favorite pancake syrup.

Low FODMAP Buckwheat Banana Pancakes

(460 ml) unsweetened almond milk

lemon juice

(100 g) buckwheat flour

bananas,

eggs, (at room temperature)

(60 ml) vegetable oil

Whisk together the almond milk and lemon juice and allow to sit until thickened, about 5 minutes. This is your faux “buttermilk”.

Meanwhile, Whisk together the flour, buckwheat flour, baking powder, baking soda and salt in a large bowl, to aerate and combine. Make a well in the center.

Place bananas in another mixing bowl and mash well, then whisk in the eggs and oil until smooth, then whisk in the faux “buttermilk”.

Pour this wet mixture over the dry and whisk just until combined - a few lumps are okay.

Heat an electric griddle, a large heavy skillet (such as cast iron), or nonstick pan over medium-low heat, brush with a bit of oil or spritz with nonstick spray and heat until a few drops of water sprinkled on the surface dance about.

Dole out about 1/4-cup (60 mamounts of batter at a time; we use an ice-cream scoop. Cook until bubbles begin to appear here and there in the pancakes, about 2 minutes. Check the bottoms, which should be golden brown. Flip over and cook for a minute or two more. Serve hot with pure maple syrup - and a pat of butter if you are not non-dairy.

This super simple recipe makes fluffy pancakes for two. The batter is easy to customize (hello chocolate chips!) and a breeze to throw together when your pancake craving strikes.

Easy Pancakes for Two

milk

tsp white vinegar

all purpose flour ((5 ounces))

TBSP sugar

tsp baking powder

tsp baking soda

tsp salt

First let&#39;s make a faux buttermilk. Add 2 teaspoons of vinegar (plain white or apple cider vinegar) to 3/4 cup milk and allow to sit while you measure out the remaining ingredients.

Whisk together flour, sugar, baking powder, baking soda and salt in a large bowl.

In a second bowl, whisk together egg and 2 TBSP oil until well combined. Add milk mixture and vanilla and mix well.

Add wet mixture to the dry ingredients and stir gently with a whisk until just combined, careful not to overmix. Batter should be lumpy still. Allow to rest for 10 minutes to up the fluff factor of the batter.

Place approx ½ teaspoon of oil on a griddle or nonstick skillet. When oil begins to shimmer, use a ¼ cup measuring cup to ladle batter onto griddlle/skillet.

Adjust heat as necessary.

I&#39;ve noticed that typically the first batch requires higher heat than following batches. Flip pancakes after bubbles rise to surface and bottoms brown, after 2 to 3 minutes. Cook remaining side approx 1-2 minuets until lightly golden.

Repeat for remaining pancakes and enjoy with fresh fruit and maple syrup.

This single-serving of pancakes is vegan, gluten-free. They are healthy enough to eat everyday for breakfast but still feel like a decadent treat. These pancakes are made with just 4 ingredients and are ready in under 15 minutes.

Everyday Vegan Pancakes for One

oats

banana

non-dairy milk (I used almond milk)

coconut oil

Add oats to a blender and blend until a fine flour forms. Then add the banana, non-dairy milk, salt, and baking powder. Blend until smooth. 

Heat a little coconut oil in a large pan or griddle over medium heat. Once hot, pour the batter onto the pan to form pancakes with about 1/4 cup of batter. When bubbles start to form on the pancakes, flip them. Only flip once if you can! Cook 1-2 minutes on the other side until both sides are evenly golden brown.  

Remove from heat and eat immediately. Top with maple syrup, nut butter, fresh fruit, or my cherry chia jam! Double, triple, or quadruple this recipe to share with your friends or family.   

These 2-ingredient pancakes made with just sweet potato 🍠 and eggs 🥚 are an absolute game changer. Simple to make and packed with nutrients, this recipe will definitely have you ditching your flapjack addiction!

2 Ingredient Pancakes

sweet potato (2 small sweet potatoes

tsp pure vanilla (optional)

Note: if you want, you can use pure pumpkin from a can or boil the sweet potatoes as well. I like them roasted for depth of flavour and sweetness.

Preheat the oven to 400F (200C).

Wash and dry the whole sweet potatoes.

Add them to a baking sheet lined with parchment paper. Bake until the potato skins have puffed up, and the skins have turned color.

You will notice sweet potato caramelization oozing out throughout the potato. The inside should be soft when a knife is inserted.

Depending on the size of the potato (and the oven), they can take anywhere from 1-1.5 hours.

Once cooked, cool fully and mash. Take 1/2 cup of cooked sweet potato for this recipe and add it to a bowl with two eggs.

Optionally, add in a dash of vanilla and cinnamon. Mix well.

Now, heat up a pan on medium heat and spray with avocado oil spray. Add 1/8 of a cup of the batter in the pan.

Note: I like to make my pancakes small as they are easier to cook and flip. If you make these into big pancakes, you&#39;ll be left with a mess!

Cook each pancake for a few minutes on each side and enjoy with maple syrup!

These were great! I made them with cinnamon for my 11-month-old daughter and she loved them. I did add 2 tbsp of whole wheat pastry flour to my batch to add some extra fiber to her breakfast and they cooked very well. I will definitely make them again.

But, as someone who is always looking for healthy alternatives, I realized pancakes can also be made with wholesome, nutritious ingredients so that they can be part of my regular breakfast routine. These 2-ingredient pancakes made with just sweet potato 🍠 and eggs 🥚 are an absolute game changer. Simple to make and packed with nutrients, this recipe will definitely have you ditching your flapjack addiction!

This is the base recipe I use when making homemade pancakes. Including a few substitution options as well.

Easy Pancake Shapes

flour

egg (beaten)

milk (can substitute water)

Stir together your dry ingredients in a bowl

Mix together your liquid ingredients, add to dry ingredients

Pour 1-2 spoonfuls of batter into your greased cookie cutter that&#39;s on the hot+greased griddle and allow to set for 3-4 minutes (depending on your griddle heat). I usually wait 2-3 minutes and have mine set to 325-350.

Tap the cutter, holding the aluminum foil, to release the pancake. Usually it takes me 10-15 gentle taps.

Flip pancake over, and allow to cook on griddle for 2 minutes

Use a spatula to remove excess pancake batter and remove cookie cutter safely. The cookie cutter may be hot, be careful not to lift directly, consider using a pot holder.

Top with syrup, butter, or your topping of choice and enjoy!

This makes a wonderful pancake-tasty and light.
