Best Pavlova Recipe

egg whites (at room temperature)

granulated/caster sugar

salt

tsp cornflour/cornstarch

tsp white vinegar

vanilla essence

cream (for whipping)

strawberries or other fresh berries (for serving)

Preheat oven to 300F/150C

Get some paper towel, and soak it in in a little white vinegar. Wipe out your bowl and whisk with the vinegar.

Whisk together the egg whites and salt until stiff peaks form. 

Gradually add sugar, 1/4 of a cup at a time and whisk after each addition for about 1 minute. Whisk until sugar has dissolved. To test to see if it's dissolved, gently rub a little bit of the meringue mixture between your fingers. If it's grainy, keep whisking.&nbsp;

After the last of the sugar has been added, whisk on high for 3 minutes. The mixture should be very thick and glossy.

Combine the cornflour/cornstarch, vinegar and vanilla essence in a very small bowl.&nbsp;

Add to the meringue mixture and whisk until just combined.&nbsp;

Line a 12" round pizza tray with a piece of baking paper/parchment paper cut into a circle.&nbsp;

Start scooping out the meringue mixture, forming a circle roughly 8-9" in diameter.

Use a spatula, to gently start shaping your pavlova. Start at the bottom and gently make nice neat lines moving toward the top of the pavlova (see image).&nbsp;

Reduce oven temperature to 250F/120C and place pavlova in the oven on the middle shelf.

Cook for 1 hour to 1 hour and 15 minutes. Turn on oven light to see the pavlova. The pavlova should be lightly browned. If you to, quickly open the oven door and touch the pavlova. It should be dry to the touch.&nbsp;

Turn off the oven, and leave the pavlova in the oven with the door closed for 3 hours until the pavlova is cooled down.

To serve, whip the cream, and gently spoon into the centre of the pavlova. Top with fresh berries.&nbsp;

Preheat oven to 200°F and adjust the rack to the lower part of the oven.

Using a pencil, draw an outline of an 8-inch cake pan on parchment paper. Flip the paper over and place on a cookie tray. Set aside.

In a small bowl, combine the vinegar and cornstarch, whisking to combine. Set aside.

In a stand mixer fit with the whisk attachment, beat the egg whites on low speed until their foamy and little bubbles form. Continue whisking, gradually bringing the speed up to medium, beating until the egg whites forms soft peaks. In small additions (I mean this&#8211;do not just dump the sugar in in a few editions!), begin to gradually beat in the granulated sugar until stiff peaks form and the sugar is almost completely dissolved.*

Add the cornstarch and vinegar mixture, and the vanilla extract, and salt. Beat on high speed for 4-5 minutes until the meringue is stiff, glossy, and has no granules of sugar remaining.

Spoon the meringue onto the parchment paper and, using a cake scraper, form the meringue into a tall cylindrical disk within the 8 inch circle you previously outlined with the cake pan. Using the cake scraper, create a slight divot in the center of the meringue, like a volcano’s center. Last, use the scraper or a large spoon to shape the sides into desired design.

Bake in the oven for 1 hour and 30 minutes, then turn off heat, crack the door of the oven so it stays ajar, and allow meringue to sit for an additional hour in the oven. It is in this hour that the meringue will dry out completely. Then, remove from oven and allow to cool completely on a wire rack.

While the meringue is cooling, whip up the topping! In a stand mixer with a whisk attachment, whip the heavy cream and sugar until soft peaks form. Spread over the meringue, then top with fresh fruit and nuts if desired.

375.00 ml Essentials Caster Sugar

tbs cornflour

tsp vinegar

tsp vanilla extract

tbs water

600 ml thickened cream

strawberries

blueberries

passionfruit

Step 1

Place egg whites, caster sugar, vinegar, cornflour, vanilla and hot water into a mixing bowl.

Step 3

Beat on high until stiff peaks form. Around 15 mins. Make sure all sugar is dissolved my rubbing a little bit between your fingers and feeling for grains of sugar.

Step 4

Place on a lined baking tray, in a circular shape. Cook for 1 and a half hours. Turn off your oven and leave meringue inside to cool completely.

Step 5

Whip the cream until it forms stiff peaks and refrigerate until you are ready to serve.

Slice the strawberries and lay over the cream. Sprinkle on the blueberries and dollop passionfruit pulp over the top.
