Roasted mashed potatoes have elevated flavor over stove top cooking. Make this recipe for creamy baked mashed potatoes for a holiday side dish that everyone will love!

Roasted Mashed Potatoes

potatoes (or large red potatoes)

garlic

lemon

milk

thyme

tsp black peppercorns

butter (See Note 1)

Preheat oven to 400°F. Place potatoes on a rimmed baking sheet or in a large baking dish and cover tightly with foil. Roast until very tender, 60-65 minutes. If using large red potatoes, reduce cook time to 50 minutes.

Using flat side of chef&#39;s knife, bruise or smash the garlic cloves. Using a vegetable peeler, remove a wide 3 inch strip of zest from lemon. Save lemon for other use.

Add garlic and lemon zest to a medium saucepan, then add milk, thyme, peppercorns, butter and kosher salt.

Bring mixture to a simmer over medium high heat, stirring occasionally so bottom doesn&#39;t scorch. When liquid comes to a simmer, remove from heat, cover pan, and let it sit for 30 minutes.

When potatoes are done roasting, use a small knife to remove skins, or leave skins on if you like (I like the roasted flavors they add). Mash them in a large pot with a potato masher. Alternatively, pass potatoes through a ricer or food mill fitted with the fine disk into the pot (see Note 2).

Pour infused milk through a mesh sieve into pot with potatoes; discard solids. Place potato mixture over medium heat and stir until milk is incorporated into potatoes. Taste and season with more salt if needed. Drizzle more melted butter on top before serving. Drizzle more melted butter on top before serving or cover and keep warm until ready to serve.

These grilled potatoes are perfect for summer BBQs. The slight char of the grill adds a depth of flavor that works so well with tender potatoes.

Bring a well-salted pot of water to a boil, then add potatoes and cook until al dente, 5 to 7 minutes. Drain and let cool slightly.

Heat&nbsp;grill to medium-high and oil&nbsp;grates. In a large&nbsp;bowl, mix together garlic powder, salt, and&nbsp;pepper, then stir in olive oil. Add potatoes and toss gently to coat. Remove potatoes from oil and reserve excess in oil in bowl.&nbsp;

Grill potatoes, flipping once, until golden brown, about 5 minutes.&nbsp;

These are really
good! I followed the recipe exactly and I can now say I agree with others- boil maybe 5-7 minutes, or you’ll get mush.

The prep time and total time says just five minutes. What happened to adding the time to cut, boil, mix, heat the grill, grill, toss, serve?

I cut my wedges a little thinner, coated them with grape seed oil and seasoned salt, and put them on the grill without even boiling them, they came out great after about 15 minutes. Flipped each one 4 times.  I used the gold potatoes instead of russets.

For sure you don’t need to parboil that long. Mine were mush. Garlic was overwhelming as was the salt. Will modify if I try it again.

We loved it.  

I used the technique and ingredients but modified the details based on the previous comments and my eyeballs.  

For me, 5 minute parboil was not enough because the wedges barely yielded to the fork poke.  Parboiled for 2 minutes longer for a total of 7 minutes.   

Used about 2t garlic.  Grilled for 5 minutes medium-high but I wanted them to crisp up....turned to high for 5 minutes and turned them.  Tossed  in the oil/herb mix.  This will be in the regular rotation.   Next time I will indeed add MORE GARLIC but not 2T.  Also will reduce salt.

This recipe is WAY OFF with respect to the amount of time to parboil the potatoes. You only need five minutes of parboiling--not 10. Otherwise, you will end up with over-cooked, mushy potato wedges that will not grill properly.

cup unsalted

(or 2 ounces) cream cheese

cup half and half cream

teaspoon salt

teaspoon ground black pepper

fresh parsley, finely chopped (optional, for garnish)

Place potatoes in a large pot and cover with salted water to cover potatoes by about an inch. Heat over high heat and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, until potatoes are soft when you insert a fork.

Drain potatoes and place back in the pot. Use a potato masher (or a fork) to mash the potatoes.

Add in the butter and cream cheese and use an electric hand mixer to mix until melted and incorporated  into the potatoes.

Slowly add in the cream and continue to whisk with the electric mixer. Add salt and pepper.

Remove from heat and transfer to a serving dish, garnish with parsley, extra butter and serve warm.
